South of the Border Soup

This soup is best started one day ahead, covered and refrigerated. The degreasing is much easier with the cold soup. Proceed with the recipe after the degreasing. From a January 1987 issue of Bon Appetit in the "cooking for Friends" section.
Sopa Caldosa

This popular soup from the Oaxaca region of Mexico features chorizo, a coarsely ground pork sausage flavored with chili powder, garlic, and other seasonings. Included is a recipe for simple, homemade Mexican Chorizo that's easy to put together (better yet, it can be prepared the day before). You can substitute a soft commercial chorizo that is found in most supermarkets, but it will be higher in fat. Recipe is from Cooking Light; overnight marination is not included in preparation time. -- posted by Sweet Jezebel

Corn Chowder With Fingerling Potatoes & Smoked Bacon

Found it here: http://wellfed.typepad.com/well_fed/2007/09/corn-chowder-wi.html Super good comfort food! Please use fresh corn, as it is much sweeter than frozen. Would be great with a nice piece of bread. You may want to cut back on the cayenne pepper, as 1/4 tbsp is quite a lot. -- posted by Andrew Mollmann

Lentil-Lima Bean Soup With Smoked Ham

This is a twist on the traditional lentil soup, as it uses lima beans and smoked ham in addition to the lentils. It is from the R.S.V.P. section of a December 1985 issue of Bon Appetit magazine and was requested from The Buttercup Bakery in Berkeley, California. This recipe doubles or triples well and also freezes well. -- posted by Leslie in Texas

Creamy Potato and Bacon Soup.

Quite simple, not alot of work involved. Produces a wonderful soup full of flavour! I made this recipe a few weeks ago on a very cold day. As for preperation of the bacon, you can choose to cook it in the stock pot, leaving behind as much fat as possible for flavour, and add back after cooking of the rest of the soup, or do as I've suggested with the microwave. I suggested the microwave because making the bacon cripsy is much easier this way. -- posted by Ambien.

Chorizo Green Chili Soup

Boulder sausage now makes chorizo. Best mexican chorizo I have ever eaten. I find a lot of chorizo a bit too greasy for my tastes, and Boulder's has a wonderful texture. Titling this recipe was tricky because after calling it "green chili" all day I realized it isn't really a chili, is it? So I am now in a lively debate with several friends about what, exactly, defines a chili. In any case, it's yummy. *nom nom nom* -- posted by Abi Fae

Yummy Potato Soup

This is more of a recipe I came across and tweaked to give it an even better flavor than before. It's similar to loaded baked potato soup, except that I don't care for sour cream or chives so I personally do not add them. However, if you would like to make it that way, I recommend a fourth cup of sour cream added in and about a fourth a cup of chives. You can tweak the amounts of those as well, based on how you liked your baked potatoes, but those amounts should give a good even flavor of everything. Please feel free to experiment with the amounts of seasonings if you'd like, but the ones provided should make it just right. I tried to write this so that even the most novice cook would have no troubles, so if you're more experienced please excuse me for pointing out the obvious at times in the directions :) -- posted by Cypress

I had some ham left over from another meal and wanted to use it up, so I went to the pantry to see what kind of a soup I could throw together.
Bean and Smoked Sausage Chowder

A simple and easy to make hearty soup recipe I tossed together one rainy day with just a few things I happened to have on hand. It rivals many soups made from scratch in both flavor and satisfaction...yet, even a young child can combine these ingredients and follow the simple directions and perhaps amaze their Mom or Dad at mealtime. Ready in just 20 to 25 minutes...easy clean-up too! ...just one pot!

Ham and Turkey Noodle Soup

I came up with this recipe while staying at my Aunt and Uncle's house in Dublin, Ireland over the Holidays. This is great, warming, flavorful usage for all those Christmas leftovers. You just take whatever Christmas meats you have left over and warm them up in some broth with noodles. In this recipe, I am using ham and turkey, but you could easily substitute with sirloin, duck, goose, whatever. The measurements for this are just a guess, so bung in whatever amounts you feel are reasonable. -- posted by dk683

Split Pea Soup With Spareribs

I first had this at my aunt and uncle's, had never heard of split pea soup with anything other than ham in it. Loved this, I definitely prefer spareribs to ham in this soup! Boiling the ribs in the soup and then letting it simmer for hours leaves the meat more tender than the crockpot! As written, it was a bit bland for our tastes, we added an extra tsp of the hickory salt and will try adding more peppercorns next time (I couldn't even taste the pepper this time). I added one tsp of pepper to the leftovers and that seemed to help. -- posted by The Wallaces
