I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. This recipe freezes nicely and the leftovers are wonderful the next day.  If you want, you can saut&amp;eacute; onions in some butter and serve on the side.  I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. I used the Kraft three cheese crumbles (monterey jack, colby and cheddar) in place of sharp cheddar and I think that is what made it SO yummy!
