Focaccia With Asparagus, Prosciutto, and Truffle Oil

Again, this was taken off of truffle-oil.com's website and I'm posting it here in case I lose it. Please review if you make this. I'm also guessing on yield and times again, as well as servings as they didn't include this in recipe. The site says to add the truffle when everything else is finished. Also, it suggests using a pizza stone. -- posted by Marla Jones

Roasted Asparagus With Mushrooms

This is an easy dish I literally threw together for dinner one night. It's deliciously simple! I have indicated this recipe serves 2-4 people. That is because DH and I really enjoy asparagus and prefer large portions of the vegetable. Please feel free to decrease your portion size to serve more people if desired. -- posted by MarthaStewartWanabe

Classic Asparagus Frittata

This frittata takes only six ingredients usually found on hand. It's so easy to put together. Though I've only made it with Jarlesberg Swiss, you can use your favorite cheese(s) such as fontina, mozzarella, provolone, jalapeno jack, asiago; or a combination of a couple. I increase the olive oil to a tablespoon. Recipe from Simply Recipes online. -- posted by Kathy228

Asparagus, Crab & Tarragon Bisque Shanachie

This was a demonstration recipe at Charlotte Anne Albertson's Cooking School (Wynnewood, PA), for "Awesome Soups with Brian Duffy" (Jan 24, 2006). Brian Duffy (http://www.chefduff.com) hosted the Food Network shows "Date Plate" and "Hot Trends 2005" and is executive chef at Shanachie, an Irish restaurant in Ambler, PA. Shanachie specializes in soups ... and this is one of their most frequently requested seafood soups, especially in the spring, when fresh asparagus is available.

Crab claw meat is less expensive and more flavorful than lump crab meat and so is the ingredient of choice.

Roasted Asparagus With Lemon Vinaigrette --Courtesy Melissa D'ar

Simple, fresh, and bright. Serve warm or cold. Recipe by Melissa d'Arabian, winner of "The Next Food Network Star" 2009. Her show is called "Ten Dollar Dinners with Melissa d'Arabian". This recipe is from "Savory Savings" episode. This would be wonderful dish for a picnic. COOKS NOTE: I had more asparagus then the recipe called for so I doubled the Vinaigrette but used only about 3/4 of it. Since you have the whole lemon anyway, you might as well double it. I did not want to saturate the asparagus but felt it needed more. I also used some of the lemon zest as a garnish and served it chilled. It was wonderful... -- posted by JT'sMom

Asparagus & Corn Quiches

Quiche is always so versatile - an easy-to-prepare dinner, lunch or snack; and individual quiches are great for take-to-work lunches or for picnics or potlucks. Made with the canned vegetables, this can be made very quickly but it can, of course, also be made with fresh or frozen vegetables. If you are using frozen vegetables, steam them briefly and make sure that all excess liquid has been drained off - or saved for making soup, such as my Recipe #135453. I've adapted this recipe from one I found on the Simply Great Meals website. Conversions: 425g = approximately 131/2 ounces; 125g = 4 ounces. -- posted by bluemoon downunder

Contrary to what many people believe, thick asparagus spears are often more tender than thin ones. In fact, tenderness has to do with age and moisture content, not size.
Clifton Country Inn Essence of Asparagus Soup

The Clifton Inn was built in 1799 and eventually became the residence of Thomas Mann Randolph, US congressman, governor of Virginia and son-in-law to Thomas Jefferson. It is a stately southern manse in the heart of Virginia with gently rolling lawns that drop off into pure mountain magic. -- posted by Molly53

Cool Asparagus and Salmon Salad

As we go into summer in the Southern Hemisphere, with temperatures already in the 30 degrees Celsius some days, a cook's thoughts lightly turns to thoughts of salad, to paraphrase Keats or Shelley! I am extremely fond of cold-smoked salmon. We also love green asparagus. Put them together, add a few extra taste notes, and you have a nice salad. This can either be a starter or a light, non-fattening lunch with an icy glass of Sauvignon Blanc! (I used local salmon trout instead of our very expensive imported salmon). Exact quantities are not of great importance here. -- posted by Zurie

Grilled Asparagus and Sweet Potato Miso Soup

Although you can use American sweet potato, it is best with Japanese sweet potato if you can find it. Besides asparagus and sweet potato, you can certainly add slices of kabocha and green beans as well. This is a very basic miso soup and you can add other ingredients as well. This makes small 4 servings ie what I call Japanese serving size, less than 1 cup per person. -- posted by Rinshinomori

Fresh Asparagus, Onion, Potato Soup

Easy and quick with the help of a food processor. This couldn't be easier and a great soup to make in a hurry. Serve as a starter for dinner or a main course with a side salad or sandwich. I make this often when my grocery store puts asparagus on sale or when they have it at the Farmers Market. It is easy on the budget and just comforting. You can top with some diced sauteed bacon, a toasted baguette or even some grated Monterey Jack cheese, which is creamy when it melts. -- posted by SarasotaCook

Pan Roasted Asparagus With Red Onion and Bacon

Published in Cook's Illustrated, March-April 2007. The recipe recommends using asparagus that is at least 1/2-inch thick near the base. If using thinner spears, reduce the covered cooking to 3 minutes and the uncovered cooking time to 5 minutes. Do not use pencil thin asparagus; it cannot withstand the heat and overcooks too easily -- posted by swissms
