			<description>I was looking up cheesecake recipes, and they all either seemed too hard or needed baking. I made this up, it's sort of a combination of several of the recipes I found. The consistency is lovely, and it's pretty addictive. It is very rich, that's how I like it. I suppose you could freeze it if you wanted, but I haven't tried. It was perfectly good from the fridge. If you use raw ingredients, and virgin, unrefined, coconut oil (preferably organic), this recipe is so good for you!  It looks like a lot of coconut oil, but it works out to less than 1 tbsp per slice, and that's less than the recommended daily amount to get all those wonderful fatty acids they're talking about with coconut oil these days.  So, well, hey, have a 2nd slice!  :-)  We love this cheesecake and we're rarely without one in our freezer &amp;quot;just in case&amp;quot;.  There are lots of raw cheesecake recipes floating around the 'net, and after trying many of them, this is our version, taking little bits of each and doing what we like with it. When she brought the recipe in for me to copy, it said Ayelet's Cheesecake on the paper, so she probably got it from Ayelet.  I wonder what it says on Ayelet's copy.  Eti brought this cake in for her birthday, and I fell in love with it.  The cheese filling itself is no-bake, you just have to bake the crust, and also the reserved part of the crust to get the crumbs that you sprinkle on top.  The cake is divine. 			<description>OK - cheesecake snob checking in. This is a good one. Note the ingredient list - short, sweet &amp;amp; all the makings of something way greater than the simple sum of it's parts. Make at least the day before serving to let the cake's flavors develop (best 3 to 4 days). Cut when cold but let warm a bit from the fridge before serving - room temp is decadently delicious. Savor with a cup of steaming espresso. Heaven on a plate for me!
Found this in the Chicago Tribune's Top 10 Picks of 2008. Love the &amp;quot;no crust&amp;quot; aspect &amp;amp; the hot water bath method. Sieving the batter I'll admit is a bit fiddly but ensures that perfectly smooth texture.

This is truly the BEST cheesecake. The addition of mascarpone cheese makes this super-silky. This cheesecake freezes VERY well.
I've tweaked this recipe just a little bit with the addition of a tablespoon more butter in the crust (I found it needed it), and for the lemon version...the addition of culinary lemon oil and limoncello for added citrus taste. 			<description>Okay so this is just an ordinary cheesecake with a little twist. I remember this recipe because my manager and I was trying to figure out how to make a cheesecake unique and great. Some people uses sour cream and some people don't. Some uses evap. milk and some people dont. We werent exactly sure what would taste better and what would make the cake smooth or etc. So we came up with this! HOPE YOU ENJOY IT!

You will need a Springform pan or if you dont have won, just use a 9inch round pan with foil paper. Make sure to wrap the whole pan with foil!

As for toppings, you may use anything you like.
Whipped cream
Strawberries or blueberries or cherry or any fruits
Strawberry or chocolate syrups. Any syrups to your liking.
