			<title>The Best Indonesian Peanut Sauce</title>

			<description>This recipe comes from the vegetarian times and is actually a vegan recipe, though I am not either of those things :-).  I made this because I just LOVE peanut sauces and this is the best one I have had, not to mention how simple it was to make! I used reduced fat peanut butter and it didn't seem to affect the recipe at all.  It will keep up to a week or so in the fridge and personally, I like to either toss it with noodles and chicken or serve it with chicken chunks over brown rice.  I don't like things spicy and this was perfect.  I also saute the chicken chunks in 1 tsp sesame oil just to enhance the flavor.  It makes quite a bit of sauce, I would say it serves 6! 			<description>This is my version of a recipe that I read in Cooking Light. I have a square foot garden and this was a great year for my Russian Krim heirloom tomatoes. This is a very large beefy tomato with smaller seed pockets. If you use a regular hot house tomato, slice and place them between a few sheets of paper towel to soak up some of the juice.  Romas are a good option. Olives would also be a nice addition. Toss it into your pasta dish, replace tomato sauce on pizza with this, etc. My favourite way to eat is is spread on fresh bread. The measurements make it really easy to remember the recipe and you only need to use 1 measuring cup! I recommend you use firm tofu rather than silky because it is more nutritious. They recommend Joyva or Krinos tahini and Pastene chickpeas (I used what I had on hand).  Hummus can be refrigerated in an airtight container for 5 days.  If you do not plan on serving it immediately, refrigerate the hummus and garnishes separately.  When ready to serve, stir in approximately 1 tablespoon of warm water if the texture is too thick. 			<title>Beer-Battered Onion Rings</title>

			<description>You probably don't want to know you can make better-than-restaurant quality onion rings in your own kitchen, but these are the best onion rings I've ever had.  The recipe is from Cook's Country June/July 2009 from America's Test Kitchens.  Make sure you don't soak the onion rounds longer than 2 hours or they will turn soft and become too saturated to crisp properly.  Cider vinegar may be used in place of malt vinegar.  Use a candy thermometer to make sure the oil gets to 350 degrees.  According to Cook's Country, ordinary yellow onions will produce acceptable rings but sweet onions are preferred.  The beer soaking with vinegar and salt softens and flavors the raw onion.  If the batter is too thick, the rings will be doughy.  Too thin, and it will run off.  Add the beer gradually until the batter falls from the whisk to form a ribbon trail. 			<description>Last I know, this is a Cuban dish, which my husband happened to prepare one day. I'm not a pumpkin fan, but the sweet taste of the pumpkin with the acid-salty taste of the oil, garlic and onions is divine! :).

The pumpkin we use is not the one you carve for the jack-o-lanterns, but looks more like a large, round squash. We call it Calabaza, but also goes by the name of &amp;quot;Cuban Squash&amp;quot; and is considered a winter squash/pumpkin variety.
