Roasted Asparagus and Red Onion Quesadillas

This delicious, vegetarian recipe is adapted from a recipe in "Gourmet Magazine" (April 1995). You can also add mushrooms and experiment with different cheeses. Serves 4 as a main dish; 8 as an appetizer. Garnish with lemon wedges and sprigs of cilantro or some Cumin-Lime Cream. (To prepare this, whisk together well 1/2 cup sour cream, 1 tsp ground cumin, and 1 tsp fresh lime juice.) -- posted by blucoat

Kyanabelle's Mexican Meat Filling

Multi-purpose freezer meal. Tastes like restaurant Mexican meat filling instead of a "taco seasoning packet" homemade filling. Use it for filling tacos, burritos, topping nachos, mixing into a hot cheese dip. Let me know what YOU can come up with to use it for. Oh, it's a huge kid pleaser, too.

You can use a combination of ground meats (pork, turkey, ground round, hamburger) according to your health goals/family preferences. Salsa Verde is a salsa that is green and made of green chilis. This is not a real spicy mixture. -- posted by KyanaBelle

This is something i have played around with for a while now. All the taste you could want with no where near the guilt.
Nif's Healthy Baked Beef Burritos

Hola Amigos! This recipe is mui bueno! A healthy and easy recipe that adults and kids will both love. You can replace the ground beef with a vegetarian meat alternative or chicken. Also, you may want to add peppers when you add the tomatoes to the beef. Serve this with the crunchy veggies listed to catch the sauce and add some cold crunch to your hot burritos. NOTE: this is a big meal and might be too much for some people. My DH and I were hungry and ate our 2 burritos but our DS's could only eat 1 1/2 and were stuffed. Enjoy! -- posted by Nif

Crock Pot Carne Guisada

We love carne guisada around out house. This is a really easy recipe!
FYI: I always go to my local meat market and have them cut a good looking rump roast into stew meat. It saves me the time of having to cube the meat myself and that way i get to pick out the best cut of meat. Also, if you like spicy, leave the seeds in one or two of the jalapenos. -- posted by Melanie2590

Spiced Lentil Tacos (Vegetarian)

This is a great recipe for those who want a vegetarian meal without fake "meat". This delicious and simple recipe is from Chef Jennifer Iserloh of New York City (aka "Skinny Chef") and was printed in this month's Self Magazine (February 2009). Following the recipe results in an al dente lentil with a little chew to mimic the texture of ground beef. If you want a softer lentil, you can cook them about 15 minutes longer (in step 1) with added broth until soft. -- posted by blucoat

Cumin Chicken & Avocado Salad

A pinch of chili gives this a nice kick, perfect in the garden with a few Mexican beers. This has a slightly Mexican flavour, combining warm chicken tossed with cumin and chili powder, kidney beans and creamy avocado. The tomatoes are slightly cooked too, so their juice bursts into the Caesar dressing as you cut into them - delicious. -- posted by English_Rose

Agua De Horchata

This Horchata is the kind that is served in "neverias" or ice-cream shops in Mexico. It is creamy and easy to do. Grinding the rice twice brings out all the starch and flavor. Prep time is the time needed for the rice to soak. One reviewer stated that I don't know what I'm talking about and that the rice should be soaked overnight...if you choose to soak it longer, the result will be the same and you will still need to strain it as stated---twice. I do know what I'm talking about: I'm Mexican and live in Mexico. -- posted by Mami Janine

Kpd's Awesome Retro Burritos, Tacos or Chimichangas

This is my basic recipe for a Mexican ground beef mixture. This way everyone can make what they want: DH makes burritos, I make tacos or chimichangas, and DD makes what I call a fiesta bowl! I usually double the recipe so we can use the leftovers for a Nacho Night! If I'm low on time or spices, I'll just throw in a taco packet, no biggie! Please use your judgement on the seasonings: we like it spicy, so I actually use a lot more than written...if you prefer mild, go a little light initially and increase as necessary. -- posted by KPD

Chicken Chili

So simple, but so tasty this one-pot chicken and bean chili is packed with cilantro and flavoured with lime. To freeze: Put in a freezerproof container, cool and freeze for up to three months. Thaw overnight at cool room temperature. Preheat the oven to 350F. Bring the chili to the boil on the hob, then cover and reheat in the oven for 20min or until piping hot. This is great served in warm tortillas, with some grated mature Cheddar, guacamole, green chilis and soured cream. Put it all on the table and let everyone help themselves. Freeze a packet of tortillas alongside the chili, so you'll have them to hand, too. -- posted by English_Rose

Nif's Very Basic Cheese Quesadillas

Only 3 ingredients but my youngest DS loves it! Like the name says, it is very basic and is also very low maintenance. I would saute meat and/or veggies and have nonfat sour cream, salsa or guacamole to dip it in, but this is the basic-est version of the quesadilla. You can also use this as an appetizer and cut into thinner wedges. My DS can eat the whole thing now for dinner, but I thought I would list 2 servings.
Spanish Rice

A simple tasty side dish that goes really well with mexican dishes. I make this alot and have yet to meet someone (other than my Mother-in-law, who hates everything) that doesn't like it. This recipe was hatched when I was working as a chef at a local cafe to accompany our quesadilla special. -- posted by kalamitykris

Wendy Richard's Chili Recipe - the Best Chili Ever!!!!!!!!!!!!!!

Are you ready for the BEST CHILI you've ever had? Only made this because I am a HUGE fan of Wendy Richard (MBE) who played "Miss Brahms" on "Are You Being Served" and she also played Pauline Fowler on "EastEnders". She recently passed away and printed her famous chili recipe on the back of her funeral program. (You can see a photo of that in here! Check out the photos for this recipe) I've had chili all over Texas and the South - I even made both recipes from "Throwdown with Bobby Flay" (both were VERY good) but I will tell you - hands down - THIS WOMAN'S RECIPE IS THE BEST CHILI I HAVE EVER HAD IN MY WHOLE LIFE! And when I say "THE BEST" I mean: "I am SO STUFFED I might explode - but I can't STOP eating this chili because it tastes so AMAZING". Ok? I tried to put it in the freezer - and ended up taking it out 10 minutes later and eating it again. Today I had it for breakfast on eggs, and lunch and dinner! Can't wait to have more tomorrow! I'm NOT sharing this batch with ANYONE! But I will share the recipe!

VERY URGENT/IMPORTANT: THE WHOLE SECRET OF THE RECIPE IS IN THE SCHWARTZ BRAND CHILI MIX!!!!!!!!!!!!!!! Use any other brand and it will only be a 2-3 star recipe! If you are in the USA the "Schwartz" brand chili mix in this recipe can be ordered online from www.Distantbrits.co.uk or any other British food sites. PLEASE ONLY use "Schwartz" brand if you want this to come out a 5 STAR recipe- if you use any other brand, like "El Paso", "Chichi's" "Ortega" or "McCormicks" it will be disappointing because those 4 brands I just named are nothing but salt and chemicals with very little spices. I HAVE MADE THIS RECIPE WITH THOSE 4 OTHER BRANDS, JUST TO COMPARE -WHICH IS HOW I KNOW, IF YOU USE ANYTHING BUT SCHWARTZ - IT'S GOING TO BE A DISAPPOINTMENT. PLEASE TRUST ME - IT'S SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO WORTH IT TO SEND AWAY FOR THE SCHWARTZ BRAND, YOU CAN GET THE SCHWARTZ CHILI MIX IN 2 DIFFERENT HEATS: MEDIUM/MILD AND HOT. I PROMISE YOU - IF YOU ORDER THE SCHWARTZ AND DON'T THINK THIS WAS A 5 STAR CHILI - SEND ME AN EMAIL AND I'LL PAY YOU BACK FOR THE COST OF BUYING THE SCHWARTZ. OK?

If you can't find the British "Schwartz" brand, send the lady at distantbrits.co.uk an email requesting it. Tell her which kind of heat you want., "McCormicks" brand in the USA is very disappointing - even the "hot", it's not spicy and the taste really is missing something important. I even tried adding more cumin, and fresh Jalepeno's but McCormicks - it's just NOT AS GOOD as Schwartz, so - if using McCormick's- please know - you've been forwarned: it's not going to be a 5 star chili. If you're in the UK - you should have no problem finding this product.

ALSO - careful when ordered because the recipe calls for 4 Schwartz chili. That means chili MIX - NOT 4 bottles of chili powder!!!! (I say be careful because Schwartz also makes chili powder, and you don't need 4 bottles of chili POWDER for this LOL!)

I used the HOT Chili Mix, but Wendy specifed "Mild". Get whatever heat you are comfortable with. Be FOREWARNED: If ordering the "Hot" - just because it's from England doesn't mean it's not as hot as you think. While it is the most delish chili mix, It is 5 ALARM Texas hot!!!!! And this is coming from a gal who drinks "Franks Red Hot" straight out of the bottle whenever I have a craving! The mild is "mild" and also extremely delish.

Menier's Chocolate is VERY hard to find if you live in the USA. I could only find 1 place online that sells it (Distantbrits.co.uk) Otherwise, use a VERY DARK (Swiss is preffered). When you open the Menier - the actual chocolate says "Nestle", so I guess you could get bittersweet or semi-sweet Nestle. Just don't use Hershey (ugh!)

When it smells ready - eat it. You don't HAVE to simmer for 3 hours, as directed by Wendy. (Personally, I couldn't wait that long, it smelled too good) It even tastes amazing room temp hours later!

I promise you - if you make this recipe EXACTLY as is - with NO SUBSTITUTIONS ON THE CHILI MIX (you CAN make substitutions on the chocolate)- Your tastebuds will think you've died and gone to heaven. I can see why Wendy would leave such a fantastic Chili recipe on the back of her funeral program - people were probably begging her for years for this recipe.

When I make this for the next Texas chili cook-off - this WILL win 1st place - and I will give Wendy Richard all the credit since it is her recipe.

Huh! Who'd have thunk the best recipe for Chili would come from ENGLAND!?????!!!!!!

R.I.P. Wendy - and I thank YOU for all the years you've made me laugh and cry and for the gift of this AMAZING Chili recipe! I will be entering it into contests in your memory! I also hope all the people here will make this and enjoy it and it becomes a family favorite! -- posted by BBCFan

S-C-R-A-M (Salsa, Cheese, Rice and Meat)

Based on the AJC online edition's What's For Dinner featured on 08-05-09 -- 5 ingredients / 30 Minute Challenge! recipe submitted by Matt Doroff, Norcross, Georgia, with some OPTIONAL ingredients. A great one-pot, family friendly meal with an even better “kid-approved” acronym, SCRAM :) (Salsa, Cheese, Rice and Meat). This is convenience cooking at its best, a ground meat skillet dinner using salsa and taco seasoning for flavor and cooked rice (and optional black beans) to add heft... If you don't have cooked rice on hand, one (8.8-ounce) package brown or white cooked “Ready Rice” (90 second microwaveable) can be used. To keep this more kid-friendly, leave out the chopped jalapenos! Leftovers can be rolled up in a tortilla for a burrito filling - or plan on using tortillas as part of your SCRAM meal! -- posted by Kerfuffle-Upon-Wincle

V's Soft Turkey Taquitos With Southwestern Dip

Every year my dad would make these taquitos with leftover turkey. The corn tortillas are lightly fried in oil, rolled with turkey and sealed on a griddle and come out soft with a nice crunch with the turkey still moist and delicious. These are awesome because they are not deep fried or baked. I took over the tradition and have been making these for years. My family won't eat any leftover turkey in any other form except these soft taquitos. We look forward to these as an appetizer or a meal served with my own Southwestern Dip, Cheese Sauce, Salsa and my Chunky Guacomole the day after thanksgiving. -- posted by Vseward (Chef~V)

I got this recipe from Campbells. I never can make enough! Its great for people who don't like a lot of kick in their dips, but it can be adjusted for the flaming-mouth lovers. Can be made the night before if needed. -- posted by rodeoblonde

Ww Low Fat Taco Beef Skillet Dinner

Since starting Weight Watchers, I have missed the flavour of Mexican foods. But with calorie-filled toppings and wraps, they're not always diet-friendly. So I came up with this meal- it has the flavours of Mexican food without the majority of the calories and if you have extra points, you can even add a little guacamole or sour cream on top! It's worth using fresh salsa, not the jarred stuff for this recipe- it adds a lovely fresh bright flavour. Using extra lean beef, this recipe has a total of 19 Weight Watchers points by British points calculations. -- posted by Shuzbud

Smoky Chicken and Chorizo Mexican Enchilada Baked Casserole

This recipe was made from leftovers and has been requested again ALREADY by Malcolm, my husband! Cooked chicken is mixed with smoky, hot chorizo sausage and folded through a chipotle chilli tomato sauce..........sounds too hot?! I then added some sweet corn, sour cream and a jar of mild salsa to calm it down a bit, but please DO use hot salsa if you like a little spice in your life! I topped this with a dollop of sour cream and dressed it with chopped jalapeno peppers, parsley and a little chopped coriander (cilantro) for a perfect cold weather lunch. I devised this recipe especially for the Two for One Leftovers event in the Cooking Photo's Forum. Please adjust the chilli powder to your own requirements. I like spicy food but Malcolm does not, so I topped mine with loads of chopped jalapeno peppers and a sprinkling of chipotle chilli powder!! NB: I used Spanish chorizo sausage, which is cured; if you are using fresh chorizo sausage, it needs to be browned beforehand.(I made this original recipe with leftovers from KissKiss's Recipe #368069. However, ANY cooked chicken will do for this!) -- posted by French Tart

Sopes

Sopes are very traditional in mexican households. The toppings range from just beans and cheese, to eggs, shredded chicken or beef, picadillo, or even just guacamole. To form the sopes you will need either a tortilla press orflat plate or the bottom of a skillet. Also, you will need plastic wrap or a small ziploc bag cut into two pieces and the zipper cut off. -- posted by Tiny_Toodles
