Corn, Mushroom, and Potato Chowder (Vegan)

Vegan comfort food! This recipe is inspired by one from Alex Jamieson's The Great American Detox Diet, but modified quite a bit by me. If you have picky eaters at your house, you can leave the mushrooms on the side and let each person decide whether to add them to his/her bowl. -- posted by Prose

Iraqi Potato Cakes With Tuna Filling (Batata Charp)

These are crispy fried potato cakes with a tuna and light vegetable filling that is just delicious. DH liked them with the tuna added though it is not traditional. If you prefer you can leave the tuna out for the original vegetarian version. I serve them with a corn free ketchup and plain yogurt to dip them in, sour cream would be good too.
Fried Fish With Rice (Kuwaiti & Emratie)

Fish with rice is often served in homes in the Arabian Gulf. Kuwaitis in particular love their Zubadi (Silver Pomfret) fish that is local to them but can be found in the frozen section of many Middle Eastern & Asian shops. (You may have to degut them yourself). While some prefer to eat them dry with rice, others like ourselves, make Recipe #387327 to serve as an accompaniment. This recipe is a very tasty combination from three sources which all deserve credit, Sa-mak ma-ga-lee - Fried Fish from From "The Complete United Arab Emirates Cookbook", by Celia Ann Brock- Al Ansari, Mtabag Simach from "Cardamom and Lime: Recipes from the Arabian Gulf", by Sarah Al-Hamad, and http://mimisrecipes.blogspot.com. -- posted by UmmBinat

Easy and super yummy! Even good re-warmed the next morning(it any left!)
I followed directions exactly except used soy milk and marg. and patted out and cut with a knife, worked fine but might try dropping from spoon like traditional drop biscuits next time, don't know how that would work, I have only done as writen so far.... -- posted by Robin Batterson

Light and easy, good for those cake cravings, as cake bases in trifles, or just a simple cake to serve for guests. In my picture - I had accidentally burnt the top, so I had cut it off and just coated the remainder in cream :) .... also, if you want your cake to be a bit sweeter - a teaspoon of vanilla essence when you're adding the sugar to the egg. -- posted by ByNDii

Peach Freeze

This recipe is from the side of a large can of SPC Peach Halves in natural fruit juice. The can is 825g (roughly 30 ounces) and the fruit content is labelled at being at least 59% of the can. The original recipe had 2 tablespoons of sugar....but I dont think it's necessary with lovely sweet fruit.
Creamy Coconut and Rum Baked Pineapple

I came up with this as a solution to leftover coconut milk and a fresh pineapple. And even on Weight Watchers, it was worth saving points for this dessert. The whole recipe has a total of 8 points. The rum for this dessert should be golden- a light rum will not produce the same depth of flavour. Number of servings will depend on the size of pineapple used- increase the sauce if using a large pineapple. -- posted by Shuzbud

Real Chicken, Real Flavor Soup

So just another chicken soup recipe? Well sure, the ingredients are nothing new, but what makes this soup different is how it is prepared.
Southwest Four Bean Salad Supreme

Tim and I came up with this recipe after having a deli salad that we thought we could make on our own...and better. This is a very versatile recipe. I have served it on a bed of greens and have added chopped grilled chicken on occasion. You can also add a can of quartered artichoke hearts and a jar of chopped roasted red bell peppers. ( Be sure to drain both.) It's a great day before shopping recipe as most ingredients are canned, bottled or frozen. Be prepared...this makes enough to take to a potluck. It makes approx. 18 cups. -- posted by Laura911RN

Gluten-Free, Egg-Free Cheesecake Recipe

Thai Galangal Chicken Soup ( Tom Ka Gai)

This recipe was given to me by my brother-in-law but origanally from an Australian Women's Weekly cookbook/magazine. The coconut milk tames the spices, making this a smooth and subtle soup. You can use chicjen breast if you prefer them to the chicken thigh meat.. This recipe is gluten-free if you use a purchased or home-made stock that is gf suitable and a gf fish sauce. The whole coriander/cilantro is used in this soup- the roots and stem in the soup base and then the leaves before serving -- posted by **Jubes**

Fresh Fruit Quinoa "risotto"

Oddly, adapted from Men's Health magazine. Excellent for breakfast or dinner, and a good way to get the family to eat healthily. The juice adds a fair amount of sweetness; if it is still too bland for you, add some brown sugar. I used a "light" apple juice, though you can substitute a regular one. -- posted by Laura Meehan

Lebanese/Syrian Bazella

After having lived in Syria for the past year for school, I learned how to make several authentic dishes. They will probably taste different outside the Middle East due to the availability of items seasonally and brands of ingredients used. This dish is a blend of carrots, peas and meat in a tomato-based broth that is served with Middle Eastern-style rice. Arabs are used to having family over--it's a family based culture--so it's meant to be shared. -- posted by Mustafa's Cook

Lebanese/Syrian Fasoulia

Three Sisters Soup

"Three Sisters" refers to the wonderful combination of beans, corn and squash -- foods traditionally grown and consumed together by many American Indian tribes. In the garden, the corn is planted in the center, then the beans surround them and use the stalks as a trellis, then the squash is planted around the base to spread out. This recipe was printed in Natural Home Magazine's Nov/Dec 2009 issue. -- posted by Wish I Could Cook

GF flours are so expensive (especially in Panama), so I'm trying to get a good corn based pancake. I've been tinkering with this recipe, and I'm posting it here for safe keeping.
Peach & Pear Muffins

This recipe was designed in answer to a request from my son for crocodile muffins. The pear skins are the crocodile skin, the peaches are the eyeballs and the butterscotch chips are the teeth. My version is wheat, egg, and (almost) dairy free, but feel free to switch it up and use eggs and milk if you prefer. I haven't found dairy free butterscotch chips, so you could leave them out of the recipe if you needed to. There is no added sugar in this recipe because the fruit and butterscotch are plenty sweet. -- posted by DiabeticMom

Gluten Free Sandwich Bread

Borrowed from Elena's Pantry. I hope you enjoy this quick and easy bread; it's full of fiber (from the flax and almond) and tasty in oh so many ways. This loaf yields a medium size slice, not as big as a regular slice, though is very filling, so I'm always sure to slice it thinly, as not to overload on bread. I use this magic line loaf pan for just about all of my bread baking --it distributes the heat evenly and bakes the bread through, which is not always easy when baking with almond flour which tends to be rather moist.

Storage: I wrap my bread in a paper towel and then seal it in a Ziploc bag; stored this way it can keep for several days refrigerated. -- posted by 3TIMEMAMA

DH likes things pretty plain (as in only cheese and ketchup on his burger) so our patties have to have enough flavor to stand up (almost) on their own. I like that they've got good flavor but aren't too much to detract from the rest of the stuff on my burger (I happen to be the exact opposite of DH!). -- posted by Melanie2590

Kristen's Kickin' Quinoa Salad

I was recently sold on quinoa and how awesome it is! Gluten free, an almost perfect protein, easy to prepare, the list goes on! This is a combination of two recipes, one of which I altered. The first is from this site, (#16399, Quinoa-Toasted). The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes. We thought it tasted a bit like sushi and loved it! Feel free to add more heat, but this had enough for our family as we've got wee ones. A large portion of the cooking time is cooling time. -- posted by SandwichQueen

Chocolate Raspberry Bonbons

Valentine's Day is approaching, which means lots of bad candy and useless merchandise will be sold in the next week or so. Over here, we're having fun making our own (healthier) candy --especially these Chocolate Raspberry Bonbons.
