Mock Pesto Pasta Salad

This is so delicious and healthy. It's also a great way to economize because almonds are so much cheaper than pine nuts. The garlic, salt and oils should be added to your preference. I love to make this for supper, and then save the leftovers for lunch! -- posted by Chef #1424163

Creamy Greek Salad Dressing

A couple of my favorite Greek restaraunts of all time serve their salads with a creamy Greek dressing. I assumed it was a common occurance until I started searching for recipes so I could duplicate it at home. I'm so happy to have finally found one on this site (Recipe #59898)! All the non-creamy dressings are too tart for me (and believe me, I've tried several)...this one hits the spot!! The credit for this recipe should be given to evelyn/athens...mine is only a slight modification of hers. (Mine includes homemade buttermilk and less feta.) -- posted by Robyn's Cookin'

Brown Rice Tangi Salad

This is an easy to make family favourite given to me by my mother years ago. A delicious, high fibre way to include more brown rice in your diet. It improves on standing so if I'm wanting to take it to a BBQ or pot luck dinner, I'll make it the day before then chill it over night. The brown rice gives it a lovely nutty, chewy texture in a sweet sour dressing. Everyone will be coming back for more and want the recipe. Enjoy! -- posted by jodz

Sweet Savory and Spicy Potato Salad

My friend Tricia made this for a cookout and I fell in love! It is the only potato salad I will make from now on. My husband never eats potato sald. He says "If there is meat around, why waste the time on side dishes?" He ate two HUGE servings of this......it is THAT good! If you cannot find candied jalapenos, just use one small fresh jalapeno (seeded and minced) and a tablespoon of sugar....it is just as good. We love curry, so we add more curry powder. Taste it and customize it to your taste!

The long prep time is the passive time needed to chill the potatoes. -- posted by LizP

Beautiful Tomato and Mint Salad

Good enough to serve on its own, with plenty of good bread and decent white wine. Perfection satisfaction and simplicity all rolled into one. You'll never want to use basil again! The only specification is that you use the best fresh tomatoes you can find, preferably on the vine and deep deep red in colour. I prefer to chill the tomatoes to make for easier slicing, then allow the finished dish to come to room temp.
Sarasota's Chinese Chicken Salad

The dressing is what makes this salad great in my opinion. A few special ingredients like sesame oil and sesame seeds make this a great salad for a weeknight dinner.
Chocolate Crunch Salad

A wonderful recipe that combines a rich, tropical essence with a natural crunch. This simple and easy recipe will have you licking your plate! It's natural, raw, and combines sweet with bitter in a way that shouldn't be possible. However not only is this possible, it's delicious.

This is adapted from Freedom's Raw Recipes (http://bit.ly/1IeyHo) and modified so that it requires no special equipment. All you will need to make this recipe is a knife and a blender. -- posted by Winkyboy

Gazpacho Shrimp Salad

This is great to serve anytime! Makes a great lunch and a fine dinner if you toss a little wine and a loaf of crusty bread in the deal! You can use whatever vinegar you like, and can add, after tasting, more. Nakano makes several seasoned vinegars that are scrumptious! Smoked paprika is one of the best seasonings I've ever used; you can't believe how fragrant it is nd the taste is amazing. However, having said that, it is very pricey. I cannot advise you excpept to tell you that without it, the recipe won't taste the same. -- posted by FLUFFSTER

A great little recipe from my Publix Grocer's Product Department -- they have recipe cards there and I always grab the ones that sound good. This one did not disappoint. Even DD enjoyed this pasta salad.
NOTES: I used Colby Jack cheese instead of the cheddar, and about 1/2 of the listed amount. I also cut the dressing by half, the original recipe calls for 1 cup. I used a mixture of Newman's Own Tuscan Italian and Olive Oil & Vinegar dressings. I'm sure some fresh chopped broccoli would be a nice addition too. -- posted by FloridaNative

Celery Black Grape and Blue Cheese Potato Salad

This combination is genius and works incredibly well if I do say so myself! Every element of the dish complements the next. One of those things I make sometimes and live off it for days! Crunchy big chunks of refreshing celery set in blue cheese dressing with the sweetness of black grapes to offset both. The potatoes are a great foil to this and prevent it from being too rich. A great dish to serve at buffets or pot luck dinners Its a cheeseboard lovers dream and looks colourful and presentable too -- posted by robd16

Potato Salad Dressing

This is a very different dressing for potato salad that has been a favorite of my family for many years. I found it while reading a pamphlet about using sour cream. It can be easily doubled for a large salad but DO NOT double the salt.
It is better if it sits for a day in the fridge but can be made the day it is to be served. -- posted by Chef #759331
