Top Tomato Soup

Late summer, when luscious vine-ripened tomatoes are available, is the perfect time to make this soup. The recipe was found on the Toronto Star website and adapted from Sam Stern's Cooking Up a Storm: The Teen Survival Cookbook. Stern is a British kitchen prodigy. The soup may be eaten warm or cold. -- posted by Dreamer in Ontario

Tomato and Apple Soup (Dairy Free Gluten Free)

This is a really delicious soup that I got from the Gluten Free Club. It didn't give the servings, but I doubled it and it filled my standard soup pot, so I'm figuring 5 (1 cup) servings for the regular recipe. I adjusted the recipe a bit to add a little more seasoning. You could make it "cream" of tomato by adding cooked cauliflower in before pureeing. I also seeded the tomatoes after skinning (so I didn't have to sieve it). -- posted by WI Cheesehead

Cream of Tomato Soup in Puff Pastry

This decadent soup is a favourite dish at the Michelin starred restaurant Bistro Jeanty in Napa Valley. It is an impressive and delicious soup - perfect for a dinner party! For an everyday meal, omit the puff pastry dome. The recipe was printed in "Soup's On!: 75 Soul-Satisfying Recipes from Your Favorite Chefs". Start this recipe in advance as the soup must cool fully before baking. For a little extra oomph, you can add 2 tablespoons of sherry to the soup. -- posted by blucoat

Comfort Food. The first time my Dad was going to try this ... he was not very willing. Turkey ... no beef, cinnimon and nutmeg ... what is that? A little heat to make it spicy and you have an amazing chili. He was hooked.
Creamy Potato Vegetable Chowder in Mini Bread Bowls

Now this is about the chowder ... And there are so many good recipes here on RecipeZaar for bread bowls and I sure some family recipes which are favorites, so I am not going to go into a recipe for that. Honestly, I tend to just order mine from my local grocer which are inexpensive and no work for me. But, if you like to bake ... go for it. I'm just more of a cook, not a baker, although I do, but I prefer not too if I had my choice. You can also use premade frozen dough, make your own, or any method you want. But this is about the chowder and the method of presentation. I love the bread bowls and it always seems to make a great presentation. This is one of my favorite things to serve for a football party on Sunday, or a BBQ for a small get together. Or just a nice dinner party with friends. It is fun and different. Serve with grilled sausage, BBQ chicken, pulled pork sandwiches, pork tenderloin or even kabobs. It makes this a great comfort food dinner. It takes a little work, but the soup can be made the day ahead which is the best part and I always make sure I have the bread bowls ahead too. This soup makes about 10 cups, so 5 medium size bowls of 8-10 mini bowls. -- posted by SarasotaCook

Queen Victoria's Brown Windsor Soup

The very soup reputed to have built the British Empire and one that was oh-so-fashionable in Victorian and Edwardian times! This soup was served daily, until recently, in the dining cars of British Rail. This classic hearty soup was also very popular at the castle (Windsor) in the nineteenth and early twentieth centuries. Queen Victoria was particularly fond of it, and it regularly appeared on state banquet menus.
However, this recipe has not had very good press over recent years - drab tinned brands and indifferent, greasy soups served in some lower end restaurants have given it a bad culinary name! I hope to redress that with this authentic recipe from Windsor in Berkshire, England - home to the Royal Windsor Castle. A rich and hearty soup, this makes a meal in itself when served with crusty bread, scones or bread rolls. -- posted by French Tart

Cioppino

This is a very versatile seafood soup/stew. It’s very easy to make it personal and change up a bit. My aunt, my Mom, and I all make it just slightly different but it’s always delicious. It’s also pretty good for you when you consider it’s not fried and there are really no fats in it. Different ways of serving it are either over spaghetti (my fave) or with chunky Italian bread and corn on the cob on the side. -- posted by Jessica JT

Creamy Apple Chestnut Soup

I can't take any credit for this. This was on CHOW this am, but I made a similar recipe about 1 year ago which I fell in love with. I lost the original recipe which came from a Southern Living Magazine I believe, but this one is by Aida Mollenkamp. If I remember right, this is almost identical to the recipe that I originally made mine from. It is an excellent Fall soup. I remember the dinner party where I first served it. Everyone was somewhat health conscious, so I tried to do Fall flavors a bit lighter. So I served a hearty bleu cheese vinaigrette and walnut salad with roasted pears, beets and figs, Creamy havarti baguettes for the soup and Chardonney turkey sliders on whole wheat buns. Baked pumpkin spiced cookies for dessert with coffee. OK ... it was Fall, even though it was 90 in Florida ... and besides football was on. So I just had to share this soup recipe because it is so good. -- posted by SarasotaCook

Fresh Clam Chowder

I made this with littleneck clams I dug up myself in Long Island and it was the best chowder I've ever made. This is really easy and rivals what you'd get in a restaurant. All fresh ingredients and no flour.
This is a smooth and creamy bisque with the tender sweet flavor of scallops. This is a great recipe for using up left over meats. You can use ground beef, left over roast or steak.
This can also be made on the stove, just simmer for 3-4 hours.
Using MSG is optional but I use it because I think it adds a lot of flavor. -- posted by Catnip46

Layered Corn, Black Bean and Chorizo Chowder

Yes layered soup, well that was their name ... "Creamy Corn, Chorizo and Bean Tortilla Chowder." It was at a small little Mexican restaurant in Taos, NM, about 10 years ago and it was amazing. The table next to me ordered it and it looked so interesting I had to try it. The soup was topped with small piles of the chorizo, avocado and olives, and cheese on top this beautiful creamy pale yellow corn chowder and then they took a bite and the bottom layer of the soup was black beans. It was picture perfect served in this big wide rimmed white bowl, it was almost to pretty to eat. Well it incorporates a spicy layer of black beans, onions and roasted jalapenos, topped with a perfect creamy corn chowder and then topped with small piles of the chorizzo, diced avocados with olives and a pepper jack cheese. A squeeze of lime and cilantro. Take advantage of cooking the chorizo, black beans and chowder well ahead of time so when it comes time to serve ... just reheat and plate up. I serve this with my chicken enchiladas with a red sauce. This is a great dish for friends or just family and it is really simple. Make some margaritas and time for party. -- posted by SarasotaCook

Butternut Squash With Roasted Apples, Pears and Onion Soup

A fun fall soup. Roasting of the vegetables and fruits to me just really makes this the best. A drizzle of maple syrup, chopped candied walnuts, cranberries, and a dollop of creme fraiche finishes this over the top. What a wonderful Holiday soup, but also just a good comfort soup. I make this often with grilled cheese. Smoked gouda, multi grain bread and maple smoked bacon make for an amazing sandwich. I often make a bunch of these walnuts for the garnish and store them in the freezer in a baggie to use throughout the Holiday season. They are really easy and don't take any time. -- posted by SarasotaCook

Sarasota's White Cheddar Cheese Soup

A flavorful soup with simple ingredients. This can be lunch, an easy dinner, or serve this with grilled brats/onions and a side of broccoli apple slaw (my favorite). Just add store bought broccoli slaw in a bag, add some apples, pears and your own dressing and you have a nice dinner. There are also many great recipes on here for slaw of every kind. I think originally this was adapted from Cuisine at Home or Cooking Light, but I have added my touches which I enjoy. Now when I make this, it is usually for friends, so there may be 8 or more of us, so I always make a big pot. You can easily scale this down and just make half, but it is so good that I go ahead and make this and enjoy it throughout the week for a nice snack, lunch or a quick dinner. Why not have a big pot of soup in the refrigerator you can just heat up for a quick bite when. -- posted by SarasotaCook

Vincent Price Bookbinder Snapper Soup

Here is the Bookbinder Snapper Soup recipe from Vincent Price's "A Treasury of Great Recipes" (1965). It differs from the Chicago Tribune Good Eating Cookbook version in various ways, most notably by being the original and uses snapping turtle. Mr. Price notes: "...you can make a sort of 'mock snapper' soup using a red snapper." Instructions on how to make the subsitution are in the recipe. This is an old fashioned recipe, and doesn't take many shortcuts.
Shrimp Newburg Soup

I made this soup for Thanksgiving dinner, and hubby said he liked it, so I thought I'd post it and see what others think. I much preferred it warmed up the next day, so it fits well into the make-ahead and reheat category. The overnight sit allows the flavors to blend and mellow. Just don't let it boil when you reheat it. I used fat free half and half, and it worked out well. I used pre-cooked shrimp, but the recipe allows for raw ones. -- posted by Cook In Southwest

Fish Soup, Duchess of Devonshire

This recipe is from Deborah, the dowager duchess of Devonshire. She is the youngest of the famous Mitford sisters. She once had tea with Hitler when visiting her sister, Unity, in Germany, but as she does not speak German she could not understand anything he said. She is now 89 and in her old age has become an Elvis Presley fan, having been to Graceland at least twice. When asked if she would rather have tea with Hitler or Elvis so replied "Elvis of course". Her home at Chatsworth is filled with Elvis memorabilia. -- posted by Dan-Amer #1

This amazing soup is from the highly acclaimed Saffron restaurant in Arrowtown, NZ. It is absolutely delicious with naan!!
Notes: The recipe calls for Star Anise, however I usually substitute fennel seeds.. I also use coconut oil instead of peanut and 3 cans of tomatoes if I don't have fresh. If you can't find Palm sugar, try brown sugar.

The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.

Ginger Butternut Squash Soup

The combination of ginger and butternut squash is delicious and addictive. This recipe yields a creamy soup without the use of any cream. I love to whip this soup up with my immersion blender right in the pot. This soup also freezes well. You can serve it with a dollop of sour cream if you desire, although I serve it without a garnish. If you want to make this a completely dairy free soup, use dairy free margarine (Fleishman's unsalted, or Earth Balance.) Oh yeah, and you MUST use fresh ginger. -- posted by Lee Hock

Silky Spicy Carrot Soup

I went on a cruise on the Holland America cruiseline and they served a wonderful carrot soup. The seasonings are a little different, and this is from the Down Home with the Neely's cookbook, so you know it's gotta be good! -- posted by Sharon123

Tri-Colour Stuffed Pepper Soup

Take two frustrating attempts to make a different stuffed green pepper soup and a wonderful blizzardy day and you end up with a soup that mirrors a stuffed green pepper, exactly! There's nothing like dogged determination and lots of time to get something right. I wanted a rich sweet pepper soup that had the delicate flavour of tomatoes and the ability to bite into a meat/rice mixture, just like a real stuffed pepper. This recipe is two parts: first, the Porcupine Meatballs, which can be made a day or two ahead. Then, the Tri-Colour Pepper Soup, which is a stand alone soup that I've been making, and enjoying, for years.

If you enjoy a lot of meat, you might want to double the meatball recipe; for our tastes, this is perfect, with 4-5 meatballs served in each bowl. The taste of this soup is quintessential 1950's style Stuffed Green Peppers. If you can tolerate more heat, then jazz it up to your hearts content! This way, you won't find the recipe "too bland", which is how we like it---pure comfort food straight from Leave It To Beaver.

Enjoy the meatballs or enjoy the pepper soup, or, enjoy them blended together for the best of all worlds with this stuffed pepper soup! Using the three colours of peppers just adds some fun and depth to it. -- posted by The_Swedish_Chef
