Mom's Fish Chowder

Very rich, flavorful classic New England fish stew. You can use a variety of fish, including shellfish. It is best to avoid using exclusively oily fish, like mackerel or bluefish, but they are fine as part of a medley. It is also best to use a waxy variety of potato like Yukon gold, that will not fall apart in cooking. -- posted by Arlo

Smoked Haddock, Corn and Potato Soup

This is based on a Scottish recipe known as Cullen Skink, which is a very traditional recipe and which my grandmother used to make when I was a little girl. It was also a huge favourite with my son and still is. It has a sweet flavour with a salty edge from the smoked fish. You can make it a little richer with some cream added at the end but it's also great without. It's a main course soup for me - excellent for lunch with crusty bread. -- posted by rmarcella56

Gather a limit of fresh razor clams off the beach during a minus tide, clean them, and 20 minutes later, it's chowder time!
Harvest Salmon Chowder

Hmmm... canned salmon seems to be a theme here. Love the stuff. Commercially canned or home canned, the stuff is just great. So much tastier than canned tuna.
Anyway, this recipe was just sent to me from The Farmer's Almanac - gotta stash & save to make sometime soon 'cause it's got all the right stuff. -- posted by Buster's friend

Conch Chowder

This is a tomato-based chowder with a slight smoky flavor thick with diced potato and conch (available in Miami at Omar Seafood, 2111 NW 10th Ave., near 20th Street, 305-545-5741). If fresh conch is not available, use frozen conch ( fresh & frozen available in US from www.angelfire.com/fl5/cfarmsllc/ ).
Serve with cornbread or spoon over rice.

Smoky Tomato-Salmon Chowder

I found this recipe in the February 2009 issue of Better Homes and Gardens. It looks really good - maybe an alternative to chili sometime. I haven't made it yet, but am putting it here until I can. You can use salmon fillets with skin, just bake them skin side down, then leave the skin on the baking pan, using only the meat. Be sure to use gloves when working with the jalapeno as the oils may burn skin and eyes. -- posted by Julie F

Arbroath Skink

A variation on the traditional Scottish classic soup, Cullen Skink. Unlike any other type of fish soup, this one is an adaptation I made, and it has a slightly stronger flavour that Cullen Skink, but equally delicious. This one is made with something called an Arbroath Smokie, which is a whole haddock smoked to a stronger flavour than the commercially available ones, and comes from the town of the same name in Scotland. The recipe does not recognise the term Arbroath Smokie, but I am sure that anyone with roots in Scotland will recognise it immediately. -- posted by Phyllis Elias

Use leftover salmon or canned, either way, this is a delicious chowder. Corn, potatoes & carrots give this a delightful flavor. It goes together in a snap and can be made in one pot, so clean up is easy. This recipe was given to me by a dear friend. -- posted by BakinBaby

Conchs are quite popular in South Florida, as most there come from the Bahamas, were they are plentiful. If you cannot get frozen conchs, chopped clams may be substituted. If using chopped clams, add them at the last moment to keep them tender. The chowder is chunky, spicy, and robust with flavor - goes great with toasted bread rounds.
4th of July Clam Chowder

Rhode Islander's love clam chowder. This chowder has an intermediate consistency between traditional New England clam chowder that has a heavy cream base and a Rhode Island clam chowder which is a clear broth style. This chowder captures the best of both types with a rich milky base that is not too heavy but allows the flavor of the clams and other ingredients to shine through. This is a great chowder to serve on a hot summer afternoon. -- posted by tlt295

This is wonderful for any occasion. I even make this during the summer, when its 95 degrees out! You can purchase the Bay Scallops frozen or fresh..I prefer fresh but either is great! In case you don't know.. Bay Scallops are small and Sea Scallops are the large ones. Both can be used for thi soup but the Sea scallops are more beneficial to the soup. -- posted by Rachel<3

Fresh Clam Chowder

I made this with littleneck clams I dug up myself in Long Island and it was the best chowder I've ever made. This is really easy and rivals what you'd get in a restaurant. All fresh ingredients and no flour. This contains no actual onion pieces which is good for those who dislike onions, but it still retains all the flavor. -- posted by Suzy_Q
