It calls for crunchy peanut butter but I didn't have that on hand so I used some chopped peanuts with the creamy peanut butter and that worked. It says to marinate the chicken  for 2 hours but I marinated overnight. I think it made a huge difference. 			<description>This has to be the best home-made chicken curry I have tasted / made. It's a recipe that a friend gave me after she made it for a dinner party. Since said party, almost all guests have either asked for the recipe or have asked her to make it for them. It's not your average curry - it's like a cross between a Korma and a Tikka Masala.
Tip: I once used reduced-fat coconut milk to save on calories etc but it really didnt taste as good as it does with the full fat stuff! So dont cut corners! You can also vary the amount of chilli you put in to suit your personal taste! It wasn't as good til we added lemon (which was supposed to be in there but I forgot).  It is fairly spicey, I would adjust spice levels to taste. 			<description>This is a delicious,  light and healthy meal.  The flavors are just scrumptious! and it looks beautiful!! It is similiar in design to Asian Chicken Salad Wraps #55675, but a totally different flavor combinaton.  I like to use Azteca Burrito (9&amp;quot;) size flour tortillas because they are not fat free, but they have less fat in them than other brands that I've checked.  I think it would still taste good, but if you leave out the fresh ginger or the fresh cilantro, you will be missing the essential parts of the dressing!  I have found that about 2 chicken breasts is the right amount.  Leftover grilled breasts are perfect for this recipe.  Red peppers can be pricey where we live, so I either leave them out or substitute with green.
