			<description>This recipe is entirely my own. I created it last year to use up the trim (backs, tails, fins, cheeks, etc.) from two very large Copper River King salmons. It's a very Northwest chowder, and has received raves from everyone who has tasted it. It also makes a LOT of chowder; you will have leftovers for days, or enough to feed a party. Tips: You will need two heavy 8-quart or larger stockpots for this, unless you have a heavy one at least 16-20 quarts in size. I recommend allowing one day to cook the stock and one day to make the chowder rather than trying to do it all at once, because long, slow simmering really brings out all the flavors here. An oloroso sherry may be substituted for the Madeira. The butter may be omitted and skim or low-fat milk substituted for the half and half if you want a lower-fat version. Do not defat the stock. The stock fat is rich in beneficial Omega-3s and much of the taste of the chowder depends on the oiliness and flavor unique to Copper River King salmon. If using other wild fish, defat the stock or not as you prefer. I strongly recommend using only wild fish for this recipe. You may be able to obtain salmon trim at no charge if you live on the West Coast of the U.S. and know a fishmonger. Kids love the taste, even though it contains lots of fish. We've tried it on a three-year-old and a six-year-old. Don't be daunted by the number of ingredients, the number of steps, or the fact that it takes two days to make this. Thanks to my friend Catherine for this wonderful recipe.  This template won't allow, but I use a generous sprinkling of Old Bay, lemon pepper and some seasoning salt to season the fillets.  
Bread bowls make an elegant option.  Sometimes we use hard dinner rolls as the bowls.  They are smaller, so our children can eat the whole thing.  Hollow out the dinner rolls and bake for a few minutes until beginning to toast.  Place the rolls in a muffin tin and fill with soup. 			<description>For the most part, we live low-carb; I miss chowders and have found that thickening the soup with pureed cauliflower and neufchatel cheese makes a great chowder. This is an easy soup to make; use either fresh cooked salmon, leftovers, canned, or a combination of them. The amount certainly can vary according to what you have. This method includes poaching fresh salmon with the vegetables. If you like, you can substitute carrot for the red pepper. We had a salad of mixed greens with all their pretty colors &amp;amp; raspberry vinaigrette and cut-up fresh fruit which was absolutely so sweet and everything she put in there was beautiful - she had cantaloupe, honeydew, pineapple, banana's, kiwi's, raspberries, blueberries, blackberries, strawberries and I don't know what else - it was delicious tasting and looking!! 			<description>A delicious, smooth creamy soup with no cream, full of flavour and really easy to make. I make with milk and butter, but can be done with fish stock and oil if you want to avoid dairy (I've not tried, so cannot comment on comparative taste).

Essentially a white onion sauce, with salmon added and blitzed up for a smooth, tasty soup. Using salmon trimmings makes this very cheap too but nothing to stop you using more expensive cuts if you so wish. Scales up very easily to make a large batch for a family get together, and goes down VERY WELL with some fresh bread. Hubby now insists that I make this every weekend as his Saturday lunchtime treat! 			<description>I found this recipe in the February 2009 issue of Better Homes and Gardens.  It looks really good - maybe an alternative to chili sometime.  I haven't made it yet, but am putting it here until I can.  You can use salmon fillets with skin, just bake them skin side down, then leave the skin on the baking pan, using only the meat.
