			<title>Pepper Crusted Tuna, Mustard Sauce and a Pea Shoot Salad</title>

			<description>This was adapted by a friend of mine ... who got it from a caterer ... who got it from a friend ... who got it from a magazine, who got it from WHO KNOWS where.  Well you get the idea - then I got it. Regardless, I love it and have been making it for a couple of years and it certainly isn't difficult and I love that pea sprouts have become more widely available this days.  The sprouts or also known as shoots and tuna mix nicely with the tangy mustard sauce to make a very easy quick dish to make. It literally takes 15 maybe 20 minutes to make. And agreed you will pay a little premium for the pea sprouts but you could also use other micro greens or spring greens, but you don't know what you are missing until you try them.  And the tuna ... buy it when it goes on sale, that is when I do. This is rich in flavor but at the same time very delicate and well worth the extra money for a nice Sunday dinner or for company. 			<title>Shells Stuffed With Fresh Tuna Salad and a Tomato Vinaigrette</title>

			<description>This is quick, easy, and makes a great light dinner.  I love salads, and love to try to come up with something new that is still hearty, satisfying and easy.  I love to serve this with a hearty creamy white bean soup, or maybe a fresh garden potato soup or your favorite. Also, fresh grilled asparagus, grilled zucchini or marinated mushrooms or some green beans. I serve these pretty shells over a small bed of lettuce and let the fresh tomato vinaigrette be the dressing for that as well.  One last note ... you can use canned or packaged tuna (I prefer the packaged, much nicer texture), but I use fresh tuna for this.  It literally takes 5 minutes or less to saute, let it cool as you cut up and prepare everything else.  Stuffed shells and then drizzled with a fresh tomato vinaigrette over fresh greens makes a great salad option to that every night tossed salad. This is healthy and quick but a beautiful dish to serve for guests or just a nice dinner for you and your husband or significant other or just family. As you cook the salmon and fennel all in the oven, roast some simple new potatoes at the same time on the same pan and save clean up time. 			<description>Now, we all know how to grill vegetables.  This is my favorite marinade and I make this all the time with local market ingredients. And what is nice is you can use the outside grill, inside grill pan or even just the broiler. I serve this with steak, chicken, fish, or just about anything you can think of and sometimes just as a salad.  It is super quick, easy, and absolutley delish.  Fresh slices of tomatoes (yellow, purple, red and orange; fennel, onions and portabello mushrooms);  a easy quick marinade and what a side dish.  And think healthy. One of my girlfriends makes this all the time since I showed her; on baguettes, with pasta, over fish and just as a side. 			<description>Light and healthy.  This can be a great starter, nice side salad, toss on some chicken or grilled salmon or scallops and make this a main dish.  This is excellent by the way with grilled or baked salmon. This is great for a Holiday meal and is so easy.  Store bought bagged greens, a can of cannelloni beans, a simple vinaigrette which is made ahead and uses fresh lightly blanched asparagus. Easy and quick and so healthy. You will spend a little extra for the micro greens, but it is well worth it.  I took this on a big platter for a pot luck and  topped it with my smoked salmon and the dressing. 			<description>A nice salad for company or for any night of the week. Lightly blanched broccoli and cauliflower (still warm), tossed with olives, onions, a creamy Parmesan dressing and topped with crisp bacon. If you want, blanch the broccoli and cauliflower ahead of time and keep in a ziplock container or bag until you are ready to serve. If you want to serve it warm, just reheat in the microwave. I also do the bacon ahead and just keep in a small ziplock bag or container. This is a great salad that you can do ahead. Then just toss and serve. I have served it on a bed of greens and have added chopped grilled chicken on occasion.  You can also add a can of quartered artichoke hearts and a jar of chopped roasted red bell peppers. ( Be sure to drain both.)  It's a great day before shopping recipe as most ingredients are canned, bottled or frozen.  Be prepared...this makes enough to take to a potluck. The Owner / Chef was nice enough to share her recipe with me, and had many other recipes that looked wonderful, but this is the only one I asked for. Unfortunately, the Bed and Breakfast is no longer there and the owner can't be contacted. She was a fantastic cook. The cherries with the combination of the pecans and the creamy dressing, just make it a perfect combination.  I love to serve this with a honey roasted chicken, just something light and simple. 			<description>I was taught to make this Aioli in Spanish cooking classes, it is basically a fast way to make an real (or almost real) Aioli without resorting to using pre made mayonnaise. It tastes great and takes under 5 minutes to prepare. 

You will need a thin tall measuring cup or jug and a hand held (vertical or stab) blender. 

If you don't like garlic, you can make without. 

You can add things like herbs (fresh or dried), black pepper, smoked paprika or other things you like. 

Experiment with the amount of oil and lemon juice.

			<description>I was recently sold on quinoa and how awesome it is!  Gluten free, an almost perfect protein, easy to prepare, the list goes on!  This is a combination of two recipes, one of which I altered.  The first is from this site, (#16399, Quinoa-Toasted).  The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes.  We thought it tasted a bit like sushi and loved it!  Feel free to add more heat, but this had enough for our family as we've got wee ones.
