Cook's Illustrated Scalloped Potatoes With Thyme and Bay

This is a great recipe for scalloped potatoes. It is so easy! It takes less than 1/2 hour to bake and have on table! The potatoe slices are cooked in the broth and cream mixture on top of stove which helps cut down on cooking time in oven. I have used a mixture of Asiago cheese and sharp cheddar cheese and it was fantastic! You could also use Havarti or any other kind of cheese you like!!!!! Excellent recipe! -- posted by buzzsau

Dehydrator Potato Soup

This soup is creamy and thick and the flavor actually improves if allowed to stand a few hours before serving. Very the herbs as your supply or inclinations allow. Small pieces of dried jerky or bacon bits are very good added to it, too. With a salad, it makes a pleasing simple lunch or supper, particularly on a chilly day. The recipe doubles nicely too.
Adapted from the "Mary Bell's Complete Dehydrator Cookbook".
Prep time does NOT include dehydrator drying time. -- posted by TxGriffLover

Kadhi Pakora / Pakoras

At the local Indian market, they have a small, vegetarian "cafeteria-style" lunch/dinner counter that we go to as often as we're able. One of my favorite dishes there is a yogurt curry with pakoras swimming in it. Pakoras are a snack made with, in this case, veggies dredged in a chickpea (besan) flour batter and then deep fried. I've been on the hunt for a good kadhi pakora recipe and found this keeper. Just don't use thick, Greek style yogurt like I did; you want more of a soupy consistency rather than what my photo shows. You can vary the veggies you use here. Try onion strips, spinach and even paneer, Indian cheese. Adapted from a recipe at http://www.indianfoodsite.com/. Enjoy! -- posted by Sandi (From CA)

Lobster Stuffed Potato

I got this recipe from a chef who taught a gourmet cooking class many years ago. The recipe is from the award winning restaurant "Windows on The Water" which is in Kennebunkport, Maine, not far from President Bush's family compound. I'm sure you could substitute the lobster meat with imitation crab or lobster. Lobster meat is very expensive; around $23.00 per pound. -- posted by Mainely Debbie

Red Pepper Vichyssoise

This is a lovely soup to serve in the summertime, as it is served chilled. If you prefer, you can substitute sour cream for the creme fraiche. To make creme fraiche, just combine 1 cup of whipping cream with 2 tbsp of buttermilk. Once combined, cover and let stand at room temperature for 8 hours. This will make a cup of creme fraiche.
Monday Supper! Curried Lamb and Chutney Rissoles/Patties

A tasty and different way to use some of the Sunday Roast leftovers on Monday! Although I have specified lamb in this recipe, beef would also work very well, it's just that I had roast lamb leftovers when I made these. These rissoles are lightly spiced and tangy - perfect for supper when served with salad, pickles, chutneys and maybe a naan bread or pitta bread to make a sandwich. They are easily made and can be prepared ahead of time and left in the fridge, as they hold their shape better when they have been chilled and are firm. These will also freeze very well; open freeze them before frying on a tray or plate until firm and then pack them into freezer bags or a plastic container. They only need about 6 hours to defrost and then are cooked as instructed below.Use curry powder to taste, I use 2 teaspoons as I like mine quite spicy! -- posted by French Tart

My Spiced Butternut Squash, Sweet Potato, Carrot and Orange Soup

This was inspired by my other butternut squash soup recipe (#402703). The orange flavoring is optional. I use pre-cut, cubed squash when I can find it. You can also use a small fresh butternut squash. (The prep time assumes you are using pre-cut squash.) I use almond milk in this recipe (I like Almond Breeze) instead of cream or half and half. You can save a little time by roughly chopping the onion and garlic, because the soup will be pureed later. I do chop the ginger rather finely because it is so fibrous, and I don't want lumps in the soup that didn't get pureed. -- posted by coconutty

Best Lima Bean Soup - Especially Wintertime!

Wintertime soups and stews . . . nothing better! This recipe will give you a rib-sticking flavorful soup that everyone can tweak as much as desired to satisfy his or her own tastebuds. For those not partial to the taste of lima beans, be aware that this soup barely carries a hint of lima bean flavor, as the lima beans serve merely as the staple for this wonderful dish.
Cauliflower and Potato Gratin (Russ Parsons)

A simple, satisfying vegetarian recipe than can be served as a holiday side dish or a or as a main the rest of the year. Do be sure to cook the cauliflower well to mellow the flavor. And make the white sauce a little thicker than you might think appropriate -- the cauliflower and potatoes will both give off some moisture while they bake.

Grandma's Cream of Potato or Broccoli Soup

When I was a little girl, cold winter nights at my grandmothers always called for her wonderful potato soup. She would serve it with fresh hot cornbread or home made yeast rolls and it warmed you all the way to your toes. It always brings back memories of a wonderful woman who was a great influence in my life. I still miss her. Sometime she would add fresh broccoli, and it was also great. I misplaced this recipe once and searched the web over never finding another even close. Thankfully, I had given a copy to a friend and was able to get it back. -- posted by Chef #831701

Supreme Potato Cakes

My family love potato croquettes, I always purchased them from the store, but Alas! A few months ago bought frozen potato croquettes vanished out of the store.
When I enquired, I was told that they were taken off the market.
I decide to make my own and came up with this recipe.
I find it’s best to prepare the potatoes the day before then leave them in the refrigerator until the next day.
The following day put them into the egg then flour then fry them.
Cooling in the freezer on the day of preparation cuts the preparation time in half
I serve these potato cakes with Salmon, kingklip, hake, prawns or soles, coleslaw and a large green salad.
Best of all my family love these potato cakes. -- posted by JeanineD 2

This soup does not have cream or milk in it like many of the ones I have seen. I got it off the internet many years ago. The recipe is credited to the Dinner Co-op. And very simple to make. I think it could also easily be converted to a slow cooker recipe.
I hope to try this recipe soon. It interested me because it has a vinaigrette dressing with Dijon-style mustard, which I love. This can be roasted or grilled.
Red Kubbeh Soup

Kubbeh is a small pocket of dough that is stuffed with ground beef. Kubbeh for soup is usually boiled, whereas Kubbeh served on a platter is fried. Grocery stores in Israel and increasingly in the United States offer frozen packages of Kubbeh that are ready to drop into a vegetable soup. Enjoy this traditional recipe for kosher Kubbeh Soup, or Marak Kubbeh in Hebrew.

I found MirJ has a great Kubbeh recipe, Recipe #26755 or you can use frozen store bought kubbeh.

Herbed Country Breakfast Potatoes

These are the country breakfast potatoes I cooked at a restaurant I once worked, which were served on weekends for brunch. They are easy to make, and may be prepared with or without tri-color bell peppers -- and of course they are delicious, with aromatic fresh herbs. I've tried making them with dried herbs, but there's just no beating the flavor of fresh rosemary and thyme (you can even sneak a little fresh sage in there too, if you've got it). Enjoy these hearty breakfast potatoes with your favorite eggs or omelet, or serve them the way I do (yes it may seem strange)... topped with my Recipe #363705 sauce!
