Chicken, Barley and Mushroom Soup - 4 Ww Pts.

One of my all-time favourite soups, this is rich and very tasty. No one needs to know that it's healthy! You really should use the chicken thighs because it contributes a lot to the flavour and richness. Enjoy! -- posted by Nif

Peanut Butter and Pickle Sandwich

There are a few other PB&P sanwiches on Recipezaar, so I know I'm not crazy. These are only slightly different because after trying other pickles I think the bread and butter pickle chips are best for this. I use a brand called Bubbies which I highly recommend. -- posted by Ilysse

I have been asked so many times to enter it in a cooking contest.
Greek Meatballs, Feta Yogurt Sauce and Lemon Couscous

Yummy, a whole different way to eat meatballs. No Italian sauce, but a creamy Feta sauce and lemon couscous to serve everything over versus pasta. It really is great and honestly doesn't take long. Couscous as you know takes 5 minutes. I make the dressing ahead and you are only left with the meatballs which you can actually make ahead, refrigerate or freeze and then make later. A salad on the side with a lemon vinaigrette and fresh tomatoes and dinner. Can't get much easier. Give it a try, you will love it if you enjoy greek flavors like me. -- posted by SarasotaCook

Sticky Toffee Pudding

This is a great winter 'pudding' in the British sense, (dessert for the rest of us) when you have company over, or when you just want something sublime for your family. This is warm, sweet, slightly spicy - comforting and good. I like to serve this with my Recipe #77305. This makes 6 one-cup ramekins or you can make 8 3/4-cup size ramekins. -- posted by evelyn/athens

Grilled Asparagus and Sweet Potato Miso Soup

Although you can use American sweet potato, it is best with Japanese sweet potato if you can find it. Besides asparagus and sweet potato, you can certainly add slices of kabocha and green beans as well. This is a very basic miso soup and you can add other ingredients as well. This makes small 4 servings ie what I call Japanese serving size, less than 1 cup per person. -- posted by Rinshinomori

Unlike cranberry sauce, a relish involves no cooking. Here, plump raspberries add a juicy freshness, while crystallized ginger provides sweetness and warmth. It is best served cold.
Honey-Mustard Turkey Burgers

Burgers made with ground turkey are a lean alternative to beef burgers, providing you choose turkey ground from the breast. Regular ground turkey, which is a mixture of light and dark meat and some skin, contains almost as much fat as lean ground beef. A honey-mustard mixture keeps these low-fat patties moist and succulent.
This one dish roasted chicken dinner is made in 1 hour, with ingredients that you always have on hand. I use different spices everytime I make this, so feel free to mix it up and try different flavours. The best part is how moist the chicken comes out everytime.
All of the veggies are optional and you can substitute for anything you have on hand.

Creamy Ricotta Florentine French Bread Pizzas

This french bread pizza contains no pizza sauce, instead you use ricotta, spinach, and the "toppings" and top it off with creamy provolone cheese. This makes a great dinner of fun party starter. This pizza is meant to be super chunky so don't cut your veggies or meat too small.(The pepperoni should look like tiny pieces of pie.) If you want your pizza filled more, just use less bread. For a party, I cut mine into slices about and inch or two inches thick. Easy to make meat-free! I usually make a greek salad to go along with it, the tang from the salad is great with the creamy texture of the pizza! -- posted by Courtney R

Braised Lamb Shanks With Leeks

Slowly simmering lamb shanks make them fork tender. The smells of rosemary and leeks make the house smell amazing. This is very easy, based on A Williams-Sonoma recipe. While shanks are called for you can make this with a whole or half leg of lamb, just increase the simmering time. I always serve this with garlic mashed potatoes and peas.

Found this recipe on Care2 website @ http://www.care2.com/greenliving/ten-mothers-garlic-and-spinach-soup.html

Adapted from The Roasted Vegetable, by Andrea Chesman (Harvard Common Press, 2002).

This delicious broth, redolent with garlic and enriched with the vitamins and minerals of fresh spinach, takes its name from an old folk saying that garlic is as good as ten mothers.

This soup is not only tasty and nourishing, it makes a comforting remedy for winter sniffles and sneezes. -- posted by SassiFras

Light Lasagna

From Cooking Light a long time ago. I lost my hard drive and want to save this for the future. I make this for my family and friends and they don't know it's light. The original recipe called for non fat cottage cheese and non fat ricotta, but I use low fat and part skim, they taste better to me. I also use the oven ready lasagna noodles, which weren't in existence back then. Trust me, you'll never miss the mozzerella cheese, the provolone is so much more flavorful. -- posted by Chef #455710
