Kate's Italian Tomatoes

Simplicity! I always serve tomatoes with steaks to help the B vitamins digest. For years, I have heated a can of Italian plum tomatoes with a little Italian seasoning and a sliver of butter. Last night I used the remaining San Marzano plum tomatoes from another recipe and decided my U.S. palate would have welcomed a teensy bit of sugar. My brothers liked these better than the breaded stewed tomatoes MDM used to make (she exclaimed, "I SAW WHAT YOU DID!"). I serve these in their own bowl. -- posted by KateL

Italian-Style Chicken and Rice

I'm not really sure why it's Italian Style, lol, but I heavily modded this from a recipe in 'The One-Dish Bible.'
Chinese Pork & Vegetable Stir-Fry

Everyone in the family loved it.
I love the tang of the orange juice with the zip of the soy sauce.
Do not use frozen vegetables you can't drain them well enough and they tend to get mushy.
I used Pork Tenderloin for this recipe.

Recipe can be found in Lipton Secrets Classic Recipes .

Authentic Cajun Chicken and Sausage Gumbo

Some people think that New Orleans cuisine is Cajun cuisine. It isn't. It's Creole cuisine, where most sauces and gravies are prepared with tomato. To delight in true Cajun cuisine, one must travel west of New Orleans into Acadiana, where, in my opinion, the food is much better! Just be sure that you like spicy, because most of it is highly seasoned. My mother taught me how to make Gumbo. I usually make enough to freeze in portions so that I'll always have some on hand. Potato salad is traditionally served as a side dish.....oh, and of course, some good, crusty, garlic french bread to sop up the juice. :) -- posted by Irishcolleen

Easy Pita Turkey Tacos

An insanely easy to make turkey and pea combination packed into fresh pita pockets. Regardless of the smoky taco seasonings, this quick meal has a distinctly Mediterranean feel. I came across this recipe the day after I learned to make pita bread. I had some things lying around and decided to throw some things together. I got the pita recipe from Cooking with Just Four Ingredients bu Joanna Farrow.

This can easily be tweaked to suit your personal tastes. It could also be served over rice and is DELICIOUS mixed with a simple mac and cheese. You can also use store-bought pitas to take out most of the work.

I am TOTALLY unsure of servings. I apologize, but I live alone and usually don't prepare food at their intended serving size.

Prep and cook time is for pita bread. The filling takes about 15 minutes. -- posted by Andi Panda

How To: Make Sunny Side up Eggs

After making perfect roasts, fish, rice, and pasta using the cook-off-of-heat method, I tried it on sunny side up eggs with perfect results every time. A lid is necessary for this recipe's method, and a clear lid is helpful. This is now my go-to snack when I want fast comfort food. After seeing fellow college dormmates make rubber sunny-side-up eggs, I figured posting my method on Zaar might be a good idea to spread the joy of lovely sunny side up eggs in all its runny-yolk glory. Always add salt only right before cooking or after cooking eggs, because salt will start the coagulation process prematurely. In the case of sunny side up eggs, the salt particles will cause the area it's touching to cook faster during the time in the pan, so it's best to leave the salt off until the egg is ready to be served. I love this draped over a slice of bread - simply heaven. -- posted by FuzzyKiwi

Lamb Shanks With Verjuice

Pub Patties (Burgers) With Horseradish Sauce and Cress

Entered for safekeeping, From Every Day with Rachael Ray, June/July 2009. If only the Wimpy burger I tried long ago had been anything like this! This is very British with horseradish, Worcestershire sauce, and watercress (although the British prefer cress sprouts, which are tinier and have excellent flavor, but in the U.S. you'd be lucky to find watercress). Personally, I love the bite of horseradish with my beef. -- posted by KateL

Baked Macaroni & Cheese

Here's a classic mac & cheese recipe given to me by my (would-have-been) mother-in-law many years ago. It has become a family favorite, and I get asked to make it nearly every Thanksgiving and Christmas. It makes enough to feed a small army!

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

Leftovers can be easily cut into squares, wrapped with wax paper and frozen. Then just take one out and nuke it for a great side to go with a sandwich. -- posted by Chef #1299589

Sweet & Sour Sprouted Mung Beans

This is an Indian hearty dhal (lentil soup) from the state of Gujarat, that was taught to me by mother-in-law. The preparation requires some planning, but the results are excellent.

Two notes: 1) the original dish was meant to be 'Saatvic' (a type of Hindu food considered pure), which usually means no onions or garlic, but it is tasty both ways and; 2) the recipe calls for jaggery, which can be bought in a local indian grocer, but sugar works almost as well. -- posted by Meera

Patio Pancakes

Boy, these are some of the best pancakes I've ever had.
They do have quite a bit of butter in them so it's wise not to let them cook unattended. They are quite rich, light and fluffy. You don't need to grease your non-stick pan. I don't think they need that much syrup, I didn't use any butter aside from what was called for in recipe. All 4 members in my home love them. I made these two times in 2 weeks and froze enough for 6 meals. The recipe says you should get 24 pancakes I got 29 both times.

If it looks watery don't worry it will be fine, I was so freaked that I did something wrong. I rechecked the recipe and I didn't do anything wrong.
So I left it alone and cooked them and the pancakes turned out fantastic.

Cooking time approximate.

Easy Noodle Soup

This is a very easy recipe that I came up with one afternoon. Its half way between a soup and a pasta, great for kids who say they don't like soup. I use Ham but you can substitute it for chicken, tuna or a meat you normally use. For larger servings just add about 1/2 cup of pasta for each extra person. Just incredible. Add nuts for extra flavor. The recipe comes from a Canadian Living cookbook and can be found on the Canadian Living website. Worth the time it takes to make, particularly for special occasions. -- posted by KimEBdos

This is a culmination of spinoffs from several different recipes. They were so yummy, I had to write it down. It looks long, but that's mostly marinating time and cutting-up vegetables (which you can do while the meat is marinating and the rice is cooking), so you can easily do everything in about an hour or so. An impressive appetizer or wonderful light dinner.
East Meets West Vegetable Soba Stir-Fry

I came with this one afternoon whilst in the mood for a stir-fry & the taste of soy.
I used butter instead of oil to give it a creamier, almost cheesy taste that still allows it to maintain its Eastern background, but with an Italian perk.

It can easily be doubled & you can add tofu for more protein & bell peppers for more of a zip. -- posted by SamiBTX

Pan-Seared 5-Spice Tilapia W/ Hot-Orange-Ginger Sauce

Spice rubs are the perfect way to jazz up mild-flavored fish and poultry. This rub - a blend of spices, herbs, salt, sugar and oil - transforms into a falvorful crust when cooked. Here we brushed the tilapia with a combination of Chinese Five-Spice Powder, salt, cayenne pepper, and oil. A purchased blend of Chinese Five-Spice Powder or one you have made is great - either one will work. CuisineAtHome.com: Issue 73 February 2009 edition.
