			<title>Menma - Braised Bamboo Shoots for Ramen Topping</title>

			<description>I normally make this using whole refrigerated bamboo shoot that I can purchase in Japanese market nearby in California.  If  whole bamboo shoot is used, cut lengthwise into about 1/4 in slices first.  Then  cut into 1/4 inch slices.  Finally cut the 1/4 inch slices into half.  The slices do not need to be perfect - they will taste great when finished. You can also use canned bamboo as well (although taste will be not as good as the fresh version).   Menma is granddaddy of one of ramen toppings.  In old days if you ordered ramen in Tokyo this was always one of the toppings along with shoyu or soy sauce flavored soup. You can purchase this in a bottle commercially but the cost is quite high for a small bottle.   I like to sometimes serve this as a snack for beer, white wine or sake. 			<description>This recipe was from Family Circle Magazine Dec. 2009. It was considered to be a healthy recipe choice for those having parties with lots of food and drink. I made them for a meeting and they were a hit. I think you have to serve them with other things because despite being healthy they are a bit rich. I like them as a great alternative to the usual cheese ball. The nuts give it crunch and the two cheeses with the three fruits was very unique. This is not for someone who doesn't like cheese though. Perfect for the holidays, New Year's parties or anytime you need a no cook appetizer.

It is best served warm so keep it covered, even better covered with warmed cloth napkins. This recipe does not do well reheated as it dries out in the oven or gets mushy in the micro. Please use &amp;quot;bacon bits&amp;quot; or the cheap version. Real bacon lacks the salty crunchy flavor that the bacon bits have. I have tried all the versions of brand name and non for the ingredients and really it doesn't matter so this can be a cheap appetizer if you need it.
