Easy Thai Satay Appy (Beef or Chicken)

I find that RZ has made me much more aware of simple recipe opportunities, esp those found right on the cans of products. I guess you expect them to be so commonly used that you discount them at once. Here is the easiest recipe I have ever seen for satay (beef or chicken). All you really have to do is open a can. I love an easy prep, so this caught my eye. (Time does not include time for skewers to soak or satays to marinate) -- posted by twissis

Cochinita Pibil

This is a Mayan recipe for an incredibly delicious "pulled pork" for tacos. We make this at the restaurant I work at, Ciudad D.F. in Dallas, but I actually like this recipe better. It comes from 'Tacos' The Santa Fe School of Cooking Series cookbook.
Achiote paste and Banana leaves can be found in your local Hispanic Market. Trust me on this the Habaneroes only add flavor, there is no heat at all. If you want it spicy add more and leave the seeds in. Roasting them first also adds more spice. -- posted by Lust

Chicken Skewers With Zathar (Thyme and Sesame Marinade)

This recipe comes from ‘Barbecue, delicious recipes for outdoor cooking’ by Louise Pickford. I'm often want to use thyme as I adore the smell. I thought this amount of thyme will make the recipe pungent but it actually taste yummy marinated with the chicken then barbecued and the flavour is strong but not overpowering. Time does not include Marinating time Update: I have had a few questions regarding the thyme leaves: use the leaves only for measurements (don't include steams) measure the leaves after it has been removed from the steams. -- posted by Chef floWer

Tapas Style Spanish Rioja Marinated Chorizo Sausage

A deliciously simple and yet very tasty Spanish Tapas dish. The beauty of this recipe is that is steeps in the wine for 24 hours - making it very easy to plan ahead. Serve in an an attractive earthenware dish and sprinkle with chopped flat leaf parsley. I like to skewer these with toothpicks, to make it easier and less messy to eat! Do try to use very high quality Spanish Chorizo sausage - the cheaper types do not taste nearly as good, and contain a very high fat content. -- posted by French Tart

Andalucian Pinchitos Morunos - Moorish Saffron Meat Skewers

Pinchitos Morunos (Moorish Skewers) are extremely popular as a Tapa, partuclarly in Andalucia. They are of Moorish origin, and are usually made from Lamb or Pork, I have used Chicken as the meat in this recipe, but I have listed other options! They are marinated in a Moorish saffron & spice mix and usually grilled outside and over charcoal or wood; however, they also cook beautifully on a griddle or in a heavy griddle type pan inside, during the cooler months. These are my favourite meat skewers and make a regular appearance on the "Al Fresco Lunch Table" during the Summer months. Great finger food for friends - or you can increase the quantities and make a meal of them. Serve them with a simple Tomato & Parsley Salad with my Sherry Vinegar Dressing, Flatbreads & Pickles for a true taste of Spain! -- posted by French Tart

Chicken Spiedies

Originally Italian, these kebobs are popular in the Binghamton/Rochester/Syracuse/Elmira, NY area. They are great for tailgate parties!! Other options for meat are lamb, pork, beef, and vension. If you use pork, use tenderloin. If you use beef, use a more tender cut so it doesn't come out too tough. Veal, especially, may come out tough unless left to marinate for three or four days. Mixing two or more meats is very tasty also.

NOTE: This is a tangy sauce, actually a vinaigrette. It will marinate anywhere from 1 to 3 pounds of meat. -- posted by poo235

Spiced Potatoes on the Grill

Need a side for the BBQ ribs on a day too hot to cook in the kitchen? A little olive oil makes these heart-friendly potatoes brown up like french fries. They are flavorful rather than hot but if you like hot add some red pepper flakes. Consider serving a little sour cream on the side for dipping. Note: seasoning mix makes enough for 2 batches. The proportions worked out better for the larger batch. -- posted by 3KillerBs

Fajitas - Arrachera - Grilled Skirt Steak

This is a dish taught to my dh and me by a dear friend who was born and raised in Mexico and who's father was from Central America. This is how his family has grilled skirt steak for years in Mexico. The ingredients may be updated a little to be a little more accessible to us in the USA but this is the same recipe and method used by his family for generations! (The soy sauce is a recent AND YUMMY addition) I even saw an Alton Brown show recently in which he used this same method! The hair dryer is a new generation update- in the 'old days' they just fanned the flames to rid the ashes. UPDATE: 9/2009 Due to a review that this was a little to sweet I have edited the recipe with that in mind. Please adjust the amount of onion and sweetness to your personal taste. Thanks Steph for the input! I do appreciate it! I always enjoy others opinions and ideas! -- posted by mama's kitchen

Garlic-Lime Chicken

The bright, fresh flavor of lime sparks up a simple chicken for the grill or the broiler. Too tasty to believe that its healthy! Removing the skin cuts the cholesterol. Adding a little heart-healthy olive oil preserves the juiciness. Its nice and quick too because, unlike many recipes of the sort, it does not require long marinating. -- posted by 3KillerBs

Oh. Yes. Indeed. This is, if I may say so, stunning. On the barbecue, the sugars in the corn caramelize into the sweetest delight you've ever introduced your teeth and tongue to. You know how you can create a sweeter --boiled-- corn on the cob by adding sugar to the water? You won't believe there's no sugar in this recipe. You can get a light caramelization or a more SERIOUS version, which I fell in love with. Now I can't help but imagine what kind of recipes "these cormz" could be a part of... -- posted by Sandi (From CA)

Blackened Corn Salad

I found this in Sam the Cooking Guys's cookbook called 'just a bunch of recipes'. I needed to use up a bounty of corn purchased at a farm stand. I tweaked it to our tastes, of course. The original recipe called for 1/2 to 1 tsp. of cayenne pepper (way too much for my husband's taste)_so I used 1/4 tsp. The original called for the juice of 1 lime, which I would have been happy to use but, I lacked a lime so I used 2 T. of bottled lime juice. Also, the original called for crumbled goat cheese but I used what I had on hand....a Mexican (Cacique) Cotija Queso Seca cheese that crumbles. I think you could use any crumbly type cheese but I would stay away from really strong flavored ones, such as blue or roquefort. The Cacique was perfect for our tastes, just right! I'm posting the recipe with my changes. Oh, also, if you don't like cilantro, please don't try this recipe because, in my taste buds, the fresh cilantro really makes this dish.

This is a wonderful, colorful side dish. My daughter said it looked like the Mexican flag! -- posted by Hey Jude

From Rachael Ray's Sept. '08 "Everyday" magazine, so you know it's savory and simple--all at once. Also, I used only 2 chicken breast halves (paillard-cut) for four of us and we had leftovers (our chickens are very large!), so adjust the recipe up or down accordingly. -- posted by Debber

My take on a "Greek-style" burger. I like to eat this on pita bread in place of a bun. I didn't add this in the directions, but I generally make these ahead of time and put them in the fridge for at least 1-2 hours before grilling.
Pop-Pop Potatoes

My Dad, Arel gets credit for these awesome spuds. He has made them for my boys since they were little, and they still request them in their teenage years at every visit. Super easy, and the kinds of potato, oil and spices can be changed to suit any preference, although this is the masters' blend. We love them best finished on the top rack of the grill when the steaks are on, and nice big Jersey tomatoes sliced on the side. -- posted by Chef #616952

Grilled Corn With Seasoned Butters

Fresh corn still in the husk takes wonderfully to grilling. Serve it with one or all of the seasoned butters here and a platter of ribs or chicken hot off the grill. Copied from www.williamssonoma.com [Adapted from Williams-Sonoma Complete Grilling Cookbook, Edited by Chuck Williams (Time-Life Books, 2001)].
Lemon and Thyme Sausage Kebabs

One of several budget-savvy, "sizzling sausages" recipes in the current issue of the Australian magazine 'New Idea'. This one food editor Barbara Northwood has costed at $A2.26 per serve. Vary the vegetables to meet your taste preferences and add some heat if that's what you like! If making this, I'd be inclined to increase the number of mushrooms and use onion slices in place of the corn which I've never been particularly fond of. -- posted by bluemoon downunder

Chorizo and Halloumi Skewers

A yummy-sounding recipe from the current issue of the Australian magazine 'super food ideas'. You'll need 8 pre-soaked wooden bamboo skewers. Feel free to vary the olives in this recipe. I haven't made these yet but I'd be inclined to use unpitted kalamata olives or perhaps half and half unpitted kalamata olives and the suggested pimento-stuffed green olives. I've suggested that these could be served at a picnic, if you were picnicking where there were BBQs. They could be made up to the end of step 1. For serving at a home BBQ, they could of course also be prepared to that stage and BBQd just before you are ready to serve them. -- posted by bluemoon downunder

Grilled Scallops With Mexican Corn Salad

Recipe by Nick Fauchald, From Pairing of the Day: June 2008, Beer vs Wine in F&W Magazine, June 2008 edition. In this spicy salad, plump grilled scallops sit on top of charred corn tossed with the ingredients in "elote", an irresistible Mexican corn-on-the-cob street snack. Faced with the spiciness here.:) Sam Calagione chose the refreshing Allagash White, a low-alcohol wheat beer that won't make the chile's heat taste harsh. Marnie Old zoomed in on the salad's smoky nuances and selected moderate oaky 2006 Alma Rosa Chardonnay, from California. She likes to pair oaky wines with grilled foods , she says "oak gives the same kinds of smoky flavors that grilling gives food." There is a 10 minute "standing" time to allow some flavors to marinate which I didn't include in the preparation time. -- posted by Manami

Sticky Grilled Drumsticks With Spicy/Sweet Plum Sauce

Food & Wine Magazine, August 2008 edition. From Pairing of the Day: August 2008, Great Chicken Recipes: Wings, Breasts, Drumsticks and Thighs. Grace Parisi prepares a wonderfully sticky and nicely sweet glaze of fresh plums and red pepper jelly to brush over drumsticks while grilling. Hot red pepper jelly makes for a spicier glaze, sweet pepper jelly creates a milder one. We opted for the milder one because we made it for the home but we made a batch of the spicier glaze for us and it was wonderful! This is a fantastic and tasty recipe for the grill and the summer.Suggested wine: Juicy Primitivo: 2006 . Serve with the drumsticks, corn on the cob with any of the outrageous butter recipes on zaar, a yummy mixed-greens salad with garbanzo beans, bacon, sesame seeds and a champagne vinaigrette, and then for dessert something chocolate and DECADENT! ;) -- posted by Manami

Cheese-Stuffed Potatoes/Yogurt-Spice/Sesame Seed Crust

If you want to study the art of meatless barbecue, India is the place to do it. So says Steve Raichlen in his Globe-Trotter Guide to BBQ.This nation of more than a billion people has more vegetarians than there are people in the USA. Over the centuries, Indian grill masters have evolved a higly sophisticated style of vegetarian barbecue - dishes bursting with flavor (not to mention dairy and grain proteins). Their grilling is so complex and satisfying, you'll never miss the meat! Tandoori "aloo" potato - turns up at grill parlors throughout northern India. The best Raichlen has ever tasted came from the landmark restaurant Moti Mahal in Delhi, the potatoes were packed with cheese, slathered with spice paste, and crusted with sesame seeds. What's not to like? If unable to find the yogurt for some reason, place regular yogurt in cheesecloth-lined strainer set over a large bowl. Cover and chill overnight to drain & voilá! Bon Appetit Magazine, July 2009 edition. There are cooling times that vary - depending on when you serve these wonderful potatoes.:) -- posted by Manami

If you can find oblong pretzel rolls at your market, they'll make an ideal accompaniment to these English-style hot dogs. -- posted by College Girl

Kalbi Short Ribs

Korean Barbecue Short Ribs. Otherwise known as ‘galbi’, ‘kelbi’ and even ‘kalby’. I used only honey skipping the white sugar that is normally used. But you can add white sugar (in addition to the honey) if you are not watching the 1/4 cup sugar intake. -- posted by ~Rita~

Grilled California Avocado Salad

Large avocados are recommended for this recipe. A large Haas avocado averages about 8 oz (here in Miami - our avocados have a tendency to be a bit larger). Adjust the the quantity accordingly. This is easy, tastes great, & has that WOW factor! It is an elegant first course that combines with baby greens, a spicy salsa and a delicious herbed goat cheese. Provided by the California Commission with a couple of tweaks. -- posted by Manami
