Slow Cooker Hearty Beef Stew

I've never been a big fan of beef stew, but I really enjoy this recipe that I got from Cook's Country. The meat comes out fork-tender, the broth is rich and just thick enough to coat a spoon, and the vegetables are perfectly cooked. This way of preparing beef stew keeps the vegetables from turning to mush by steaming them on top of the stew in a "hobo pack". The stew is thickened without giving it a starchy texture by using Minute Tapioca. Also, you get a big beefy flavor by slipping in a few tablespoons of soy sauce. It takes a little more prep time, but you can do most of the prep for this recipe the night before the ingredients go into the slow cooker. I think the extra time preparing it is worth it! Just prepare the recipe through step 7 and refrigerate the browned beef and onion mixture in separate containers. In the morning, just transfer everything to the slow cooker and proceed with step 8. The cooking time will run to the high end of the ranges given in the recipe. If you're going to be away from your slow cooker for more than 10 hours, cutting the vegetables into larger, 1 1/2- to 2-inch pieces will help them retain their texture. -- posted by Lainey6605

My mom used to make split pea soup every fall/winter, but no one else liked it so she and I were the only ones who ate it...Recently I thought of those younger days again and found myself wishing I knew how she'd made it...After a little research and alot of online recipe comparisons, I think I have created a recipe I like and one that I can even do in the slow cooker/crockpot!
Slow Cooker Mashed Potatoes

This recipe is from Taste of Home magazine. It's become my classic holiday mashed potato recipe. Everyone loves them! I love that I can make them ahead, instead of trying to mash potatoes, make gravy, and carve turkey or roast all at once! I can make a double batch early in the day, toss them into the crockpot, and by the time dinner is served, the potatoes are ready and waiting! I usually skip the Ranch dressing, since I don't think it would taste good with my gravy. Time doesn't include time to peel, cook, and mash potatoes (usually takes me around 30-40 minutes) -- posted by Halcyon Eve

Jesse's Signature Lasagna

For years, my grandmother has made her special lasagna for occasions. Since she doesn't get to do this as much anymore, I figured I should invent my own signature lasagna to fill in the void. I experimented with this recipe all fall; I think this is a treat to be reckoned with! The different steps all take time and planning, but can be done over the course of a few days. This is totally worth the wait. -- posted by JAKunlimited

The National Trust Heritage Lemon Curd: Crock Pot or Traditional

A wonderful classic British preserve. Spread it thickly on fresh baked bread, crumpets, muffins or hot buttered toast. It's also delicious on pancakes and if used as a filling for cakes or tarts - such as my Recipe #176514. This recipe has the benefit of being made in the Crock Pot/Slow Cooker, acting as a bain marie which allows you time to being doing other things in the kitchen! I have also given instructions for the more traditional method if you don't have a slow cooker. A jar or two makes a lovely gift - tie a pretty ribbon around the neck of the jar and provide a recipe tag as well. We like our lemon curd quite tangy - so if you are not keen on a very lemony taste - increase the sugar by about 2 to 3 ounces, or use 2 lemons only. This can also be made with oranges or limes, or a mixture of all three Citrus fruits; it will then be called St.Clement's Curd, from the Nursery Rhyme "Oranges and Lemons - The Bells of St.Clements". (This recipe was adpated from The National Trust Cookbook, hence the title of this lemon curd recipe!) -- posted by French Tart

I make this when I'm feeling run down--it's chock-full of potassium, vitamin C and protein. Increasing or decreasing the spice level is easy--use a hotter or milder chili powder, more or less jalapeno, different varietals of bell pepper.

This delicious stew from Canadian Living can also be made in the crock pot; just omit the two cups of water or else it will be more like a soup! Cook on high for 4 to 5 hours. The recipe also calls for ancho chili powder which is not widely available. If you can get it, by all means add it for a little extra kick, but it is perfectly fine without as well.
Dublin Coddle - Irish Sausage, Bacon, Onion and Potato Hotpot

This traditional supper dish of sausages, bacon, onions and potatoes dates back at least as far as the early eighteenth century. It seems to be more of a city dish than a rural one: it was a favourite of Jonathan Swift, author of Gulliver's Travels and dean of Christ Church Cathedral in Dublin. In Dublin itself, coddle retains its reputation as a dish that can be prepared ahead of time and left in a very slow oven while the people who're going to eat it have to be out of the house for a while - making it an excellent dish for very busy people! The name of the dish is probably descended from the older word caudle, derived from a French word meaning "to boil gently, parboil, or stew". The more recent version of the verb, "coddle," is still applied to gently cooked eggs, "Coddled Eggs". Please note, the sausages used should be the best quality 100% pork sausages you can get your hands on! This recipe would also work VERY well if cooked in a crock-pot, reduce the liquid by about half if cooking the coddle this way. Serve with Guinness and Irish soda bread. Although this is an easy to prepare one pot meal and its simplicity belies its amazing taste and flavour - comfort food at its best! To grill the sandwich, a panini press, sandwich grill or a stovetop grill pan with a heavy skillet on top can be used. -- posted by Lainey6605

Bo-Kaap Cape Malay Kerrie - South African Cape Malay Curry

This distinctive and tasty authentic curry relies heavily on the special blend of spices, known as Cape Malay curry powder. Cape Malay curries are famous for their fruity and full-bodied flavours, making good use of local colourful vegetables or meat and fish, they are not as hot as the curries used in the Indian kitchen. This "secret" recipe hails from one of the steamy kitchens in the vibrant Bo-Kaap area of Cape Town; it was on a recipe sheet given to my mum from a spice shop in that wonderful area, in the 1950's. The Bo-Kaap area is a treat; the houses are painted gorgeous bright colours that won't fail to make you smile, there are always children playing in the streets and the haunting call of the muezzin will remind you of exotic destinations such as Istanbul and Cairo. And then there's the smell of spices that wafts through open doorways and comes rushing out at you as you walk past Atlas Trading, the local spice emporium. You might be just minutes from the centre of elegant and sophisticated Cape Town, but you'll feel as though you're in a different country.
Serve this curry with yellow rice and a variety of sambals and atjars. -- posted by French Tart

Easy Crock Pot Italian Turkey Breast - OAMC

Easy crock pot recipe that requires a bit of prep but turns out delicious! I created this as an alternative to similar recipes that call for a bottle of Italian dressing, because I prefer to control the ingredients in my recipes. (Does anyone really want to ingest xanthan gum?) Shred the leftovers and use them in all manner of Italian and Mexican dishes! Notes: This recipe requires a large crock pot (I use a 6-qt one). Can be cooked from frozen but doesn't absorb the Italian seasoning as well (because seasonings must be sprinkled atop the skin), and may be difficult to get the lid on the crock pot tightly. -- posted by Elizabeth

Porchetta - Italian Marketplace Slow Roast Pulled Pork Sandwich

This is JUST gorgeous! A domestic take on the classic Italian marketplace or street food, Porchetta, which is actually roast suckling pig. Porchetta is thickly sliced and served in ciabatta bread as a delectable hot sandwich throughout Italy. My recipe is a much-adapted recipe taken from one of Nigella Lawson's cookbooks, and it is SO easy to make at home. I cook mine in the crock-pot for meltingly soft and tender pulled pork - however, I have also given traditional roasting directions in this recipe. Preparation time includes the 24 hour period required for the pork to marinade in its herbed and spiced rub. -- posted by French Tart

A firm favourite of mine when I lived in Herford in West Germany. This recipe comes from a German friend of mine who lives in Bavaria, and is delicious served with sour cream, dumplings or noodles - oh yes, don't forget the crusty sourdough bread as well! Although this is nice served with the above accompaniments, it is essentially a one pot meal which is sufficient to feed most hungry families.
Crock Pot Colt's Fan Chili

I've been at the chili game for a few years now. It's taken A LOT of tweaking, but I think that this chili hits the spot for my husband and our friends. It can be a little bit spicy, but we tend to like the heat. You can omit the tobasco and jalapeno for a much more mild version. I absolutely think that this is best topped with a dollop of sour cream and shredded sharp cheddar. Scoop it up with some Fritos scoops and you're all set for the big game! Cook up the chili meat the night before and just add it along with the other ingredients before you head out to church on Sunday morning---viola, ready for the kick-off! -- posted by Mommy2Peanuts

Spiceless Chili

Freezes great. Prep time is basically chopping onions and opening cans. Plenty of fiber, low in fat.

I'm a chili heathen, I just don't like it hot! And my daughter is a total spice hater. So I tried dumping everything chili-ish from my pantry into my slow-cooker without any seasonings. Surprisingly, my picky eater likes it - and so do I! Every time it turns out a little bit different because I use whatever's on hand, but the basic idea is here. Any beans will do: pinto, black, kidney, northern, navy...

Should take any chili spice blend well if you like yours with some kick! -- posted by BL834

This is my grandmother's sweet and sour meatball recipe. For those who like to use up everything, it's a great way to make use of sweet pickle juice - as the pickles are used up, I just save the juice in a jar at the back of the fridge. Easy, quick prep, can be cooked on stove top, in oven or crockpot and can cook meatballs in the sauce or pre-cook in microwave, fry pan or oven. This recipe freezes well and is easily doubled.
Chicken and Bean Chili

Who says you have to cook all day in a crockpot. I use mine to simmer dishes such as this one so I don't have to watch the stove.
If you like the flavors of green chili chicken enchiladas you'll love this recipe. I use shredded Rotiserre chicken, Northern Beans and green chiles with a few of my favorite spices to make this hearty chicken chili. What's better than smelling sauteed garlic and onion to start, infusing with red pepper and cumin adding all into a crockpot only to simmer while you do other things. In no time you have a family-pleasing main course. Adjust the heat to your tastes! Add a kick with preprared Salsa for a more intense flavor. If you like soups/chilis or stews thicker, add the cornstarch slurry. Serve with cornbread, tortillas or crusty french bread. ;) V's family favorite! I serve this Chili over leftover spanish rice that I freeze just for this dish. Mmm -- posted by Vseward (Chef~V)

Chicken Cacciatore

Hunter's style. This comes from Eleanora Scarpetta who was seen on the Martha Stewart show many, many years ago. My husband absolutely loves it! The original recipe calls for white wine and a hot pepper, which I omitted, and gaeta olives, for which I substituted green olives due to my husbands tastes, as well as oyster mushrooms, for which I used regular white mushrooms due to convenience and expense. It also called for fresh basil which I did not have so I just used dried. I am sure the ingredients I omitted would make for a more authentic dish. Any combination of chicken may be used, I prefer boneless because I am spoiled. :) This could also be done in a crock pot after the browning steps. -- posted by Chef Corn

'rough Cut' Slow Cooker No-Beef Chili

This is a simple, hearty comfort recipe that was based on whatever I had in the pantry last night. It's called 'rough cut' because it is meant to be just a "rustic", simple, easy, hearty, filling dish. There is to be No tedious MINCING!! :-) Just put the ingredients in the cooker. ;-)

It's really easy! Just put the ingredients into the cooker in the order listed, ending with the chicken. You don't want to taste it after adding raw meat to it so adjust your seasoning as nearly as you can before the chicken goes in. You can adjust the flavors further after it's finished.

Ours came out with a LOT of juice so, if you don't like it that way, consider draining the tomatoes, cutting the stock and using bouillon cubes instead. Or cook as directed and removing excess juices to reach the consistency you prefer.

I ladled off about 4 cups of the liquid after all the seasonings married in the cooking process.

I served it over rice.

I thought about adding ground cayenne or red pepper flakes after cooking for a little added heat. Or just having them in ramekins on the table for those who'd like it.

Consider substituting 2 LBS of ground turkey or chicken for the thighs. I'm going to try duck or venison this winter.

Bon, Bon Apetit! -- posted by MW Savant

Peanut Butter Chicken

I don't recall where I got this but it's a family favorite that we make often! We generally use a mix of white and dark meat so use your preference. All ingredients can be adjusted to taste. Fish oil can be omitted but it really adds to the flavor! I highly recommend adding the peanut butter a little at a time and tasting the sauce with each addition as some may like more or less peanut butter flavor. Rotel is a great substitution for the diced tomatoes if your family likes it.

I've quadrupled the recipe with great results for large gatherings and you can easily scale back the chicken and add more onions and mushrooms to make this even more budget friendly. Leftovers freeze well and reheat easily in the microwave.

This also works well in the crockpot by throwing in everything except the peanut butter (and rice or noodles) and cooking till the chicken is done. Mix in the peanut butter just before serving (it may work fine going in with everything else but I haven't tried it for fear of a burnt peanut flavor). -- posted by persi

Crock Pot Spicy Roast Sandwiches

These are great for football parties! You can make the meat spicy with the hot peppers or for the wienies use mild (I'm teasing!) The leftovers are awesome made into quick chimichangas. Put the meat into a tortilla, roll and fold, and fry. Use more or less meat and peppers depending on the guest list. -- posted by Little Mommy

Slow Cooker Sausage and Peppers

I received this recipe in a weekly email that I've been getting from McCormick's website. I made this one day when I didn't want to spend a lot of time with last minute preparations for our Sunday meal. Italian sausage(sweet or hot) gives so much hardiness to a meal that there seems to be little reason to serve much else. We had this over spaghetti, but it could also be made for a super bowl party, and served from the crock spooned into rolls or buns. Hope you enjoy this as much as we have. -- posted by bshemyshua

Lebanese/Syrian Fasoulia

This dish is similar to Bazella, with its tomato-based broth. In this dish, the main ingredients are fasoulia, a type of lima bean and meat. Cubes of lamb may be substituted for the beef. I learned how to prepare this dish while I was living in Syria for a year, studying abroad.

Please note: if you use dry lima beans, they must soak in water overnight. The shells may come off of them when you begin to cook them, but this is normal. -- posted by Mustafa's Cook
