			<description>The canned goods make this rich chili so easy! Make sure you rinse the beans, corn, etc before you throw 'em in the pot. You can mix and match veggies and beans to suit your taste! This recipe serves about 5 or 6. The BBQ sauce and mustard are just little quirks I thought would taste good.

			<title>My Creamy Chicken &amp;amp; Cheese Enchiladas</title>

			<description>I know it looks like a lot of ingredients, and makes it look like it may be a pain in the rear-end to make, BUT it really is QUITE EASY TO MAKE--AND IT IS A DISH THE WHOLE FAMILY WILL ENJOY FROM THE YOUNGEST TO THE OLDEST.  I've even have served it to people that don't even like Mexican or Tex-Mex food but still enjoyed this dish.  Goes great to be served with Mexican rice (quick Mexican rice 2 cups minute rice, 2 cups boiling water, 1/4 cup frozen corn, 1/4 cup diced carrot, 1/8 cup diced onion, 1/4 cup salsa, 1 tsp. garlic, 1 tbsp. butter, 1 tsp. salt; once water is boiling mix in everything together turn off heat cover and let sit for 5 minutes and your done)and refried beans on the side.

NOTE:  I have a couple of friends that are VEGITARIAN and love this recipe the only thing they change is that they omit the chicken and use either 1 cube of imitation chicken bouillon or use 1 cube of vegetable bouillon. -- posted by &lt;a href="http://www.recipezaar.com/member/422172"&gt;Printessa&lt;/a&gt;</description>

			<description>This is a good old fashioned Oklatex chili recipe adapted to fit in with the BBQ genre so popular in that area.  It is a perfect item for a Combination BBQ/Chili cook off.  the addition od cocoa powder sounds strange to some, but is actually borrowed from French Cuisine, and adds a deeper dimension of beefy flavor.  We use red pepper flakes to adjust the heat, but any hot chili pepper flakes work well.  The recipe below is a mild version @ 1 tsp. of pepper flakes, our standard version uses1 1/2 Tbs., we have also made it with habaneros.  Of course, feel free to adjust it to your own personal liking.

			<description>I saw Rachael Ray make this on her show and I thought it looked delicious.  I made it tonight and it was OUTSTANDING.  The jalapenos definitely add a lot of spice to the cheese sauce, so if you have little ones you may want to remove some of the sauce and keep it separate for them before you add the peppers.  The only change I made is that I added 2 cans of drained pinto beans. 			<description>This is a dish taught to my dh and me by a dear friend who was born and raised in Mexico and who's father was from Central America. This is how his family has grilled skirt steak for years in Mexico. The ingredients may be updated a little to be a little more accessible to us in the USA but this is the same recipe and method used by his family for generations! (The soy sauce is a recent AND YUMMY addition) I even saw an Alton Brown show recently in which he used this same method! The hair dryer is a new generation update- in the 'old days' they just fanned the flames to rid the ashes. UPDATE: 9/2009 Due to a review that this was a little to sweet I have edited the recipe with that in mind. Please adjust the amount of onion and sweetness to your personal taste. This is so addictive, my husband and I have literal started combing the city of Houston to find stores that carry candied jalapenos.  It is a seasonal item, apparently, more plentiful during the holidays - but always available online! :)  Just a word of warning, if you are bringing it to a party, make two (one to leave at home) and bring jars of the candied jalapenos, because everyone will want the recipe, and you might as well help their addiction along. No. 28, is a popular L.A. restaurant  located in an historic building, which was constructed in 1912 as a Los Angeles Fire Department firehouse, which housed 2 engine companies.  In 1912 LA's population was 400,000;  and New Mexico and Arizona were being admitted into the Union.   A trip to the restaurant, established in the 1980's  has been called a &amp;quot;a big hug from America&amp;quot;;  it serves American favorites and some history.  Some cooking notes:  although you can use canned beans equalling 4 cups,  the restaurant  uses dried beans starting with a one pound package which will yield about 4 cups of cooked beans.  This chili is best when made one day in advance.  The flavors develop better.  When reheating, add water if necessary and heat slowly to avoid scorching. This recipe is for one pack, but we usually double it since I use it for taco salads, while my husband throws it in a tortilla for a snack.  IF YOU DON'T LIKE SPICY....change out the Rotel's variety to the the mild or the Mexican (tomatoes, lime, and cilantro) style.  This is a basic recipe, so play with the spices and the Rotels for the taste you like.
