Accidentally the Best Baked Chicken Nuggets Ever

Accidentally discovered this while playing around with Chinese restaurant classics. My nugget-expert daughter loved them. I use the marinade from http://www.recipezaar.com/Sweet-and-Sour-Pork-43587 (minus the extra salt) and the flouring and baking technique from http://www.recipezaar.com/Baked-Lemon-Chicken-With-Chinese-Lemon-Sauce-194890. The chicken works great with either sauce but my picky kid just loved the chicken by itself. Infact she liked it so much I had to post the recipe. All measurements are approximate; vary the spices based upon your own taste. -- posted by Jes32

Chicken Taco Soup

This recipe is so easy and so good. It's become one of my favorite soups. In the prep time I didn't count the time it takes to cook and dice the chicken because you can either use cooked chicken that's already been diced for you or you can cook it and dice it yourself. I usually use about three chicken breasts. -- posted by Chef # 8654321

Buffalo Chicken Wing Dip

a great way to enjoy chicken wings without the mess. great served with celery or tortilla chips for dipping. I like to use a crock pot to keep this dip warm during parties, just mix everything up on the stove than transfer to the crock pot or you can use a electric fondue pot on warm too. If you don't want to use those then separate into small batches in oven safe dishes so you can keep the dip warm. Not sure where the recipe came from, everyone I know has their own spin for it. -- posted by Chef ChristinaMac

The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.

Teochew Fried Chicken

This recipe is from my late grandmother, who passed it down to my mother. And since my mother eyes the ingredients, I never quite got the exact amounts that would make it as perfect as my mother's. Used to make this all the time in college in large batches, reheating it in a toaster oven and serving it with a salad or white rice for a quick dinner during the week. Should've written down the amounts I had put in, but never got around to it - please post the amounts that work for you. I used to add MSG (labeled Accent), but stopped using it - didn't see a difference in taste.
Chicken Salad

An easy throw together chicken salad that has the right amount of crunch from the fresh vegetables. Great for brunches, wedding/baby showers, or any picnic & get togethers. This salad goes great with Whole Wheat Ritz crackers or on toasted Rye bread! Chicken can be left chunky if preparer would prefer it that way. I feel the chicken stays better on the cracker/toasted bread if ground up a little bit. Can be served after chilling for a few hours or made a day ahead and chilled over night. -- posted by Mrs. Kristin

Chicken Pumpkin Chili

I found a similar recipe on another site, but am really curious as to nutrition values as I make this ALL the time. Its a little different every time I make it, but i'll post the most usual recipe. I portion it out and freeze the leftovers .. makes for delish lunch or quick dinner! Can really make it your own, and honestly you cannot taste the pumpkin. ( I made this for my mom and her beau, who turns his nose up at anything healthy, and he LOVED it!)

I usually use 1 lb of ground chicken breast, but today I made it with 1.5lbs of shredded chicken. I have to say, I LOVE it with the shredded chicken. would make a great sandwich!

When done, top with some fat free greek yogurt and salsa! YUM! serve over brown rice or with bread! -- posted by Chef #810882

Cream of Chicken Enchiladas

This is a great recipe that a friend of mine has been bringing to office pot-lucks for years. I just got the recipe from him and made it myself. It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste. This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT). To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.

For potlucks or freezing, double or triple this recipe. -- posted by Chef #1534395

I make it in a 12 quart roaster oven.

Steamed Taiwanese Meatloaf

Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey. Kids love this recipe - it goes well over rice. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time. To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. So I normally just make it using water and skipping the chicken bouillon altogether. -- posted by Fluffkins

Corn Chowder With Chicken & Bacon

This is another custom twist on a recipe from my favorite cookbook. The original recipe is for Sopa de Elote, a sweet corn soup from Central America. I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor. You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever. I suggest garnishing with a tortilla strips, a shredded Mexican cheese blend, or even sour cream -- posted by Chef #1534395

Honey Mustard Baked Chicken

I found this in a Cookshelf: Chicken cookbook, and tried it, because my hubby loves honey mustard so much. It was a hit! The sauce it actually for 8 pieces of chicken, but we liked extra drizzled on top of the chicken after it came out, so it worked out better for 4 pieces. So if you don't want extra sauce on it in the end, go for 8 pieces of chicken. -- posted by Miss JJ
