			<description>A hearty and satisfying meal that is sure to please everyone in the family, even the vegetarians. A perfect supper for a crisp fall evening. Pair it with a green salad, and you are good to go. My youngest son, Justin, does not like tomato sauce; I cook his shells separately placing some milk in the bottom of the dish so they stay moist. 

Tip: For a change of pace, add fresh chopped spinach, prosciutto ham, fresh chopped mint, and some pine nuts to the cheese mixture. Fill some of the shells with the basic mixture for the kids and fill the rest with the additions for the adults or adventuresome eaters. My grandmother always included fresh mint; it adds an unexpected and worthwhile lift. 

Time Saving Tip: Double the recipe and freeze the extra shells for dinner at a later date. These shells will keep well in the freezer, and you do not have to defrost, just add an extra 10 to 15 minutes to baking time. 

Servings: 6 
Preparation Time: 20 minutes

I threw in an extra tomato because it tastes fresher and some extra chives.  You could probably top this with nuts or cheese or olives...whatever your heart desires.  I think this would make an easy potluck dish or a whoops we have unexpected company and now what are we going to feed them last minute meal. This gives a nice lighter version, with none of the traditional parmesan or mozarella cheeses.  It is a rich - but lighter at the same time dish. This is great served as a nice light &amp;quot;NO meat&amp;quot; dinner with a fresh arugula salad or fresh fall salad with diced apples and pears and a tangy honey vinaigrette would be amazing with this dish.  Originally, I had this dish at a small dinner party quite a few years ago. The host hated tomatoes and most traditional Italian dishes, so this was her version of stuffed shells. Well I loved it. She served it with sauteed spinach and a fresh simple tomato salad on the side. Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. Being a vegetarian she was always looking for some unique ways to enjoy traditional dishes since her boyfriend was a &amp;quot;meat eater.&amp;quot;. Now her pasta, and cheeses were tailored to her diet requirements so I tailored it to mine.  Now if you want, you are welcome to make your own tomato sauce, etc. and I do sometimes, but there are some quality pasta sauces out there.  When my tomato plants are flourishing, absolutely make my own sauce.  I changed a few ingredients, but these are definitely worth it.  It is a little work but so well worth it and you will certainly have leftovers.  I served a chilled romaine salad with a blue cheese vinaigrette and some crusty Italian bread with a basil butter.

			<description>This is quick, easy, and makes a great light dinner.  I love salads, and love to try to come up with something new that is still hearty, satisfying and easy.  I love to serve this with a hearty creamy white bean soup, or maybe a fresh garden potato soup or your favorite. Also, fresh grilled asparagus, grilled zucchini or marinated mushrooms or some green beans. I serve these pretty shells over a small bed of lettuce and let the fresh tomato vinaigrette be the dressing for that as well.  One last note ... you can use canned or packaged tuna (I prefer the packaged, much nicer texture), but I use fresh tuna for this.  It literally takes 5 minutes or less to saute, let it cool as you cut up and prepare everything else.  Stuffed shells and then drizzled with a fresh tomato vinaigrette over fresh greens makes a great salad option to that every night tossed salad. Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese!  Delicious!  Even my daughters loved it! (3 yrs &amp;amp; 7 mos) I just took the chicken out for my baby girl, mashed it up, and she couldn't have enough!
