Rustic Vegetable Soup

I've been making this soup for a while and my family just loves it. Its easier
than making it the old way. I make it in the Crock Pot and let it go all day.
Its hardy and delicious and takes no time to put together. -- posted by Chef #539018

Stifado - Ish

A mixed meat stew that started out as a sweet and sour way to use some leftover cranberries and ended up tasting like a Stifado - so I was told by the eaters!.

Appreciated by the fans of the local Greek Restaurant (my family)!

A bit of an experiment (with the cranberries) but a happy accidental result.

I cooked mine in a Wok and a slow cooker but I imagine any pan and stewing method will work. -- posted by jimmill

Cowgirl Stew

This gluten free, dairy free, vinegar free recipe is one of my favorite to fix for any company and to have around during the work week. It has great, easy to find and healthy ingredients. Made in the crockpot. Can be ready for you to come home to (and smells incredible). Just pay attention to the canned/stewed tomatoes you pick up to make sure they are vinegar free. Also if you are concerned make sure there isn't any high fructose corn syrup in those canned tomatoes also. The more natural the better. This is great even with gluten free cornbread. Also, if you want to use frozen green beans get the steamer bag and steam them for a bit before you put them in the crock pot....they keep their flavor and color very well. -- posted by CookinWorkinMama

Slow Cooker Sausage and Peppers

I received this recipe in a weekly email that I've been getting from McCormick's website. I made this one day when I didn't want to spend a lot of time with last minute preparations for our Sunday meal. Italian sausage(sweet or hot) gives so much hardiness to a meal that there seems to be little reason to serve much else. We had this over spaghetti, but it could also be made for a super bowl party, and served from the crock spooned into rolls or buns. Hope you enjoy this as much as we have. -- posted by bshemyshua

Crockpot White Chili

This recipe comes from the book: "Make It Fast, Cook It Slow" by Stephanie O'Dea. It is a very tasty, not too hot chili that is just right for these cold winter days. I added little cubes (less than 1/2-inch) of 3 uncooked chicken breasts to this chili about half way through the cooking for a little more protein, as though it needs it. It didn't hurt one bit! The author says this is a soupy chili but I did not find it so. It has great flavor. She cautions that the beans sink while the corn floats. So you need to dig down to the bottom of the bowl to make sure you get beans in every bite. -- posted by Lorraine of AZ

Beef and Beer Chili, Easy Crockpot Recipe

Recipe from the WebMD Weight Loss Clinic. They say "chili is one of America's favorite lunch or dinner entrees -- especially during the winter months. Served with cornbread, it really hits the spot.
The split peas turn into a flavoursome pease pudding, and the ham is the best ever!
I've adapted this from a book called 'The Ultimate Slow Cooker' (ie. crock pot)
Use honey for the glaze if you haven't got maple syrup.
Timing excludes soaking
There's no reason why you couldn't make this in a pressure cooker or saucepan. -- posted by Tina and Dave

Lebanese/Syrian Fasoulia

This dish is similar to Bazella, with its tomato-based broth. In this dish, the main ingredients are fasoulia, a type of lima bean and meat. Cubes of lamb may be substituted for the beef. I learned how to prepare this dish while I was living in Syria for a year, studying abroad.

Please note: if you use dry lima beans, they must soak in water overnight. The shells may come off of them when you begin to cook them, but this is normal. -- posted by Mustafa's Cook

Shredded Chicken Sandwiches

I've tried numerous shredded chicken sandwich recipes and this one is far and away the best one. It was given to me by a friend who served it at her parent's 50th wedding anniversary reception. Simple and tasty! It can be easily doubled for large crowds. Be sure to use a Reynold's Crock Pot Liner for easy clean up. Serving number is an estimate.
Southwest Chipotle Pork

An excellent Pulled pork recipe can be put on a bun or in a wrap. I usually use only 1 onion and 2 peppers. If you like spicy don't seed the chipotle peppers. I use 2 of them instead of 1.

If you wish to do this on the stove use medium heat for 2 to 3 hours and mind to add water, as a pot lets moisture escape and a slow cooker does not. -- posted by Matts Lotus

Slow Cooker Garbanzo Bean and Potato Soup With Pesto

For extra nutrition, leave potatoes unpeeled. To boost nutritional value further, add 2 cups chopped kale (chard, baby spinach, baby beet greens, etc.) to the slow cooker *just*before serving -about ten-fifteen minutes. Kidney beans can replace garbanzo beans if you prefer and for additional color. A sun-dried tomato pesto would be an interesting change in place of traditional pesto.
Vinyl Lager Crock Roast

I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like. Recipes are made to be adapted! -- posted by IndinaMarie

Slow Cooker Beef Stew With Guinness

The meat in this stew is the most tender I have ever had. This recipe is a combination of two that I put together, one which I liked the cooking technique and the other that I liked the flavor of. I would suggest testing your slow cooker to see if it cooks hot. Ours does, so 8 hours does it for optimal tenderness. My husband likes it served over plain egg noodles, but I prefer it by itself. -- posted by Chef #1249089

The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.

Crock-Pot Ricotta

Make your own ricotta cheese in your crockpot! The acid you choose will affect the final flavor. Apple cider vinegar will give a sharper tang, a distinct odor, and a subtle golden color; this is probably best for savory applications. Lemon juice will give a subtler flavor and will not curdle as abruptly. For the cleanest, purest flavor, use distilled white vinegar. If you don't like or can't find the goat's milk, you can sub another quart of low-fat cow's milk. -- posted by DrGaellon

13 Bean Crock Pot Soup

A crock pot version of 13 bean soup. Super easy & super yummy! I buy the 13 bean soup mix in the bulk section of my supermarket. It contains the 13 varieties of dry beans as follows: Baby limas, large limas, garbanzo, great northern, black-eyed peas, navy, black, red pinto, red lentils, green lentils, yellow splits, green splits, and kidney beans. Even my toddler had fun eating this soup. It was almost like watching a kid sort their M&M candies into colors! We took the opportunity to teach her the name of each bean as she picked it out to eat. Be sure to plan ahead, as the beans need to soak overnight or for 8 hours before cooking. (Cook time noted includes soaking time.) -- posted by **Tinkerbell**

Alabama Living Soup

This recipe comes out of a local electric company magazine. We love hearty soups on the cold, damp days. This recipe fits the bill. Just place everything in the crock pot, go to work, come home to a wonderful soup. This makes a large crockpot of soup. For thicker soups you can use less broth, for thinner soups, use more.
