			<title>Green Chile Chicken Enchiladas</title>

			<description>I live in southern New Mexico.  Our cuisine is far different than that of northern New Mexico (ie, Santa Fe, Taos, etc.).  Las Cruces, or Hatch really, is the chile growing capital of the world.  Whenever we have pot lucks at work or partys, my green chile enchiladas are always requested.  If it is going to be an especially large group, I leave out the chicken and just make several trays of green chile cheese enchiladas.
Just for clarification, &amp;quot;CHILI' is that soup dish made with hamburger meat and beans that is popular in Texas, while &amp;quot;CHILE&amp;quot; is the spicy vegitable that makes mexican food so great.
Green chile and red chile come from the same plant.  Green chile is harvested when ripe, and red chile is from chile left on the vine or tied up in RISTRAS to dry out and become red chile.
When I was in college in Odessa, they didn't have descent green chile, they used tomatillos instead.  I did not like that at all, so I substituted fresh jalapenos instead. It's perfect because my husband and I love Middle Eastern food, but he's allergic to gluten and can't have traditional tabouleh.  The fresher the herbs, the better because they are really the cornerstone of this recipe.  Feel free to add tomatoes, cucumbers, olives, toasted pine nuts, anything you desire.  It would make a great meal with a side of veggie kabobs and vegan tzatziki.  Cooking time includes cooking the quinoa and refrigerating the salad. Yes, I love veggies but was always grossed out by tomato chunks (in spite of loving tomato sauces and my special tomato soup.) If you want to make this vegi-chili &amp;quot;con corn&amp;quot;, a can of 15-oz La Fe corn is the BEST for this recipe, but I wanted to keep the posting simple so I left it out. 1-2 tbsp garlic powder works if you don't have chopped garlic at hand. All kinds of beer suffice for this recipe but I found that Coors Light and Corona really worked the best. 			<description>California Grill masters pride themselves  in cooking tri-tip with oak wood. This takes a lot of time, and I don't have oak wood readily available. It's not cheap! When I found this recipe in an issue of Cook's Country Magazine (part of the Cook's Illustrated family) I knew I had to make this.  Forget BBQ sauce... this is an amazing recipe! Cook's Illustrated adapted this recipe where you used wood chips, soaked in water.  You grill the tri-tip, seasoned only with salt &amp;amp; pepper (the Santa Maria way) and-- towards the end-- you add the wet chips to the coals to give a smoky flavor to the meat. I'm telling you, if you love to eat red meat-- this is to die for! 			<description>This is a very hearty stew. I got this recipe about 30 years ago from &amp;quot;Family Circle&amp;quot;. My son was 5 or 6 and would not eat many vegetables but liked this, so it was a keeper. He never noticed the okra in it. You can also substitue or add what you like to it easily. This makes a huge pot, so be ready to share or freeze some! I cook it on top of the stove in a dutch oven. I serve it with corn muffins and it is a meal. I hope other's enjoy it.

I think the best type of pan to use for this, is the bottom part of a broiler pan, but a 13x9 works fine too.  One final note - for some families, once box of the rice might be enough. The customer noted he is a first generation Hungarian-American, who for twenty years has been searching for a goulash recipe that even remotely resembled his beloved grandma's... &amp;amp; this is it. Not only does it reheat well, it actually tastes better the next day - another one for the brown bag wide mouth thermos. BTW - pork shoulder works fine too - just trim either of excess fat &amp;amp; shoot for a pound and a half of meat to cube. 			<description>Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking.  Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond &amp;quot;cheese&amp;quot;, skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! I have a group of friends (my pool buddies ... we play pool on Friday nights) they love these. Three (3) different dips, all unique served with my spicy chicken sticks (just chicken on a stick, but it is fun and never any left.  You can always cut down on the sauces but honestly, there usually isn't any left.  And what is left - I  can easily use in the next few dinners.  The herb vinaigrette is great over fresh fish, shrimp, scallops, or chicken.  The sundried tomato is awesome on a baguette with grilled chicken for an amazing sandwich; and the artichoke, over pasta for an easy side dish or even or some grilled salmon or grilled chicken breasts. Although the recipe calls for two chicken breasts, I took a shortcut and used ground turkey - it was still delicious! I also omitted the stock cube (too much salt!) and used italian bread crumbs instead.

This recipe is much, much easier with a food processor to get finely chopped ingredients that will incorporate nicely into these meatballs.

			<description>Got this from Epicurious.  Make sure to use flat soda.  Let the soda stand at room temperature for at least 4 hours or overnight, this is important because you will need to boil the soda.  The sauce can be prepared ahead of time (up to one week), cover and refrigerate. Bring to room temperature before using.  The ribs can also be prepared up to the baking step one day ahead, keep covered in foil packets and refrigerate.  Let stand at room temperature 1 hour before continuing with adding sauce. For the Dijon mustard with horseradish, since I couldn't find any, I just add about a teaspoon or two of horseradish to the Dijon mustard.

			<description>I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints.  While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,
