Walnut, Feta & Apple Tabbouleh

Not your usual Tabbouleh, this salad merely has a similar consistency and shares some common ingredients with its authentic cousin. It has a lot of crunch thanks to the apple, radish and walnuts, and involves no actual 'cooking'. The bulgur and dressing could easily be made a day in advance, but I do find it tastes best if the salad, fully combined, is allowed to sit for about 30 minutes to an hour before serving. Ideal to share, bring it along to your next potluck party! Serves 6-8 easily as a side. Prep time includes the 30 minutes it takes for the bulgur to soak. -- posted by magpie diner

Seven Layer Potato Salad

A new twist on the old favorite Seven Layer Salad, based on potato salad rather than the usual iceberg lettuce for something a bit more substantial. Bacon, eggs, peas, and cheese are traditional in a Seven Layer, but a little bite from radishes, onions, and a few surprise ingredients makes this one a little more interesting. -- posted by EmmyDuckie

Strawberry Tabbouleh

A refreshingly-different tabbouleh that would be a much-appreciated addition to a potluck. Just bring the parsley/bulgur component of the salad and the strawberry part in 2 different plastic containers and combine them before eating (so the strawberries don't get too mushy). Both the sweet and savoury elements of this salad complement each other so well...you won't be able to stop eating it! The biggest 'trick' to making this good is to make sure your parsley and mint are really dry before you start chopping them to a fine mince -- a salad spinner is great for this. -- posted by evelyn/athens

Baked Potato Salad - Loaded!

This is a delicious potato salad that celebrates the tastes of summer. I found that using only sour cream for the dressing made it a little too rich tasting, so the yogurt adds a bit of a bite. Topped with what I like to put on my baked potato, this is a colorful assortment of flavors that you can make for a potluck or summer picnic. -- posted by Nif

Creamy Seafood Pasta Salad

"Salad Envy": That's what they'll have when you show up at the next potluck with this creamy, colourful and delicious offering. You can tell them it's low in calories too, but they probably won't believe you. Substitute the shrimp with salmon, tuna or lobster for a different taste experience. Note: After several hours of chilling, the pasta will absorb some of the dressing. To return it to a creamier consistency, simply add one or two tablespoons of salad dressing. Cooking time does not include time for refrigeration. Created for the Craze-E Salad Contest. -- posted by Diana #2

Jelled Agar-Agar Sunshine Salad

From Recipes for Food Allergies by Marilyn Gioannini. For people who do not use gelatin, agar-agar is a good substitute - and a good food in its own right, rich in vitamins and minerals. This salad is very light and tasty. Agar-agar has the interesting quality that it does not have to be refrigerated to jell.
World's Best Tabbouli / Tabouli / Tabbouleh / Tabouleh Salad

This was one of the most popular dishes at Nancy Mehagian's vegetarian restaurant on the island of Ibiza and she shared it in her book "Siren’s Feast: An Edible Odyssey". There are two secret (and essential) ingredients in this recipe - fine bulgur (which has the added benefit of cooking quickly) and tamari soy sauce.

Can be served frozen or not, as either a salad or dessert. My cousin prepared this for me from a recipe she found, but hers used miniature marshmallows instead of cottage cheese. I like things less sweet, and more nourishing, so made the substitution. You can use different nuts than pecans - walnuts and hazelnuts are just as good (well, almost) in the recipe.
Caramel Apple Salad (Fluffy Apple Salad)

I got this recipe from my little sister. It was called Caramel Apple Salad, but I personally don't think butterscotch pudding tastes like caramel apples... nonetheless, it is a delightful sweet side dish/salad or dessert. Other recipes I've seen on 'Zaar all have pineapple, so I am posting this one as it does not. I prefer Granny Smith or another tart apple in this salad as it is quite sweet, but you can use whatever apples you have on hand. :) Prep time includes chilling time; may also be frozen. -- posted by Anissa Wolf

Wheat Berry Salad With Red Fruit

For this sweet and tart salad, wheat berries are blended with cranberries, apples and pecans and tossed in a raspberry vinaigrette—a winning combination. A perfect side dish to take to a potluck or simply serve it over a bed of peppery arugula for vegan lunch. Recipe from Eating Well March/April 2007. NOTE: cooking time is resting time. If you wish to sweeten your salad up a bit but don't have Agave, feel free to sub 1 T of honey. Also of note, using peaches and mango in place of the red fruit (thereby making this wheat berry salad with ORANGE fruit) would be delightful!!!! This salad is even better on day 2, so it's a great make ahead recipe. -- posted by JanuaryBride

Easy Potato Salad With Complete Instructions

A potato salad which is universally enjoyed and really easy to prepare. The dressing is heated prior to blending but it goes really fast and turns out perfect every time. This is a great "beginner's recipe" because I have listed detailed instructions on both how to cook the potatoes and how to boil the eggs to ensure a no-fail experience. I wanted to remark that this makes one of the best potato salads for cold potato salad midnight snack sandwiches. Of course, this is also the perfect covered dish. For lots of smiles, serve this with my Southern Fried Chicken, posted here on Recipezaar. Finally, if you must have sweet pickles in your potato salad, just add 1/2 cup of drained sweet relish at the blending stage. I did not include the 4-hour refrigeration period at the end in the cooking time. Enjoy! -- posted by Bone Man

Cook's Illustrated Make-Ahead Potato Salad for a Crowd

This is a very good potato salad from the folks at America's Test Kitchen. I must confess that I love dill pickles and prefer that flavor to sweet pickle relish. I wound up adding a couple dill pickles and some dill pickle juice to this recipe (just a personal preference) and quite a few more eggs. Here are the tips from Cook's Illustrated: If you only have celery salt available, use the same amount but omit the salt in the dressing. When testing potatoes for doneness taste a piece. If you overcook they will become mealy and break apart. The potatoes must be just warm or even fully cooled when you add the dressing. If you find the potato salad a little dry for your liking, add up to 2 tablespoons more mayonnaise. Serving size is estimated. -- posted by AmyZoe

Potato Salad With Sour Cream and Bacon

Mom always added sour cream, bacon and bacon drippings to her potato salad and folks loved it. I've dressed it up a little, adding celery, different spices and more eggs than she did. Mom, of course, never measured. In order to post I measured all the ingredients and must say I have given mom a run for her money. Hope you enjoy. -- posted by Suzanna Marie

Spicy Coleslaw

This recipe was featured in our June/July 2009 newsletter and was sampled at our June 2009 Potluck Dinner. It was adapted from the recipe in Greens Glorious Greens! by Johnna Albi & Catherine Walthers www.Amazon.com/dp/0312141084.

Sturdy, abundant and inexpensive, cabbage is a long-standing dietary staple throughout the world and is so widely cultivated and stores so well that it is available throughout the year. They belong to the Cruciferae family
of vegetables along with kale, broccoli, collards and Brussels sprouts. Cabbage is very high in vitamins C and K, and a decent
source of dietary fiber.

Brown Rice Tangi Salad

This is an easy to make family favourite given to me by my mother years ago. A delicious, high fibre way to include more brown rice in your diet. It improves on standing so if I'm wanting to take it to a BBQ or pot luck dinner, I'll make it the day before then chill it over night. The brown rice gives it a lovely nutty, chewy texture in a sweet sour dressing. Everyone will be coming back for more and want the recipe. Enjoy! -- posted by jodz

California Salad (Tomato, Cucumber and Onions)

Simple, refreshing and delicious! Juicy tomatoes, crisp cucumbers and crunchy onion combine with Miracle Whip to make an unbelievably delicious salad! You will be surprised and delighted...the juice from the tomatoes combines so well with the Miracle Whip, you'll never know that Miracle Whip is in it once the flavors have combined. You may be tempted to add something to it, it seems too simple to be good, but try it like this first, I guarantee you'll like it! I make it often for potlucks and BBQ's and people are always amazed at the simplicity of this recipe. Family legend is that relatives from California always made this salad and so it was dubbed 'California Salad'. Can easily be made low/non-fat, but I prefer the regular version. It is also great as a 'relish' on grilled meats, especially brats. This is also a very 'forgiving' recipe...I never measure anything, just throw it together. Just remember the veggie ratio is 1:1:1 and you'll do fine! **Unless you live in a warm climate and can grow or get locally grown tomatoes all year long, don't bother making this in the winter! Fresh, ripe juicy tomatoes are the key to making this salad** Easily doubled or tripled, but yield will vary depending on size of the vegetables. "Cooking time" is refrigerator time! -- posted by The Frugal Cheflady

Southwest Four Bean Salad Supreme

Tim and I came up with this recipe after having a deli salad that we thought we could make on our own...and better. This is a very versatile recipe. I have served it on a bed of greens and have added chopped grilled chicken on occasion. You can also add a can of quartered artichoke hearts and a jar of chopped roasted red bell peppers. ( Be sure to drain both.) It's a great day before shopping recipe as most ingredients are canned, bottled or frozen. Be prepared...this makes enough to take to a potluck. It makes approx. 18 cups. -- posted by Laura911RN

I got this recipe from a Philipino friend who got it from her sister. A very delicious twist on macaroni salad. Simple to make and dissappears very quickly!! A meal in itself, it makes a nice lunch on a hot day. -- posted by Banriona Aeval

Very light and fresh salad made with a variety of healthy ingredients. After soaking the bulgur for it's hour, the salad only takes 15 minutes to put together.
Great accompaniment to any kind of meat or also delicious stuffed into a pita for a vegetarian treat! -- posted by Chef #1539388
