Beef & Pork Ragu Lasagne (Lasagna) from Fine Cooking

This is a PHENOMENAL recipe from Fine Cooking. I have made it for company and everyone raves over it. It's labor intensive but SO worth it. It either makes one huge pan or two smaller ones. I have found that making the ragu the night before makes the preparation a lot easier.

Two minor substitutions I have made: (1) I use the already prepared ground chuck and ground pork from the meat section of my grocery store. (2) I have always used either regular dried lasagna noodles or no-boil noodles. -- posted by CFRP

Chicken Cacciatore

This is out of the 2002 edition of KCTS Chefs cookbook. It was sent in by Executive Chef Chris Tess from Mama Stortini's Ristorante Restaurant. I decided to make this a 2 serving dish instead of 1 based on the calorie and fat count along with the huge restaurant amounts that are normally served. My only change was cutting the 8 oz chicken breast into 2-4 oz size. The rest of the ingredients stayed the same. -- posted by TeresaS

Lasagna Genoese Alla Carbone

This is my husband's Genoese grandmother's recipe for the filling for ravioli. However, if you don't have the time/skill to make "ravs," you can use it in stuffed shells or -- my favorite -- lasagna. Just use a sauce (homemade or store-bought) that contains basil for that true Genoese flavor! -- posted by L'ecole

Homemade Manicotti

I found this recipe in Rachael Ray's magazine and made it my own. As a kid, crepes (palachinche) in my house was a dessert filled with jelly, rolled like a cigar and eaten before my mother can put them on the table. So I thought it was cool that they were incorporated into this dish. I have to say, I willl never use store bought manicotti for this dish! -- posted by Ingrid Nicolich-Obregon

The Ultimate Stromboli

This is the best stromboli recipe I have ever used. It is my brother's recipe and once you try it, you'll see what I mean - your guests and family will rave! You will need to find an Italian deli to get the ingredients. Try it as written the first time and then later you can make changes if you want to make a simpler version. I use 2 pizza dough balls, but I couldn't get the site to accept that wording, so it says one. Knead the two together by hand for a couple of minutes & you should have the right amount of dough. My directions make it sound complicated, but basically, you just roll out the dough, layer everything in columns, roll it up and bake it. -- posted by Pesto lover

Ma's Spaghetti Sauce

Slightly sweet sauce that my mom has been making for as long as I can remember. The story goes that one of my uncle's got the recipe from a fireman he worked with at the fire house.
Approximately Aurelio's Pizza and Pasta Sauce

Aurelio's sauce has been a family secret since Joe Aurelio opened his first restaurant in Homewood, Illinois, in 1959. Some people call the sauce sweet, but I would describe it as mild and tomatoey. There is some controversy over whether the sauce actually contains beer or not. This is the recipe we have found to be closest to the original. If you don't wish to use beer, a little malt extract will add the same flavor.
Thanks to HandsomeG and Gaga at pizzamaking.com for some clues that led me to create this recipe. -- posted by Chocolatl

Lynne's Chicken Marsala

I went to Italian cooking class and was taught how to make this dish. I use chicken tenders to make it quick and easy. If you use chicken breasts, take the time to pound the breasts flat. Of course, veal can be substituted for chicken, I have never made it because of the cost of the veal. Also, I buy the sliced mushrooms to make it quicker. -- posted by WorkingMom2three

Arugula Salad With Fennel, Oranges and Pecorino Romano

This sophisticated salad features fresh and vibrant flavors. Although it is quick and simple to make, it is elegant when plated artistically and perfectly worthy of a dinner party of a Valentine's Day dinner. Ironically, I grew up in an Italian household and we enjoyed orange slices drizzled with olive oil and a grinding of black pepper, as well as fennel dipped in oil and pepper, so these flavors seem normal and well balanced to my palate! -- posted by Cookin'Diva

Mamma Mia! Fresh Italian Eggplant Parmigiano!

This is my recipe for eggplant parmigiano, and if I do say so myself, it's to die for! That is, if you like eggplant to begin with! Everybody in my family loves eggplant, and frankly, there is no better way to serve it than this way. The fresh Italian sauce is wonderful -- I use traditional, Old-World ingredients like red wine, fresh herbs and cheese, except I prefer not to simmer it over one hour, to preserve that great fresh flavor.
Greek Tiramisu

You can't make authentic tiramisu without using mascarpone. However, I found a way to cut calories and fat without sacrificing taste by substituting nonfat Greek style yogurt for the heavy cream in most recipes. It gives a rich texture, subtle tang and the extra protein is a bonus! I used a round 8" souffle dish but if you use a square pan, you might need a few more ladyfingers. This is very quick to make but you have to be patient with the chilling time. If I make it late in the evening, I am not tempted to eat it until the next day! -- posted by StickyToffee

Mamma Mia! Fresh Italian Lasagne!

This is my recipe for vegetarian lasagne... and it's as decadent as it is delicious! Yes, it's a bit time-consuming to make -- and I don't care. I love the quality results, and that's what matters the most for me and my family. I recommend you make this when you really have the time to make it right... and reap the wonderful rewards! The fresh Italian sauce is superb. I use traditional, Old-World ingredients like red wine, fresh herbs and cheese, except I prefer not to simmer it over one hour, to preserve that great fresh flavor. Like my other "Mamma Mia!" recipes, this mouthwatering Italian dish is sure to be a favorite at your family table. -- posted by Bazaar®

Best Ever Red & White Sauce Lasagna

Crock-Pot Ricotta

Make your own ricotta cheese in your crockpot! The acid you choose will affect the final flavor. Apple cider vinegar will give a sharper tang, a distinct odor, and a subtle golden color; this is probably best for savory applications. Lemon juice will give a subtler flavor and will not curdle as abruptly. For the cleanest, purest flavor, use distilled white vinegar. If you don't like or can't find the goat's milk, you can sub another quart of low-fat cow's milk. -- posted by DrGaellon
