Hypoglycemic's Whole Wheat Blueberry Muffins (With Fructose)

I have hypoglycemia (hyperinsulinism) and I have a sweet tooth, so I've been experimenting with breads and desserts made without table sugar. The goal is to make food take longer to digest, so whole grains, extra fiber and protein, and a healthy balance of fats are needed.

These muffins taste like the real thing. They are sweet enough to satisfy me and brown beautifully because of the fructose. The taste of the butter greasing the tin keeps me from slathering it on later. The muffins stay moist for days in a zip-lock bag. Zap two in the microwave for 30 seconds, and they taste fresh-baked again. -- posted by Catnip Tea

Sugar Free, Gluten Free, Low Fat Peanut Butter Banana Bread

This banana bread is so good, I can't keep it around my house for very long - and I have to make a double recipe every time! And since it has no sugar, flour and very little fat - I have no problems with my kids gobbling it up! I always make a double recipe and freeze one loaf - always refrigerate the other loaf otherwise will go bad very quickly! -- posted by Pebbles02

Sullivan Street Bakery No Knead Wheat Bread

This is the wheat version of the Recipe supplied by Sullivan Street Bakery and printed in the NY Times, this bread recipe so insanely brilliant - no sticky fingers, no doughy mess, no intricate measuring, no complicated kneading. Totally hands-off. The crust is thin, crisp and snaps as you cut into the loaf. The interior of the bread holey, chewy, airy and light. This low fat, low cal bread will become a staple in your home as it has mine. -- posted by Humble Bee

Carrot-Raisin Bread (Healthier Version of Mimi's)

I based this on one of the Mimi's Carrot-Raisin Bread recipes I found. However, I have made several substitutions that greatly reduced the calories, lowered the fat and increased the fiber, and put it in muffin pans. While this no longer tastes much like Mimi's, it is yummy and doesn't taste like "health food". Replacing oil with mashed banana gives this a hint of banana bread flavor. -- posted by TLB117

Cheesy Sandwich Buns

The texture of these rolls is reminiscent of an English muffin or biscuit. Use two to assemble an "egg McMuffin" type breakfast sandwich; or use for a ham sandwich, etc. Don't worry -- these don't taste like coconut. However, I find them a little "eggy" when eaten plain -- yummier in sandwiches. Try variations with onion powder or chives.
Buckwheat-Yogurt Banana Bread (Guilt-Free)

I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. If you are used to regular store-bought over-sweetened cakes, I recommend you increase the amount of sugar in the recipe or, you can use these tricks: use over-ripened bananas (they are sweeter), use sweetened applesauce and/or vanilla yogurt instead of plain. -- posted by Génial Génie

Virtually Fat Free Banana Bread

My grandma raves about my banana bread, so I am constantly making it for her. I decided to play with the recipe to find a "better for me" option, and the results were amazing! I think my "healthified" banana bread tastes better than the full fat version! I usually add in chopped walnuts, but they add fat, so this is optional. This makes a lot of bread, so I usually half the recipe. Enjoy! -- posted by Health Nut 101

Blueberry Orange Muffins (Diabetic Friendly)

Low fat and low sugar yumminess! Found in Diabetic Cooking magazine, we enjoy these not-too-sweet cake-like muffins with fresh blueberries. With just a hint of orange flavor, I think I'll add one teaspoon of orange zest next time. If you prefer a sweeter muffin, I'd suggest increasing the sugar to 1/2 cup.
Banana Muffins, Diabetic and Delicious

I met this muffin on the Christine Cushing Live show and had to try it. For my money this is the ultimate banana muffin when it comes to the health aspect and just plain good taste. The nuts will add fat but nuts are heart healthy fat, you know the good kind. -- posted by Annacia

Perfect Bread and Dinner Rolls

This is a recipe that I've been perfecting for the last couple of years. My wife and I don't buy store bought bread any more thanks to this recipe. It is also much healthier than any other bread recipe I've found but doesn't taste "healthy". I included ingredients that make this bread good for diabetics also. This recipe works best in a stand mixer but it would be fairly easy to halve the recipe and make it in a bread machine. I wouldn't recommend mixing it by hand (unless you have Popeye arms...). It's a fairly sticky dough. Prep time includes all 3 rises. -- posted by price403
