			<description>This is a Cook's Illustrated recipe that was originally published in January 2009.  These are dark, almost fudgy cookies that are not crumbly at all.  They develop a nice, crackly top and are not overly sweet, even with the granulated sugar coating.  CI recommends using Callebaut Intense Dark L-60-40NV, but any high- quality dark, bittersweet, or semisweet chocolate will work. Light brown sugar can be substituted for the dark, as can light corn syrup for the dark, but with some sacrifice in flavor. With more than a cup of fresh lemon juice, the lemon flavour is really pronounced, the filling sets up real well and the dusted sugar makes for a beautiful presentation.

			<description>A sugar cookie that is not too sweet, but deliciously soft! I was served cookies like these by a Mennonite couple, and searched desperately for the recipe until I found this one on a Mennonite cooking website! They've been a big hit wherever I've taken them, and they're a family favourite! I've modified the recipe to have coconut on top, like they were first served 
to me. If necessary, add an extra 1/4-1/2 cup of flour to keep the dough from being too sticky, and if you don't have buttermilk, use 1 cup milk + 1 tsp. vinegar and let stand for 5 minutes before use. The measurements for the icing are approximate, as I don't usually measure the amounts exactly and they aren't given on the recipe site; make more if you need/like more! The original recipe from the package the brown sugar is packed and the table salt is regular salt.  Please note that I'm not sure how this will work with regular oatmeal.  The number of cookies will depend on the size you make them.  Okay, I bought another brand of 'steel-cut' oatmeal to see if there was a difference. 			<description>Classic comfort food. I remember making these in home ec back in the day. God I hated junior high and would never want to relive that torture: but those cookies were good! That good to make me want to remember it. And we didn't keep Bisquick in my house so it was an especially great delight for me. Makes about 16-24 cookies depending on how big you make them. They may not taste as fine as pure from scratch cookies, but they still taste good and are a time-tested kid pleaser. Can sub vegetable oil or shortening for the butter but the butter tastes better.
