Incredible Lasagne

I'm not sure where I picked up this recipe but it is one of my favourite lasagne recipes. I would even dare to say that it might actually beat my mom's recipe in a taste test! My spouse said that it is his favourite recipe in my collection and often suggests it for dinner parties.
Lucas's Dairy Free Lasagna

I created this recipe as a way of getting my 2 year old grandson to eat meat (which he is reluctant to chew) and get some iron into this diet. He is allergic to wheat products, dairy and tomatoes. This recipe is easy to make and tastes delicious. I make it in a dish about half the size of a normal lasanga dish. When cold, I cut the lasagna into 8 servings, wrap in cling-wrap and freeze. -- posted by Kiwi Kathy

Spaghetti Sauce

Again a recipe I grew up with. It is the only spaghetti my hubby will touch and works well as the sauce in lasagna.
Lynda's Spaghetti Sauce

My husband married me on the condition that I never buy a jar of spaghetti sauce and that I ALWAYS use his mother's recipe. No complaints here!
(I pretty much never let it simmer a full hour, so I can't tell you if it actually needs to simmer that long, but I think 20 minutes cooking time is plenty.) -- posted by April Wholikesitez

Sweet Somen Noodles

I add this to the somen noodles I serve my Taiwanese Spaghetti recipe with for a little extra sweetness. Found this recipe off the internet from someone who would eat the somen noodles made this way alone (kind of bland in my opinion, but you can eat it that way, too).
Won Tons for Soup - Vegetarian

A vegan adaptation of a Cantonese-American favorite. Not hard to make but takes some time to stuff the wontons.

Serve the wontons in a mild, low sodium vegetable broth (chicken flavor if possible).

You can double or triple the wontons recipe, lay them out on a cookie sheet, and freeze them, then bag them and take them out to make soup in small quantities. The frozen wontons only take 1 or 2 minutes longer to cook than the fresh. -- posted by Shazzypupp

Hearty Mac & Cheese

This was adapted from an Ellie Krieger recipe. I made a few of my own tweaks. A friend of mine challenged me to find a mac & cheese recipe that wouldn’t leave us feeling like we ate our entire body weight in fattening dairy. I know it sounds strange to use squash as the base for the cheese sauce, but it actually worked. The dish doesn’t taste like squash. It’s nice and creamy with a crispy, browned top. If you’re looking for a light alternative to many people’s favorite comfort food, give this a try. -- posted by Diet It Up

A Better Marzetti

Had never heard of Johnny Marzetti until recently stumbling on his recipe in some newspaper website. Actually, research shows Marzetti's Restaurant in Columbus, Ohio was the source of this great comfort food dish back in the 20's (..is it still there?). Have seen ingredients of several versions of this dish here, but none with all these great ingredients. This is an ultimate comfort food that is even better at the second and third sitting. I think that the sausage and Italian cheese blend is key to success of this rendition. Dish is great with a nice green salad. -- posted by ebbtide

Super Quick Tomato Basil Cream Pasta (Vegan!!)

I made this tonight and it is super delicious!! I found this recipe on veganyumyum.com and here is her description: "When it’s summer, I can’t get enough of recipes that use up fresh tomatoes and basil. But no matter what time of year, I’m always down with quick recipes. You can make this sauce in the time it takes to boil the pasta. My whole wheat pasta cooks in 9 minutes, so this simple sauce makes a 9 minute summer meal that’s hard to beat." -- posted by SPrins

Spaghetti Alla Puttanesca, Italian Style

I first was introduced to this recipe when I was reading the book, "Belong to Me", when the main character "would have sold her soul" for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! Italians customarily do not use cheese in this dish; the cheese overwhelms the sauce and makes the anchovies more pronounced, unbalancing all the delicate flavours you just worked so hard to create. -- posted by The_Swedish_Chef

Cincinnati Style Chili

I have always loved Skyline Chili. I'm not from Cincinnati, but have been there. This is a combination of recipes I used to make one that has worked for me. I made it for the big superbowl party my family has every year. They loved it! I've never made it from scratch before because I didn't know what all was in the sauce. I had always used sauce packets from the grocery store. When the store was out, I had to come up with another solution. I love to cook and experiment. So...this is what I came up with.
