			<description>Sumo wrestlers eat lots of &quot;nabe&quot; to get up to fighting weight. We've toned our salmon soup down a lot, so this really isn't going to pack on the pounds unless you eat it with a LOT of rice. Sumo wrestlers have their own recipes and vary the soup depending on the ingredients they have. This is our version of Ishikari Nabe, using ingredients that we are readily able to find here. It isn't authentic, but works with our kids. The recipe is meant to be adjusted to incorporate things you may have at hand. We often add spinach, squash, green onions, sweet onions, mushrooms. You can add the eggs if you want, usually the tofu and salmon are plenty for us. I have recently made this, and will rearrange the directions to be more user-friendly by the end of April '05. Please regard the amounts of chicken, eggs, kamaboko, as suggestions. Udon are the comparatively thick white Japanese noodles made with white wheat flour. Weighing the miso would be most accurate, but my conversion chart says 160 g miso is equal to 140 ml, or 1/2 US cup plus 1.4 tablespoons. 			<description>My daughter, who is taking Japanese classes, wanted to make this recipe from her textbook.
I can't tell you how proud of her I was watching her put this together and also how perfectly fantastic this hearty dish was on the cold, rainy evening that it was served.  A little info from the textbook....Oyako means &amp;quot;parent and child&amp;quot; (look at the ingredients....chicken and eggs!!) Donburi is for the bowl in which it is served.  One variation is tanin (&amp;quot;unrelated&amp;quot; or &amp;quot;outsider&amp;quot;) donburi made with beef and egg.  Another is Katsudon with the meat being a sliced, breaded pork cutlet.
*Nori is thin, paper-like seaweed.  ** Mirin is a sweet cooking seasoning containing corn syrup, water, rice wine and vinegar.  You may substitute 3 tablespoons of rice wine with 1 tablespoon of sugar.

I double the sauce to make it more like a soup since I love egg flower soup and this reminds me of it. I also omit the sugar, it is good without. I have only made this with white wine since i have no reason to buy mirin aside from this recipe and it turns out great. for a spicy kick, my husband likes to top this off with that hot rooster sauce. 			<description>This is from &amp;quot;The Enlightened Kitchen: Fresh Vegetable Dishes from the Temples of Japan&amp;quot; by Mari Fujii. It comes from Kenchoji Temple, the first Zen buddhist temple in Japan. It is a wonderful example of shojin ryori, or &amp;quot;temple cuisine&amp;quot;. The ingredients suggest this is a winter soup, although for health and nutrition, this soup can certainly be served in any season.

The author suggests that instead of the soy sauce (or in place of part of it), you can substitute miso or sake without losing authenticity.

Although this looks like a lot of directions, it's actually a very simple preparation. If you can boil water, stir fry, and use a knife to slice vegetables, you have all the skills you need. Once you make this, you won't even need to look at the directions.
