Chili Colorado Incredible!

I wanted a rich flavorful Chili Colorado. I took the best of all the recipes I have and came up with this. The BF is not fond of chunks of tomato or onion. I chopped the garlic and onions finely - you are welcome to leave them chunky and use chopped tomatoes if you do not have picky eaters :) This would also do well in the crock pot. Prepare the meat till step 3 and then place the meat and the tomato puree in the crock and heat on low for 6-8 hours. -- posted by Aussie-In-California

Displaced Texan Chili

This is a winter staple for me and mine.....very flavorful. Has just sort of evolved out of a basic knowledge of how to make chili. And for some reason, it seems to get even better after having been frozen. So I frequently make a double batch and freeze half.

Made as below, it is a pretty spicy chili. I'm giving the recipe with ground sirloin, which is wonderful, but I frequently make it with ground turkey and that is fabulous too! For chili purists, you can also used cubed beef!

For posting purposes, I've been pretty specific with measurments & ingredients....but this is a very loose recipe. I've left out the meat and added extra beans, corn and carrots for a vegetarian chili before (Excellent!).....I have a friend who adds mushrooms to the mix....sometimes I use black beans or add 1/2 a bottle of beer...a yellow bell pepper can add some more color.....you get the idea....play around with it and make it your own! I think the key is using quality ingredients such as organic beans and vegetables when possible, good, fresh spices and allowing the chili to simmer for a nice long time (never less than an hour)! -- posted by FolkDiva

Crock Pot Colt's Fan Chili

I've been at the chili game for a few years now. It's taken A LOT of tweaking, but I think that this chili hits the spot for my husband and our friends. It can be a little bit spicy, but we tend to like the heat. You can omit the tobasco and jalapeno for a much more mild version. I absolutely think that this is best topped with a dollop of sour cream and shredded sharp cheddar. Scoop it up with some Fritos scoops and you're all set for the big game! Cook up the chili meat the night before and just add it along with the other ingredients before you head out to church on Sunday morning---viola, ready for the kick-off! -- posted by Mommy2Peanuts

Healthy Cashew Chili

This is delicious when the weather turns cool; best served with a green salad and cornbread. If possible, make this chili one day in advance and refrigerate overnight. When reheating, stir in water, vegetable stock, or tomato juice to thin as desired. This chili will keep in the refrigerator for about 5 days.
Football Sunday Chili

I took a basic chili recipe out of a cookbook some years ago and been tweaking it ever since. Chili is so subjective, who can say which is the best, but I love the recipe below. Any amounts should be tweaked to taste, as I have over the last 10 years, but people have raved about it now for too long to keep to myself. This makes a massive pot that can feed up to 15 people. I usually freeze a bunch and save it for following Sundays. The real key, I think, is mixing in a bunch of different types of peppers. I list a few below, but be creative, you almost can't miss. All the spices are references, i actually keep tasting and adding throughout the afternoon until it's right. Usually tastes better after sitting overnight too, so doing it on College day and having on NFL day is twice the fun!. -- posted by Chef #927702

Far-From-Texas Harvest Chili

This is a thick, smoky, spicy, colorful chili. I recommend letting it simmer with the lid cocked for at least three hours for the best flavor. This way, it has just enough heat to get your blood flowing, but not so much that it makes your throat tickle. The longer it cooks, the more heat escapes, leaving the flavor of the peppers. It's good with just about anything, but we like it with a good ol' Southern cornbread (without sugar).
Spiceless Chili

Freezes great. Prep time is basically chopping onions and opening cans. Plenty of fiber, low in fat.

I'm a chili heathen, I just don't like it hot! And my daughter is a total spice hater. So I tried dumping everything chili-ish from my pantry into my slow-cooker without any seasonings. Surprisingly, my picky eater likes it - and so do I! Every time it turns out a little bit different because I use whatever's on hand, but the basic idea is here. Any beans will do: pinto, black, kidney, northern, navy...

Should take any chili spice blend well if you like yours with some kick! -- posted by BL834

Pullman Slow-Cooker Chili

Great slow-cooker chili for those fall and winter days. I invented this recipe for life in the Northwest when I moved to Pullman, WA. Pullman is a small town and home of the Washington State Cougars. With our long winters, this warm bowl of chili is perfect for coping. This recipe requires a large enough crock pot and is designed to feed a hungry group. Or, if you live alone like me, keep leftovers and eat throughout the week.
Family Favorite Chili

The name says it all...this has always been my family's favorite, even though there are a lot of shortcuts. It is simple to make, tasty and fast. What else can you ask for? To serve, I ladle it into a large bowl and garnish it with lots of shredded cheddar cheese and jalapenos. I insert tortilla chips all around the edge of the bowl for either scooping up some of the chili with (nacho-style) or eating along with the chili itself. -- posted by JackieOhNo!

M & T's Crock Pot Chili

I had a taste for chili and a pound of ground beef in my refrigerator that needed using. A match made in Heaven if I could find the right recipe. This recipe was IT! This is a chili that can be picante or rather mild and has plenty of meat. It is so very easy to make -- mostly just opening cans and throwing the contents into the crockpot. I appreciate that! I also like using refried beans instead of whole beans. They gave the chili good substance and body. This recipe is from "Fix It and Forget It Recipes for Entertaining" submitted by Sherry Conyers. -- posted by Lorraine of AZ

Chunky Chili

This is an amazing chili recipe passed down from my family. I would suggest mixing up different chili powders and adding them at different times to the crock pot. Also experiment with making your own chili powder - Recipe #97816 - that's what I always use. I also use good lean quality steak instead of regular stew meat, but please feel free to customize however you want! This makes a HUGE batch, I normally cut it in half and still have plenty. -- posted by pik5el

This is a chili recipe that my mom has made for years. She's passed this recipe on to me and now I make it a couple times a year when the weather gets cold. This chili is very good on the day you make it but EXCELLENT the day after when the flavors have had some time to meld. Its fantastic with some shredded cheddar cheese and Frito Scoops. Its also perfect for freezing and eating later for a quick and tasty meal. -- posted by Jason B

Large Group Chili

This is a simple chili recipe, one that I have adapted to fit a large group. I volunteer for my local church and cook to feed newcomers each month. I never know how many people that there will be so I always shoot to feed around 80 people. This is what I make for those cold months. I serve it with crackers, cheese, and chopped onions. So if you need to cook for a large group, or just love chili, then enjoy this one. This chili is made to be good for all so it has just the right amount of spice and flavor without going overboard. Hope you find this a great way to pleas a hungry crowd. -- posted by Chef Captain Kirk

That Chili

"So when are you going to make that chili again?" I heard it so frequently, it became the name.

I came up with this recipe based on what I had on hand at the time. I've attempted to alter it, and got nothing but complaints! Apparently this combination just works. Of course, with all chili, you can substitute ingredients in or out of the recipe, but I recommend trying this one "as is" first.

Unfortunately for some, my cooking style is very free, and I don't often measure spices. Everyone is a little different, so this is mostly "to taste." Sorry to those cooks out there that like clean measurements.

I sometimes make this is a small 3 qt crock-pot. I just alter the amount of beef broth and water used so it will all fit. Turn it on high, and let it go for 2 to 4 hours; or turn it on low and let it go for 6 to 8 hours. -- posted by Laneydey

Kevs Chili

My husbands chili recipe, created after several tries and various iterations of other recipes, we found this one to have a nice flavor and just the right amount of heat. We recommend using the Paul P. chili powders but of course you can use your own combinations of what you have on hand. A blend of various chili flavors in not overwhelming amounts seems to be the key to a spicy yet palatable chili. -- posted by Heather in Utsunomiya,Japan

Healthy Flavorful Turkey Chili

This healthy turkey chili will blow you away! It's great to bring to pot-lucks and also great to satisfy your family! I've been making it for years and when fall and winter come around I get constant requests. When feeding a large party I will sometimes add macaroni or shell pasta and some cheese. I keep some in my fridge to have for lunch, dinner and a late night snack. It's a bit addictive! Adding cinnamon really rounds out the flavor and makes is a bit different from other recipes.
I've been making this for YEARS!!! I've got this written on an OLD recipe card... it's yellowed and stained.... I've used it ALOT!!! and made it many many times... unfortunately.. since my cooking style is using a recipe as a GUIDE.. (I'm alot like Rachael Ray, I don't really "measure" I just pour, and say... that LOOKS like the right amount.. LOL it comes out tasting a BIT different each time.. but ALWAYS AMAZING!! everyone LOVES it!! Because I've had it since I was a teenager, I honestly can't tell you where I got this recipe from... I just know it's always been a favorite. All of that being said... please know, I have rarely used the exact measurements.. and I've always played around with the ingredients... adding things, not putting some things in sometimes... this is a great STARTER recipe.. and play with it as you like.. WONDERFUL for leftover turkey.. as it's not the SAME OLD "Leftover Turkey Sandwiches" (not that I don't like those...)
This is just what you need on these cold evenings! Throw a salad together, add some cornbread and your meal is ready!
Fourth of July Chili

A recipe I began "modifying" years ago when I got it from a relative. I believe it has been tweaked until absolutely perfect. there are 2 distinct seperate groups of chili fanatics in the world that differ greatly in their opinions of the perfect chili. some like it sweet, some like it spicy. This recipe will have both coming back for more! The initial mild sweetness slowly gives way to a smoky spicy flavor that really only comes on slowly after you swallow. Not to worry, the chipotle psice is easily doused with a beverage of your choice. Enjoy. -- posted by peach1705

Pork Green Chile Stew

from www.laurasbestrecipes.com

My husband and I love our Harleys and like nothing more than stopping during our ride to try Green Chili in Colorado and New Mexico. I've made green chile many times, and I believe this to be the best method. It's my own recipe as I've removed unneeded seasonings or non-fresh ingredients... If you use chiles roasted from New Mexico and good quality pork shoulder, you don't need dried seasonings. I also believe these quantities of ingredients work best. I don't believe the nutritional values calculated by RecipeZaar are correct for this posting... so keep that in mind.
Franks N' Fiber

This is a nice hearty warming fun flavorful fiber filled soup. It's adapted from a recipe I found in a Coca Cola cookbook. I'm sure you could play with it even more than I did adding garlic, carrots etc. It can also be made with a ham or beef bone omitting the bouillon cubes. It didn't specify the type of lentils but looking at the cooking time I surmised it was a whole type. I used whole red lentils (Masoor) which turned out perfect! I also added in some cooked crumbled bacon per my husband's request and it was great in it. -- posted by Engrossed

Sweet Potato Chili

Potentially Vegetarian Chili

This yummy chili can be made with real meat or soy/tofu substitutes. I made it for "treat day" at my DH's school. It was Lent and there were a bunch of Roman Catholics who wanted chili, so I went meatless. Everyone likes this but I always have extra chili powder and hot sauce available for those who like it a little hotter. -- posted by Linky

Shon's Chocolate/Cinnamon Chili

I've really been blessed by this site and the reviews have been very helpful in knowing which recipes are 'hot' and which ones are 'not'. I've never posted a recipe online before but thought I'd dip my toes in the water and see what you think of what I happen to think is a very good and easy chili recipe that I make. It's also an excellent chili for coney dogs as it is a little thicker than some chili. The cumin, the cinnamon and the chocolate make it special indeed in my book!
Green Hell Chili Verde With White Beans and Pork

Another long prep recipe, this hearty and spicy stew is an excellent part of a harvest meal or just perfect for colder days. All of my recipes take a while and produce copious amounts of leftovers, and lend themselves to quick meals later. Green Hell Chili Verde with White Beans and Pork is no exception. Everything from scratch, whenever possible. Adjust the heat by either adding or subtracting fresh jalapeno peppers. Green tomatoes can substitute for tomatillos, or use both if you want. The beans need to be white, but Great Northern beans work really well. Corn flour or wheat flour are important - using cornstarch makes it slimy. Better Than Bouillon makes an excellent Ham Stock concentrate (FYI). -- posted by E. J. Hilden

Family Favorite Chili

I found this recipe several years ago at the service meat counter in our local supermarket and tweeked it a little. I also call it 'Really Good Chili That's a Whole Lotta Work' but my guys love it so what can I do? It can be 1/2 diced beef and 1/2 ground beef but we like it all diced. It's pretty mild so add more chili powder and chopped chilis if you like it hot. I also use trimmed stew beef instead of a roast, costs a bit more but its quicker to cut up. Prep time includes browning the beef and onions. It's good left over also. -- posted by greksgirl

Chili for 2 ( or 4 )

I found this in the 2003 Taste of Home Annual Recipes cookbook. It was sent to them by Norma Grogg of St. Louis, Missouri. Since I like a meatier chili, an extra 1/4 pound of ground beef was added. But even if the extra beef hadn't been added, I still think it would be enough for 4. After simmering, I did a " taste test " and added some crushed red pepper flakes for more heat. If you don't add the crushed red pepper, it's very mild. If desired add some cheese to each serving.
Granny's Chili (With Noodles)

This is the chili recipe that I grew up with that was passed down from my Granny, to my mom, to me! I absolutely adore it, even if it's not a purist's idea of chili. Yes, there is canned Chili in the recipe, but it's still delicious and super easy. It makes plenty to freeze and reheat whenever you don't feel like making dinner! -- posted by Sara Bates
