Pierogi Filling

I grew up on Mrs. T's, never knowing what a homemade pierogi tasted like. I still have love for Mrs. T's, but there is nothing like a homemade pierogi; it's the ultimate comfort food for me. I won't bother to put up a dough recipe since there are so many good ones out there but I will advise never to trust a pierogi dough recipe that doesn't call for sour cream. So here are my recipes for potato and cheese, cabbage, and meat fillings. I try to cut a few corners since making pierogies is an all day event. They are all my own creations with the exception of the hunter's seasoning mix which I found in a traditional polish cookbook called "Polish Holiday Cookery" by Robert Strybel. You can make your own mix by using the instructions below or order the seasoning mix from an online food exporter or specialty store. -- posted by OwlMonkey

Barley Vegetable Soup

This recipe is a variation on the 'Big Batch Vegetable Soup' recipe from marthastewart.com. It is both colorful and healthy, and makes a large batch that can be frozen for enjoyment at a later time. Makes approx. 8 (2 cup) servings.

Note: If desired, you may substitute barley with rice, or perhaps a small pasta such as alphabets, orzo, or ditalini. Veggies may be fresh, frozen, canned (rinsed and drained), or a mixture of each to save time/money. -- posted by megmay8

Tagliolini With Pecorino Romano and Black Pepper

Don't let the number of ingredients fool you, this dish offers a lot of flavor despite it's simplicity. Be sure to get high quality ingredients; it makes a big difference in a recipe with so few ingredients and it's still ridiculously cheap to make. Even the pepper is important, don't use the powdery stuff that's been sitting around for a year, splurge on some high quality peppercorns; you won't regret it.

The lack of oil is one of the most notable things about this recipe. While some add oil or butter to this dish, you'll find it really isn't necessary. Instead you use the starchy pasta water to create an emulsion sauce with your cheese which will stick to the pasta beautifully. As for the pasta itself, taglioni is a particular cut, but this recipe would work just as well with something thicker like tagliatelle or fettucine.

Although it's an old Roman favorite, I got this recipe from a recipe blog called "Rachel Eats" which I highly recommended. I wanted to post it on here to give it a wider audience. -- posted by OwlMonkey

Lentil Tabbouleh

I love tabbouleh, and this recipe is really refreshing to enjoy on a hot summer's day. The recipe comes from the July 2009 issue of Good Housekeeping. This makes 12 side-dish servings or 6 main-dish servings. The cooking time is actually the time needed for cooling and refrigerating. -- posted by TasteTester

Blueberry Banana Bread or Muffins

If you've never tried blueberries and bananas together, you're in for a treat! This is a delicious bread, and simply fabulous as muffins. Remember to use very ripe bananas for the best flavor - I wait until they're completely brown, and then peel and put in the freezer so that I can make banana bread whenever the mood hits me! -- posted by Lizzymommy

Easy Tri-Color Pasta Salad

Simple recipe for tri-color pasta salad. This recipe uses fresh mushrooms, onions, green peppers, etc. You can alter this recipe to suit your taste. Sometimes I throw in a chopped cucumber or broccoli florets. You can add diced pepperoni or baby shrimp. Great for summer picnics & BBQ's! Note: I use 1/2 to 3/4 cup of the prepared Good Seasons Italian dressing made in the cruet - depends on how many vegetables I add in on how much dressing I use. -- posted by BlondieItaliana

Horsey Ham Casserole

It's not what you think! The "horsey" in this recipe is horseradish. When I was young, my mom would make this maybe twice a year, mostly for potlucks and family gatherings, and it was always (and still is) one of my favorite foods.

I RECOMMEND CUTTING THIS RECIPE IN HALF! As it is written here, it makes about 20 servings, but it CAN BE FROZEN. So, if you don't halve it, you can at least freeze half of the finished product and save it for a couple weeks later. -- posted by grungezombie

Fat Free, Low Cal Biscuits!

Let me start off by saying HALLELUJAH!! My parents are BIG biscuit eaters, and dinner every night is a battle for me to turn down the biscuits. I adapted this recipe from a traditional "mayo" biscuit, and it is yummy! They come out very fluffy and are not cursed with the nasty baking powder flavor that most healthy biscuits have. I hope to soon experiment with oat flour in this recipe!! This is by far one of my favorite healthified recipes! -- posted by Health Nut 101

Corn Griddle Cakes

This recipe is a cross between South American arepas and traditional pancakes. They make a great side with barbecued meats, or they can be served with butter and honey at breakfast.
These cakes can be made ahead and reheated in a 400° oven.

Sweet Sticky Rice With Mangoes and Sesame Seeds

My favorite dessert when I'm at a Thai restaurant or I've just had sushi is the sticky rice with coconut milk. I was so excited to find this recipe in Food and Wine June 2009. I used a Basmati rice (like you would use for sushi), but I'm not an expert on Thai sticky rice. I think you can even buy the rice already cooked, but this is really a simple concoction. I didn't have mangos but used fresh peaches instead and still LOVED IT! This is a recipe I'll definitely make again. Personally, I'd use a little less salt in the Rice (1/2 tablespoon instead of a tablespoon), but that's a personal preference. Don't be alarmed by the total prep time because this is not a labor intensive recipe. -- posted by AmyZoe

Baked Manicotti

Source: Cook's Illustrated
We prefer Barilla no-boil lasagna noodles for their delicate texture resembling fresh pasta. Note that Pasta Defino and Ronzoni brands contain only 12 no-boil noodles per package; the recipe requires 16 noodles. The manicotti can be prepared through step 5, covered with a sheet of parchment paper, wrapped in aluminum foil, and refrigerated for up to 3 days or frozen for up to 1 month. (If frozen, thaw the manicotti in the refrigerator for 1 to 2 days.) To bake, remove the parchment, replace the aluminum foil, and increase baking time to 1 to 1 1/4 hours. -- posted by Brookelynne26

Tomato and Spinach Garlic Linguine With Feta

Creamy, garlicky, easy to make, and just oh so yummy! You can use whatever type of linguine you prefer. I've made it with plain, spinach and chive, and garlic. When not using the Garlic Linguine, I add 1 tbl of minced garlic to the green onions and broccoli. You can add chicken to make it even more heartier, and different veggies to suit your family's tastes. Don't skimp on the feta; that's what makes it tangy and delicious. -- posted by jusme

Shredded Wheat Cookies

This is how I get rid of our extra plain, boring shredded wheat that no one really wants to eat. They are crunchy, but still soft. To my taste buds, they fashion a taste somewhere in between peanut butter cookies and oatmeal cookies, but with a crunchy aspect to them, paired with a hint of chocolatey goodness. The baking time is for a couple batches, but it will vary depending on how big your oven and/or baking sheets are. -- posted by zoegirl21

Perfect Summer Sandwich (Tomato, Basil, Cheese)

This sandwich screams summer to me. I made it after going to the farmer's market and getting lots of fresh ingredients, including wonderful herbed ciabatta bread. If you don't like garlic much, just rub a clove on there (sliced to get the flavor. This is also delicious cold, or with a drizzle or balsamic vinegar on the tomato. For a slightly different (equally tasty, if you ask me) option, use havarti slices instead of mozzarella.
Spicy Sausage Rice

I found this little gem on the Love Food Hate Waste website, tried it at home and realized how great it is! The taste is amazing, and you can alter how spicy it is by what type of salsa you add. This recipe is also great for families, if you want to use up some of your leftover sausages! Thanks, Love Food Hate Waste! NOTE: For the stock, I use whatever flavor stock that my sausages are, beef/chicken etc. If you aren't into too much of a spicy kick, try mild salsa. Remember, that stock is the stock powder + water, not just the powder. -- posted by Country Girl825

East Meets West Vegetable Soba Stir-Fry

I came with this one afternoon whilst in the mood for a stir-fry & the taste of soy.
I used butter instead of oil to give it a creamier, almost cheesy taste that still allows it to maintain its Eastern background, but with an Italian perk.

It can easily be doubled & you can add tofu for more protein & bell peppers for more of a zip. -- posted by SamiBTX

Fire Roasted Tomato and Zucchini Vegan Pasta

This fantastic blend of fresh vegetables, fire roasted tomatoes and peppers, and pasta can be modified to include any seasonal vegetables. It's easy, healthy and delicious!
You can find fire-roasted tomatoes and fire-roasted peppers at most grocery store olive bars, including Whole Foods. If you don't have access to these, you can make your own, substitute sun-dried tomatoes, or substitute fresh versions. The beautiful thing about veggies is that there's no "right" way to do things!
You can also substitute basil or oregano paste or powder for the fresh version, if you need to - but fresh is best! -- posted by Mountain Bike Mom

Best Ever Fried Rice

This recipe comes from Cooking Light, September 2005 and is without a doubt the best fried rice I have ever tasted. Not only great tasting but very easy to make as well. I have modified the original recipe slightly to reflect our preferences for oil, meat, veggies etc. The original recipe calls for shredded lettuce as an ingredient however I have never tried it this way. I will list it as an optional ingredient. The sesame oil is the secret ingredient as far as I am concerned!! Don't be shy, give it a try!! -- posted by NanuqsMom
