			<title>German Fruit Cake Bottom</title>

			<description>Typically baked in a special round form that bakes a rim for easier filling, but any round 11 inch form will do.
Fill baked bottom with 3/8 inch (1 cm) pastry cream or thick vanilla pudding and top with fresh fruit like strawberries. Keep strawberries from toppling off the cake by pouring a little strawberry flavored prepared jello over strawberries. When set cut cake into 12 wedges. 			<description>Sand cakes are typical fare at German Kaffeeklatsch (coffee with some friends at about 4 p.m.). I post this in answer to a request for Sand Cake. This is different from the classical one (a pound cake), where you cream the butter with sugar and eggs, then add flour.
This should be more like a firm sponge cake, where you beat eggs with sugar first, then fold in flour and MELTED butter! It is from one of my favourite cookbooks Schwarzer, Horst et al.: Das ist Kochen, Germany, 1981. 			<description>This is my auntie Lene's recipe for a German style apple pie which is different from a standard American or English pie. The crust is finer and the whole pie is deeper. My mum always makes it when my BF and I come to Germany for a visit and he just can't get enough of it.  Sorry it's only metric at the moment, next time I'll make it I'll measure in cups. Also, my mum tends to make the actual filling without actual measurements, so you might want to adjust amounts slightly to your liking. You can add raisins, about 1/4 of a cup, but I don't like them so much so I leave them out. You can make the filling ahead or make double the amount and freeze some for the next time, just leave out the almonds and add them after you have defrosted it. It seems like a lot of work, but it is quite simple and well worth the effort. 			<description>Traditional German Obst Kuchen is a Fresh Fruit Flan with a sponge-type cake base, sometimes with a thin layer of custard, topped with fresh fruit and then sealed with a fruit glaze. Obst Kuchen is very typically served throughout Germany during the afternoon coffee hour, with dollops of freshly whipped cream. One of my favorite toppings is fresh whole strawberries with a red currant or strawberry glaze. Fresh raspberries or other fresh or canned fruits such as kiwis, apricots, cherries, gooseberries, and pineapple are also popular. The traditional pan used is a 10-inch German flan pan, however a torte or springform pan would also work. 			<description>Milk and vegetable oil add moisture to this sponge cake gently flavored with cocoa.  I like to serve this cake with whipped cream. For the whipped cream, Confectioners sugar is preferred to granulated sugar because the small amount of cornstarch in the former discourages the weeping that occurs when whipped cream stands for longer than a few hours.  A hint of vanilla is imperative.  Learn to distinguish between the stages of whipped cream; it doesnt always have to be stiff.  As a garnish for a dessert, the goal is softly beaten Schlagsahne that barely mounds.  When used for piping, cream should be whipped to the stiff stage.  Of course there is an in between stage, too, used for when the cream is the base for a torte filling. 			<description>Do you like baked apples? Do you like cake? Then you will love this treat. This cake will make a wonderful dessert or a different treat for an afternoon break. I use very small apples for this cake. I love the baked apples flavours in combination with a more dry texture of the cake. The cake is not overly sweet and will take up any juices from the apples. The taste of the slightly tart apples, which are still a bit firm after baking and the fluffy texture of the cake is great. The apples are stuffed with my favorite combination of marzipan, raisins and rum. If you want to make it for kids, you can sub the rum (see note on this). For an elegant appearance, I use a round baking dish and arrange the apple slices in concentric circles, starting from the outer edges of the cake.

			<description>Stollen has been sold at the Dresden Christmas market since the 15th century. Each year the city puts on a Stollen Festival to celebrate the food that takes its name from the Saxon city. In imitation of the gigantic Stollen baked in the city in 1730 on the occasion of Augustus the Strong's grand festival of baroque proportions, each year the bakers of Dresden produce a 3000 to 4000 kg stollen. It is cut into half-pound sections and served to the festival visitors. The following recipe won't supply an entire city but the two 12-inch loaves it produces will feed a good-sized family.

I have been making this for many years and no one seems to get tired of it. I also serve with mocha whipped cream on special occasions. It is a heavy thick batter that needs to be spread in the pans. Go figure. This isn't really dark or slick enough to be black forest gateau, but it's what I made with what I had in the cupboards, and was pretty quick and easy to do, and involved chocolate, cream and cherries - so after a couple of cans and a lasagne it sufficed!
