			<title>Fasolatha (Greek Bean Soup)</title>

			<description>The Fasolatha (bean soup) Festival, originated in Florina, Macedonia, Greece, and is now a major cultural event in many Greek communities across the world.  
     
In the Northern hemisphere, the religious festival is traditionally observed near the start of winter - on St. Nicholas Day (during his lifetime he was known for giving sustenance to the poor).
     
Food is a major part of the festival. Apart from Fasolatha (bean soup), Olives, Renga (smoked herring) freshly baked Florinian Bread (Pogatsa) Gyros, Souvlaki, Kebabs, and Loukoumathes (honey cinnamon - soaked donuts) are also served. 
     
Fasolatha is one of the heartiest dishes on the Greek vegetarian table, and a Lenten mainstay.

			<description>I made up this recipe from another hummus recipe.  I really make it to taste, and it seems to be a little different each time...so add or delete as you see fit!  I like a lot of garlic I've gone as high as 15 cloves, but I think 10 is probably the right amount.  Sometimes this comes out thicker than I'd like (sometimes not)...if so, I add a bit more water and/or olive oil.  If you don't like cilantro, you could use parsley. 			<description>These are delicious arabic biscuits / pastries, they can be made with a variety of fillings, including pistachios, walnuts or dates. They are often eaten in the Middle East as a celebratory food, for example at weddings, the end of ramadan, rosh hosana, christmas, easter etc. They contain very little sugar so they are quite healthy. The pistachios are considered the most desirable fillings. Almonds also work quite nicely though.
