The tomatoes are gently poached with all the seasonings until a thick puree or butter is obtained; the tomato butter is then cooled and you are left with a wondrous sandwich filling, bursting with flavour and colour! The butter can be used for all manner of things, including a topping for a pizza or for toasted sandwiches. Use fresh bread, white or wholemeal, and garnish with fresh tarragon leaves. Any excess butter can be stored in an airtight container for up to a week in the fridge. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own. 			<description>This is another custom twist on a recipe from my favorite cookbook.  The original recipe is for Sopa de Elote, a sweet corn soup from Central America.  I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor.  You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever. 			<description>Take two frustrating attempts to make a different stuffed green pepper soup and a wonderful blizzardy day and you end up with a soup that mirrors a stuffed green pepper, exactly! There's nothing like dogged determination and lots of time to get something right. I wanted a  rich sweet pepper soup that had the delicate flavour of tomatoes and the ability to bite into a meat/rice mixture, just like a real stuffed pepper. This recipe is two parts: first, the Porcupine Meatballs, which can be made a day or two ahead. Then, the Tri-Colour Pepper Soup, which is a stand alone soup that I've been making, and enjoying, for years. 

If you enjoy a lot of meat, you might want to double the meatball recipe; for our tastes, this is perfect, with 4-5 meatballs served in each bowl. The taste of this soup is quintessential 1950's style Stuffed Green Peppers. If you can tolerate more heat, then jazz it up to your hearts content! This way, you won't find the recipe &amp;quot;too bland&amp;quot;, which is how we like it---pure comfort food straight from Leave It To Beaver. 

Enjoy the meatballs or enjoy the pepper soup, or, enjoy them blended together for the best of all worlds with this stuffed pepper soup! The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes.  We thought it tasted a bit like sushi and loved it!  Feel free to add more heat, but this had enough for our family as we've got wee ones.
