Creamy Chicken Marsala

I have a recipe for a more traditional chicken marsala, that we enjoy but thought I would play around a bit the other night and came up with this one. It turned out really well and whilst I probably still prefer the more traditional recipe this make a nice change. I made this for just 2 of us but the sauce ingredients would make enough for 3 people and would probably stretch to 4 servings if you do not like things very sauce as we do. I served ours over wild rice and asparagus so we enjoyed the extra sauce over the rice. -- posted by The Flying Chef

Très Rapide French Summer Tarragon Chicken

A simple supper or luncheon recipe that can be whipped up in a trice! Organic chicken breasts that are diced and then sautéed with fresh tarragon and crème fraiche with just a hint of lemon juice! This can be made in less than 15 minutes from prep to plate, making it an ideal recipe for busy bees or couch potatoes! I love this served with a simple selection of salad leaves and herbs dressed with a classic France dressing. Do try to use fresh tarragon, I have not tried this with dried, but imagine that it will not be as zingy and fresh. This is not necessarily a summer recipe, but my tarragon is out at the moment, the sun is out and therein a name was born! Bon appétit! (This recipe is an adapted version from the Idiot Proof’s Diet book. I tweaked it as is my want!) -- posted by French Tart

The Best Chicken and Dumplings

This is the perfect comfort food for those chilly winter nights, and with the long simmer time it will nicely warm up your home. I adapted this recipe through a combination of many sources and a little ingenuity since I was dissatisfied with each of my individual attempts. None of them tasted quite right. The original sources were a cookbook called "the firehouse cookbook", which offered the addition of evaporated milk as a healthier (and still delicious) substitution for heavy cream. And the cookbook which added the necessary addition of vermouth is called "The Best Recipe". It's a constantly changing evolving recipe so feel free to offer your additions or suggestions. I'd love to hear them. -- posted by OwlMonkey

Chicken Bouillabaisse Style

Nif's Light Grilled Marinated Chicken

A nice light, yet flavourful dish that is easy and the breasts can be served whole or on skewers. If you are using wooden skewers, be sure to soak them in cool water for 30 minutes. I also place a strip of tinfoil under the exposed skewers when on the grill. I recently purchased metal skewers and I really like them. I did not include marinating time. Enjoy! -- posted by Nif

Chicken Salad Like Whole Foods'

This salad is very similar to the Sonoma Chicken Salad at Whole Foods' Deli. I love it - just not the hefty price tag. I enjoy creamy chicken salads with grapes and hope others will too. This is a combination of some other chicken salads and the ingredient list from Whole Foods. Plan ahead, the dressing should sit overnight in the refrigerator to meld flavors before adding to the other ingredients. -- posted by Garlic Chick

Healthy Sweet & Tangy Chicken Delight

Something I put together combining aspects different recipes. This recipe resembles many "enchilda" chicken dishes seen on zaar, with one particular difference being the use of yogurt. This adds to the protein of the meal as well as the flavor while not adding to the calories that heavy or sour cream would. An odd substitute you might say? Not at all, many Indian curry recipes use it as a healthy substitute for cream. The 'tang' of the yogurt blends well with the sweet salsa and combines harmoniously with the natural sweet & tangy flavor of the fresh cilantro. Please enjoy! -- posted by Chef #1315437

My Version: Carino's Spicy Romano Chicken

My favorite restaurant in the world is Johnny Carino's (a.k.a Carino's Italian Grill) and my favorite recipe is their Spicy Romano Chicken. Well I've tried other recipes that I thought were close but I recently tried a recipe by Guy Fieri and after a few changes I think I've come up with a pretty close alternative. I will make one change when I make it again : I will skip slicing the chicken and just put one breast on each plate. I hope this recipe is enjoyed. I must add that I give Guy all the praise for this recipe :-) -- posted by jennybug

Garlic Dijon Wine Chicken over Rice With Asparagus

This recipe is of my own creation based on ingredients that I love and thought would work well together. Admittedly, it was a bit of an experimentation, but it turned out wonderfully. Everyone at the dinner table loved it and went back for seconds of the just the rice with the sauce.

For the wine, make sure it is a wine you would like to drink because the flavor of the wine will come through in the dish. -- posted by Chef #1314498

Fried Chicken Liver, Bacon & Tomato With Ranch Dressing

Jon Shook and Vinny Dotolo from Caramelized Productions Food & Wine Magazine, July 2009 publication. From: Best New Chefs and Their Easiest Recipes. Jon and Vinny soak the livers in buttermilk and coat them in flour, then repeat the process for extra-crispy results. "I'm into livers of all kind now", says Dotolo especially duck and lamb." I tried this with great trepadation and it was really very good, believe it or not! This is a staff favorite at F&W test kitchens and here as well! I just have never had livers as a salad before - so I just dug in and was wonderful! ;) Their wine suggestions:earthy chicken livers, smoky bacon and creamy ranch dressing make this one salad that can easily stand up to a red wine. Beaujolais, made from the Gamay grape, is light-bodied but full of flavor, and an ideal choice. Look for the lively 2007 Georges Duboeuf Beaujolais-Villages or the berry-rich 2006 Chateau de La Chaize. The have a show on the FoodNetwork which escapes me now.
