			<description>Came across this recipe published in The Washington Post &amp;amp; it made me reminisce back when one would buy a nice fat capon (neutered young rooster) because they tasted so fine. Gone are the days of capons (unless you raise your own) but this recipe sounds outstanding for late winter fare (we still have mint albeit straggly in the garden). Attributed to &amp;quot;Marcella Says . . . Italian Cooking Wisdom From the Legendary Teacher's Master Classes, With 120 of Her Irresistible New Recipes&amp;quot; (HarperCollins, 2004), by Marcella Hazan.
FYI -  If grinding the meat sounds too involved, spare yourself &amp;amp; opt for either ground chicken or turkey. Both are readily available &amp;amp; relatively inexpensive. San Marzano canned tomatoes are available from CA - no need to spend on imported (or try with Muir Farms fire roasted canned tomatoes for a splurge).
Per the article, &amp;quot;Dante Bernardis uses the name Blasut both for himself and for his restaurant in Lavariano, a Friuli farmland town. Dante makes this pasta sauce with young roosters, which are tastier than hens. To achieve comparable flavor with what is available in the meat counter of most markets, I have used chicken thighs, the tastiest part of the bird. The liberal use of herbs, unusual in most Italian cooking, makes the sauce intensely aromatic and endows it with a depth of flavor that one generally associates with game. It is excellent on sturdy pasta shapes, such as penne.&amp;quot; There you go. Chicken - it's what's for supper. 			<description>DH started from fluffernutter's Recipe #137552 #137552 (which came from the South Carolina Outdoor Press Association), but made so many changes that I am posting DH's version.  I'm not a fan of pot pie, nor squirrel, so I told him he had to take total responsibility for any squirrel dish he fancied.  To my surprise, his creation was delicious and had no strange taste at all; the meat tasted similar to dark meat chicken.  He had 4 squirrels, which yielded a little over 1 pound of meat.  He ended up with 2 pot pies because he wanted a lot of potato, and used full 15 ounce cans of lima beans and green peas.  Our pot pies were packed with vegetables with squirrel accents. I have always read and heard that it is not best practice to cook chicken in the juice that it marinates in, but I did for this recipe, and I'm still alive. It is not ABSOLUTELY necessary to freeze the chicken after combining all the ingredients in the bag - in fact, for my experience, I just took out frozen chicken breasts and defrosted the chicken in the sauce (in the fridge) and made it the very next night. The freezing part is just an option for busy people to have a convenient ready-made meal waiting in the freezer. 			<description>A delicious full-flavored spicy but not hot curry dish that is easy to prepare. Tamarind paste is available at Asian groceries - it keeps FOREVER in the fridge. Try using freshly ground cumin &amp;amp; coriander for most excellent taste. Coriander seed really loses its flavor fast when ground; I was amazed at the flavor difference the first time I ground coriander seed myself - totally different from the bottled ground stuff. Reduce the fat by skinning the chicken parts if you wish though a bit of fat off the thighs is a nice flavor in the stew. This adds to the protein of the meal as well as the flavor while not adding to the calories that heavy or sour cream would.  An odd substitute you might say?  Not at all, many Indian curry recipes use it as a healthy substitute for cream. 			<description>I defrosted a fryer from the freezer and didn't have anything to stuff it with, and we don't drink beer. I had cherry soda in cans so I poured the soda out of the can into a glass. Then I poured 1/2 cup back into the can plus I added a 1/4 cup of cream sherry (sweet) to the can. I gave the chicken a rub on the outside and then grilled it for 1.5 hours and it was the moistest chicken we have ever had. Now the tricky part the juices are red from the cherry soda, so you need to use a thermometer to make sure the chicken is done. For a change of pace from Fee's usual (costly) prescription diet, I occasionally make this for him. 

Diabetics need fiber and kidney kitties need to limit protein.  The inclusion of brown rice addresses these issues.

The ingredients as given are minced, but I drop everything into my Magic Bullet yielding the consistency of pate. You can freeze portions, too - handy!
