California Quinoa Salad

My step mom brought this to our family's weekly lunch and visit. It was enjoyed by all ages (which ranged from 1 to 71! I am not sure where she got this recipe, but it is definitely going in my "tried and true" recipe file. Very good, very flavorful...and good for you! It has a nice, colorful

Paula Deen's BBQ Meatloaf

I didn't see this one posted.. this meatloaf is AWEsome, i have made it too many times to count, do make sure you don't skip the basting process.

I also use the extra sauce( skimmed of fat) and put it over some cooked egg noodles or rice.. YUMM. This also makes a great cold sandwich the next day.

On a side note i did saute the onions a bit before adding them, just my personal preference -- posted by onegoofydevil

Apple Pumpkin Bisque

It’s amazing when two ingredients intertwine so perfectly, that regardless of how hard the palate may try, it can’t coax them apart. That’s what happens to the applesauce and pumpkin purée in this sweet and savory soup. The pumpkin gives substance to the apple; the apple makes the pumpkin sweet and tangy. Eaten together, they become a totally new taste sensation -- and a great way to fit fruit and veggies in!

Lime in the Coconut Jello Shots (With Coconut Milk)

This is a fun & tasty treat to serve at parties. I found this on another web site when I was looking for jello shooters for our Hawaiian ethnic party. It didn't say what size of jello pkgs to use, I used small ones & for coconut milk I estimated @ 13 oz. I liked these because they weren't quite as sweet as other jello shooters & smooth tasting with the coconut milk. -- posted by Mustang Sally 54269

Caramel Apple Eggrolls ( for Christmas)

These are wonderful for the holidays! They're fun to make, something that the kids can help with, and they're so good! You don't need to wait for a holiday to make and enjoy them. I've made them a few times now, I took some to a Monday night football party and they were gone before I even got settled! The smell alone is enough to remind you of apples, spices, parties and people you're happy to be with. Enjoy!
Note: Times vary, depending on if you are doing it alone or with help. I will "guestimate" for the sake of the computer. I add chopped walnuts to mine. You may try them or not, totally up to you. -- posted by FLUFFSTER

Lemon Chicken and Broccoli

This recipe is from the April 2005 Chatelaine magazine. I made this for dinner tonight and everyone enjoyed it. We thought that the only improvement that could be made is to this recipe would be to add some sliced mushrooms to the chicken component. A variation would be to use asparagus instead of broccoli and shrimp instead of chicken. This is an excellent sorce of folacin, niacin, thiamine and vitamins B6 and C. -- posted by Eldeevee

Garth Brook's German Chocolate Cake With Coconut Frosting

Trisha Yearwood says every February, when it's Garth Brooks birthday, she makes this beautiful and delicious cake for him. She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! If you have some frosting left over, it's good spread on graham cracker or on brownies. Okay, it's also good right off the spoon! Enjoy! -- posted by Sharon123

Altered Recipe from Red Mill product: 10 Grain Hot cereal.

These ones are also a lot fluffier in my roommate's and my opinion.

Nickey’s Peanut Butter-Raisin Cookies

Here’s another of our favorites. I usually put about a half cup more peanut butter but then … who’s measuring. If you like your cookies really sweet, just increase the brown sugar to 1 cup firmly packed. You may also use semi-sweet chocolate chips instead of the chocolate-coated raisins. The amount of cookies will depend on the size of the balls you make. When baking, the cookies will spread out a little … not too much. It doesn’t matter what kind of peanut butter you use – I personally prefer the creamy but the chunky should be just fine. These cookies turn out on the softer side (not crispy)…a little chewy. -- posted by marisk

These are so easy and quick to prepare. You put them right on the grill next to the other things. They make such a nice side dish for barbecued meats and what flavor! These were a real winner at our house! I have also made them filled with chili.
Baked Apples Stuffed With Cranberries and Almonds

Serve these tender apples with a sweet-tart filling alongside roasted turkey or pork, a delicious pairing with the apples' hint of cardamom - though you could substitute cinnamon. They make a great stuffing alternative for those who don't eat wheat or gluten. They're also tasty for breakfast, snack or dessert -- perhaps with whipped cream.
Utterly Amazing Blue Cheese Dressing And/Or Veggie Dip

Utterly amazing as a salad dressing or thinned out for a dip for veggies. . I usually use 8 oz of blue cheese 'cause I love the blue cheese chunks!!
I made these for my hubby who loves crab cakes. He said these are the best he has ever had. I got the recipe out of my Betty Crocker Cookbook. You can make these OAMC by making the patties, bread with crumbs, place several in a freezer bag with parchment paper in between each patty and freeze. Thaw in refrigerator overnight and cook in oil as directed. These take less than a 1/2 hour from beginning to end.
Strawberry Lemon Marmalade

I just made this recipe, and it is soooo good! Beautiful, jewel-toned strawberry jam with a touch of lemon--I found the recipe in the Ball powdered pectin box. My chef husband gave me a bar zester years ago, and I use it to get a fine, delicate lemon peel with no pith. If you don't have a zester, prepare the peel to your preference, but be sure to remove as much of the pith as possible.
This jam set up quickly for me, and I would recommend turning the jars after they seal to distribute the fruit pieces. I can't wait to give this as gifts for the holidays! -- posted by Deb Redfield

Tequila Chicken Chili

DH and I made this chili from Normal Kolpas' "The Chili Cookbook" and really enjoyed it. We served it over basmati rice. While the recipe calls for masa harina, I really didnt think the chili needed thickening (it was plenty thick) and in the last chili recipe I included it in, I thought it detracted from the flavor a little bit.
Hearty Ground Turkey Chili

DH and I enjoyed this hearty chili from Norman Kolpas' "The Chili Cookbook." While the recipe calls for masa harina, I think I would omit it next time as the chili really did not need extra thickening and I think it detracted from the flavor just a bit. Also, DH and I ate this chili in a bowl, we did not serve it over rice. It lent itself well to this method. I used baby bellas for the mushrooms. Finally, we sprinked colby jack (I think that was what I had in the fridge) shredded cheese over the top, which I think is a must. Cheddar or a mexican blend of cheeses would also be good. -- posted by Dr. Jenny

Brown Rice Tangi Salad

This is an easy to make family favourite given to me by my mother years ago. A delicious, high fibre way to include more brown rice in your diet. It improves on standing so if I'm wanting to take it to a BBQ or pot luck dinner, I'll make it the day before then chill it over night. The brown rice gives it a lovely nutty, chewy texture in a sweet sour dressing. Everyone will be coming back for more and want the recipe.
Pumpkin Lasagna

Italian-Americans often serve lasagna or another pasta dish before their Thanksgiving turkey, and it got us thinking – what would happen if we cooked pumpkin, the most iconic Thanksgiving food, in lasagna. The result is a delicious blend of traditions. Made heartier with the addition of ricotta cheese, mushrooms and greens, this vitamin-A rich pumpkin lasagna can be served as a sophisticated side dish or a substantial vegetarian entrée (perfect for the vegetarians at your holiday table, too). -- posted by Chef #1365024

Tessa's Homemade Vanilla

If your've never made your own vanilla you've got to try it. It's nothing like the store bought kind, not even good quality pure extracts (and it's way cheaper). People will wonder what happened to your baking. It goes from average to incredible as soon as you start using this vanilla. You can use more than is usually called for in a recipe because there isn't any of that bitter after taste. Just make sure that if you're using lots you cut back slightly on some of the other liquid. It also makes a good Christmas present. You can try it using any sort of hard liquor you want, I've simply listed my preference. Also, Make sure you're using Vanilla beans from Madagascar, the cheaper ones from Mexico aren't true vanilla beans are actually toxic. You can reuse the beans up to three times (just let it steep a little longer each time) and once they've been all used up you can dry them and add them to your sugar. They'll still release flavour. The cook time refers to the time it takes to steep it, I always cheat and start using it early though. -- posted by TessaDerus

DH and I really enjoyed this recipe from Bon Appetit. The original recipe also lists a polenta recipe to serve the lamb patties over, but I am not a big fan of polenta. The recipe also stated that you could serve the patties over penne, ziti, or rigatoni noodles. We opted to serve over penne and it worked out quite well. -- posted by Dr. Jenny

Cornish Hens and Vegetables in Foil Packets

This makes the most moist and delicious cornish hens I've ever tasted. It's from 365 Ways to Cook Chicken. The beauty of this dish is threefold. First of all. the individual packets can be prepared hours before dinner and refrigerated. Secondly, for those on a low-fat diet, this method of cooking is ideal: simply reduce the butter to 1 teaspoon a serving. And last but not least, the bright yellow squash, orange carrots and red-skinned potatoes make a lovely presentation. A mandolin or food processor with slicing blade makes for a quicker prep. -- posted by Cheri in Glen Ellen, CA
