Made this a couple of days ago. I was really afraid one box of fettuccine wasn't going to be enough, but it turns out perfectly. I used my mandoline thing to julienne the zucchini. Everybody in my meat-loving family enjoyed this hearty, healthy vegetarian dish. Very filling. I also used a big (like 30 oz?) can of diced tomatoes, drained instead of fussing with fresh ones. I also used the Parmesan cheese out of the container, but it would be awesome with fresh! As always, you can adjust the garlic, cheese, and red pepper flakes to your tastes. 			<description>A couple of notes about this recipe. 
First of all, this is a recipe for one person. I know that doesn't seem true, but the 4 coups of water boil down really fast. 
Secondly, I usually soak my lentils beforehand because it makes them cook quicker. 
Third, I put &amp;quot;2 oz&amp;quot; of pasta, because that's usually the serving size for one person for pasta... sometimes it's 1/4 of a cup, and sometimes it's more. Just go with what the box says, or whatever you feel is good for you.

* Kochukaru and Kochujang are typical Korean ingredients for Hot Pepper Flakes and Hot Pepper Paste (in that order)
* If you do not have these available, I have included Cayenne Pepper and Maggi Sweet Chili Sauce as you can get the at most grocery stores

An easy and quick version of pasta so you can have some variety with the pasta! Finished with a salad, its a great, well-rounded meal! You can also add extra veggies and spices as you want (I like to add some garlic and red pepper flakes). You can also add cheese on top- I didn't so it would be lactose-free (although you can add goat cheese for lactose free as well!).

This recipe freezes nicely and the leftovers are wonderful the next day.  If you want, you can saut&amp;eacute; onions in some butter and serve on the side.  I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. Serve the wontons in a mild, low sodium vegetable broth (chicken flavor if possible).

You can double or triple the wontons recipe, lay them out on a cookie sheet, and freeze them, then bag them and take them out to make soup in small quantities.
