			<description>This is my grandmother's recipe, but it was originally meant as a way to serve up fresh dove when it was in season.  Since I live in the city, and there isn't a lot of opportunity for dove hunting, I substitute chicken.  I find that bone in chicken pieces work best because they don't dry out the way boneless pieces will. This is my idea of ultimate comfort food. 			<description>I grew up eating a Filipino version of Congee called &amp;quot;Arroz Caldo&amp;quot;. My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy! Although it is traditionally served as a side dish for any type of meat I usually eat it all by itself as a meal.  I just season it with black pepper and red pepper and find that it doesn't need any additional salt.  The soups are salty and I use salted butter so no need to add more. She included a note that this was to become 'the family dinners rice custard pudding bowl' as everyone requested that I make it for all our gatherings!  For a creamier custard pudding, use Aborio rice or a medium grain rice; I prefer the short Aborio rice.  Never use instant rice.

			<description>This is my basic rice recipe.  I like it because I can throw whatever's in the cupboard in or just make it with onion.
You can add about a 1/4 cup of any kind of veggie you like to the onions when you saut&amp;eacute; them to add flavor.  Ive added mushrooms, carrots, broccoli, bell peppers et cetera to the onions.   It can be made with cheese or without.  I like to use Parmesan but have used cheddar, provolone, or mozzarella in a pinch.  I find its creamy even without any cheese.   Careful not to over salt, youll ruin it.
