Uncle 12's Scalloped Potato's

I was thumbing through the family cookbook and found a couple variations for scalloped potato's..I referred to both recipes and tweek'ed it a bit. This is a large recipe that I use for party's as a dish to pass, etc. But can be easily scaled down.
I prefer to leave the skins on, but it's up to you, tastes great either way. -- posted by Uncle 12

Val's Cranberry Salsa

My friend Val shared this recipe with me last year. It is a new favorite, and one that I plan on taking many places over the holiday season, as it is different. Best served with Wheat Thins, this salsa is yummy and a must try! The original recipe called for a 1 pound package of cranberries; I've found that fresh cranberries are now packaged in 12 oz. portions, and this size works. Don't forget to allow time for chilling, to allow flavors to develop...This will make enough for 2 blocks of cream cheese, so you have 1 to serve, and 1 to share! -- posted by alligirl

Mini Crab BLT Sandwiches With Roasted Tomatoes & Avocado

These are simple little sandwiches which you can make all ahead of time and then just put together right before serving. A nice twist on BLT. A simple BLT spread with crab, roasted tomatoes and avocado make this great. I cut the small baguettes on a angle, secure each half with a tooth pick for a nice small bite size sandwich. Great for appetizers. Now, really hungry ... make this on some toasted Ciabatta bread for a decadent full size sandwich with a bowl of soup one night for a great dinner. -- posted by SarasotaCook

** Cucumber Sandwiches Everyone Loves **

I never follow recipe's.. so this was one that after a lot of taste testing, I stuck with. Everyone loves it!! It's a great appetizer for the holidays as it is so light & not filling. But I have made these for my kids for a summer brunch or lunch also. I have never tried a lower fat version because I despise fat free mayonnaise & cream cheese but let me know if you try something & it works.
I have simplified it since my first 10 times making this recipe as well IT WILL SERVE 12-20 most will want 2nds, trust me :)

Cranberry Ranch Dressing

Karen's Chili for a Party

My first recipe I'm posting here on Zaar. Please tell me if you find any mistakes. Everyone loves this chili. It makes a whole big pot of it. Add more or less of any ingredients you wish. I don't drain the beans but do so if you want. I use it in my soup warmer for parties. Im guessing on servings, I never really took a count,,,I usually do buffets and this is plenty with the other foods. This freezes well. I usually cook ahead of time, For parties freeze in 2.5 gallons ziplock and defrost the night before. Great for parties, superbowl or just OAMC put into smaller ziplock bags. This taste better the next day when all the flavors come together. I don't have the size pots so I divide it into 2 pots, 6 and 8 qt. I hope you don't have same problem lol. -- posted by Karen Guerra

You can use store-bought pralines to make the crust, but Big Sugar’s quick praline recipe is worth the extra effort, as is the buttery caramel sauce that gets pooled on top.

Stef's Best Chocolate Chip Cookies

I love chocolate chip cookies, and have been playing around for years to find what I consider to be the 'perfect recipe.' This is a combination of recipes from a few different sources, I don't consider it original, more stealing the tips I like from different places (alton brown, the ny times, and paula deen, among others). I particularly like it because the butter is melted - it saves your arm the usual pain of mixing softened butter. These make cookies I like - slightly salty, think, chewy, and butterscotch-y.

If anyone finds changes that work well, please let me know, this recipe is always a work in progress to me.

Enjoy!! -- posted by StephanieBamBam

Spicy Crab Stuffed Mushrooms

I found this recipe on another website but it is an Emeril Lagasse recipe. These are simple to make and really good. I find that stuffed mushrooms with bread crumbs tend to be dry. These have no bread crumbs, therefore, they are very juicy and moist. They have a little kick to them. I did add a little more mayonnaise as I thought the mixture was a little dry. I also omitted using the radicchio. I used a large can of crab claws found in the refrigerator section. The recipe originally calls for 12 ounces of mushrooms but I found that I had alot of mixture left over. These can be made ahead of time and then pop them in the oven at the last minute. -- posted by Crazycook in PA

Deluxe Cornbread Dressing Casserole (Big Batch)

An old family recipe that's been tweaked little by little over the last 100 years. This makes 2 large pans about 1/2-3/4 filled. To relieve holiday stress make the pre-cooked dressing the week before Thanksgiving and freeze. Use one pan for Thanksgiving and one for Christmas. Begin defrosting 2 days before in the refrigerator. I split the prep process between 2 days. On the first day make the cornbread, boil the fryer, pick the meat and save the broth. The second day assemble and freeze. For OAMC split dressing into even smaller portions; may need to reduce bake time.

My picture is of a smaller baked portion. -- posted by gailanng

This is an absolute favorite of mine and is a staple at all of my Christmas parties...wouldn't quite be one without them! They have a little bit of heat, balanced by the sour cream, and the combination of crunchy edges on corners of the wonton skins with the chewiness of the portion that cups the filling makes for a wonderful sensation. It's best to make the cups upto a day ahead of time and put them in a plastic bag, but don't seal it or they could lose their crunchiness. -- posted by Coprtopd

My Christmas Ham

An adaption from a recipe found on AllRecipes.com. This has become our favorite ham recipe when using the oven (we also smoke ham outside on the grill). We make the recipe as stated, even for our small family, because of all the wonderful leftover ham recipes on RecipeZaar! My family does not eat the pineapple (except me), so I end up putting the leftover fruit in jello or mixing with cottage cheese for a snack. -- posted by Spankie

Coconut Mango Green Curry Cocktail Sauce

Yesterday I served Christmas Brunch for my family. This year I was not my typical over-the-top foodie self and opted for a simple brunch. My one signature "Star" of the meal was a Shrimp cocktail bar with 4 very different types of cocktail sauces. I searched the internet for ideas, recipes, and was able to compile my taste buds and about 100 recipes into four choices. This one was REALLY good....rated as second best of the four. Since I'm a big fan of Green Curry lately, I really really loved it! -- posted by Melanie B.

Garlic Feta Toasts With a Warm Olive Spread

I don't know about you, but I'm a bit of a soup and salad person, and once a week I have just a salad or soup/salad, soup/sammy for dinner rather than a heavy dinner. I make this quite often and serve it with a bowl of my potato soup or my chick pea soup, but you can use whatever you like best. Slice a few good fresh tomatoes or some fresh fruit if you prefer, and you have a great easy dinner. Two (2) nights a week, I really try to eat a bit lighter - and this fits the bill. But, it also makes an amazing appetizer, or a great side dish for any meal during the week. Simply put, it is just really good. Now whatever you do ... don't get rid of that cheese - Save! It makes a great spread on baguettes or makes an amazing spread for a sandwich. It will last a couple of weeks in the refrigerator covered. and, make all this ahead of time and just heat up, toast and serve. -- posted by SarasotaCook

Mint Chocolate Chip Cheesecake Bites (Freeze-Ahead)

A nice step away from those pre-made frozen cheesecake bites. It involves premade chocolate-chocolate chip cookie dough as a graham cracker crust simply does not do this justice. You will need mini-muffin tins to do this, they usually hold about 12 mini-muffins and the recipe yields 48. And yes, 1/8-tsp spoons are actually made! You can find them at Family Dollar. If you don't have this size or a sliding spoon to use, about 10 drops will equate to 1/8 tsp. Peppermint is very strong; a little goes a long way. -- posted by the80srule

Buffalo Chicken Meatballs

Adapted from and inspired by recipe # 48582, butterscotch blondies. The store was out of butterscotch chips, and this came to mind when I saw the cinnamon chips. -- posted by lindseycore
