			<title>Big Batch Dulce De Leche</title>

			<description>I love this recipe because you can prepare several cans of dulce de leche at once and they keep for months in the cupboard ready to use at a moment's notice.  Also there is no stirring while it's cooking.  The first time I made it I admit I was nervous boiling unopened cans of sweetened condensed milk but it worked perfectly but BE SURE TO KEEP THE WATER LEVEL WELL ABOVE THE CANS while they are simmering for 3 hours. I make mine in a metal, 9&amp;quot; pie plate. Keep an eye on the pie in the oven, as temperatures in your oven may vary. I like to bake mine for 40 minutes on the middle rack, but I am baking at high elevation (5,000 feet). But if you are really, I mean REALLY, pressed for time, place a paper doily on the cake, sift confectioner's sugar over it, lift carefully and there you have it.  And this is sooo much better than a cake mix.  I use an 8&amp;quot; square scalloped pan; that makes it look really special.  Nawww, that's not cheating. 			<description>No double boiler needed! Use it for icing or filling a cake, or to make truffles. Recipes vary slightly so I wanted to post my go-to ganache so I can find it every time. And you can easily double or triple this one. My basic ganache uses a 2:1 ratio of dark chocolate to heavy cream, 3:1 ratio of white chocolate to heavy cream, somewhere in between for milk chocolate. Those measurements don't translate perfectly in a measuring cup so the 2:1 ratio is below (most common) The better the chocolate the richer the ganache. I love mixing semi-sweet with bittersweet. At room temperature it's a perfect truffle consistency. It can be flavored with extracts or liquers. Hazelnut extract makes it so yummy! 			<description>This recipe came from my sister in law. Thanks Steph!   When I made pie crust they  either turned out dry, rubbery, or too mushy.  This one is ALWAYS flaky and golden brown.  It is great for a  pie that needs to be baked in the shell, a cream pie that needs a pre-baked shell, or I also use it for my homemade chicken pot pie.  Ummm.  You just can't beat it!    (Don't let adding the vinegar throw you.  I  bet having it curdle the milk is the key to the flakiness of this incredible crust.)  With any leftover dough you do not need, roll it out and bake it with cinnamon and sugar.  It is so good.   You may need to cover the edges toward the end of baking, so keep an eye on it. 			<description>Classic comfort food. I remember making these in home ec back in the day. God I hated junior high and would never want to relive that torture: but those cookies were good! That good to make me want to remember it. And we didn't keep Bisquick in my house so it was an especially great delight for me. Makes about 16-24 cookies depending on how big you make them. They may not taste as fine as pure from scratch cookies, but they still taste good and are a time-tested kid pleaser. Can sub vegetable oil or shortening for the butter but the butter tastes better.
