			<title>Deluxe Cornbread Dressing Casserole (Big Batch)</title>

			<description>An old family recipe that's been tweaked little by little over the last 100 years.  This makes 2 large pans about 1/2-3/4 filled.  To relieve holiday stress make the pre-cooked dressing the week before Thanksgiving and freeze.  Use one pan for Thanksgiving and one for Christmas.  Begin defrosting 2 days before in the refrigerator.  I split the prep process between 2 days.  On the first day make the cornbread, boil the fryer, pick the meat and save the broth.  The second day assemble and freeze.  For OAMC split dressing into even smaller portions; may need to reduce bake time.

			<description>My favorite part of a Thanksgiving meal is the stuffing!! This recipe came about when I saw Rachael Ray make hers and I figured they would be great using my family stuffing recipe.  I have made this by using muffin tins or free-forming balls onto a baking sheet.  The latter works great when you want to get a lot done at one time or don't have enough muffin tins; just make sure you make them tight enough that they won't fall apart while baking. Lightly blanched broccoli and cauliflower (still warm), tossed with olives, onions, a creamy Parmesan dressing and topped with crisp bacon. If you want, blanch the broccoli and cauliflower ahead of time and keep in a ziplock container or bag until you are ready to serve. If you want to serve it warm, just reheat in the microwave. I also do the bacon ahead and just keep in a small ziplock bag or container. This is a great salad that you can do ahead. Then just toss and serve. Here's one gleaned from Gourmet magazine, Nov. 2006 via Epicurious. Enjoy! This is one big casserole, but at the restaurant it was in individual dishes. You may add the cheese between each layer or just use it to top, or leave it out if you prefer! On the  website, this has 92 wonderful reviews! this is even better the next day. You can half this recipe and cook in a 9x9&amp;quot; pan. This is so good, serve to company and for the holidays. This recipe calls for slicing raw squash but to make it easier to cut, microwave for 3-5 minutes, or lightly steam or bake and then cut in pieces. 			<description>While this recipe calls for summer vegetables, my brother and SIL prepared it for Christmas dinner 2009 and I loved it.  Good as a vegetarian main dish or a side.  It's not quite the same as other vegetable gratins already on RecipeZaar.  Personally, I would make this with less olive oil, the amount of which I specified in the ingredients, but you can use the original amount if you prefer (just convert teaspoons to tablespoons).  This can also be made ahead after assembly and before baking.  Just pre-heat the oven.  Try to buy the zucchini and squash of roughly the same diameter.  I might serve this with bread to soak up the juices.  To make this vegan, omit the parmesan cheese. I make this quite often and serve it with a bowl of my potato soup or my chick pea soup, but you can use whatever you like best. Slice a few good fresh tomatoes or some fresh fruit if you prefer, and you have a great easy dinner. Two (2) nights a week, I really try to eat a bit lighter - and this fits the bill. But, it also makes an amazing appetizer, or a great side dish for any meal during the week. Simply put, it is just really good.  Now whatever you do ... don't get rid of that cheese - Save!  It makes a great spread on baguettes or makes an amazing spread for a sandwich.
