Of course I've modified it throughout the years, but I NEVER would have come up with something like this on my own.  We literally make this about once a week (my boyfriend would probably be OK with it if we had it more than that).  It's so quick and easy (we don't simmer for the full hour when we're short on time, but it's best when you can), totally different than our other &amp;quot;usuals,&amp;quot; and it's healthy.  Note that this recipe calls for two cans of clams...one drained, one un-drained. Scampi minus the butter and wine. Keep a bag of frozen (raw)  shrimp in the freezer and you can have a quick and easy weekday meal on hand. To say that grapefruit is my favorite fruit would be an understatement, although I would like to test this recipe next time with yellow-fleshed grapefruit. My brother mentioned this combination might taste good on shark and I think he's on to something. Serving suggestion: pan-grilled asparagus, roasted potatoes and a glass of Eola Hills pinot gris. 			<description>Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac &amp;amp; cheese or fried potatoes.

You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture.

The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that!
