Mrs. Wagners Chocolate Cake

Mrs. Wagner is a lovely lady who raised five children. Back in the 60’s she always had this cake in her kitchen because her husband loved it - I have fond memories of always getting a piece of chocolate cake when ever I went to her house. This cake is a deep, dark, chocolate cake and she always frosted it with homemade white frosting and finished it off with sweetened flake coconut – delicious! -- posted by Merry Cook

Sausage & Peppers

"One of my go-to dishes is sausage and peppers, because it's so easy to make, requires minimal ingredients, and is versatile. I usually keep some hot Italian sausages in the freezer so I can make this; as long as I have tomato sauce, garlic, onions, and peppers, I'm pretty much all set.
Simple Thanksgiving Turkey Meatballs

I came up with this recipe when planning a small Thanksgiving dinner for me and my sister. This incorporates familiar Thanksgiving favorites without requiring you roast a whole bird or fix a lot of stuffing. We had to come up with something that could accommodate our limited kitchen resources while providing something special for Thanksgiving.

Feel free to change up the spices, adding more or less to suit your taste. Prep and cook time is approximate. -- posted by RoxiGirl

Catfish Creole

This is from the Sunset Seafood Cookbook (1981). We make it frequently. It's quick and tasty. Feel free to spice this up if you'd like to. The original calls for the lemon to be sliced thinly and laid on top. If you do this, use a sweet lemon. If it's not sweet, it will make the dish bitter. We've tossed out a few batches because of this, so we started zesting the lemon and using the juice. -- posted by OliveLover

This savory ,which is something served to close out a grand dinner, was created by Lady Victoria Weymss. Lady Victoria lived to be 104 years old and served as a lady in waiting to her cousin, Queen Elizabeth the queen mother, until she was over 100 years old. She was the last of Queen Victoria's godchildren. This recipe can be adapted to the number of guests you have. The quantities below are for 4 persons.
Baked Mashed Potatoes With a Carrot Shell

My version of this recipe started with a recipe in a magazine. The original recipe called for carrots, beans, peas, and squash artistically arranged in an ovenproof bowl (as the shell for the mashed potatoes). That seemed so time consuming. I decided to limit the veggie shell to sliced carrots. You can use any combination of vegetables that you like for the shell. -- posted by *Kathy*

My Mother's Super Stromboli

This is a family favorite and I won my first cooking ribbon with it in the Orange County Fair back when dinosaurs roamed the earth. You can make it with your favorite dough or use a frozen dough. I like to use Italian bread dough or even Recipe #401221. Anyway you make it you will have a winner. This recipe is easy to adapt to the things you like and you can even make a vegan version of it. Have fun with it! I serve it on a ginormous bread board which my son-in-law made for me. This recipe has been made by my family all the way back to my Great Grandmother Filomena who never measured anything. I make sure all the meats and cheeses are very thinly sliced and leave a half inch border around the edges of the bread to help seal it when it's rolled.. -- posted by Secret Agent

Vanderbilt Scalloped Corn OAMC

I have made this recipe twice now. The first time I wasn't sure I was going to make it public, because it was such a flop. Raw, liquidy, thoroughly unappetizing looking. The second time, though, it was beautiful and tasty, so here it is. I figured out the problem. Do not put this in the wrong size dish. I made a triple batch, and cooked half that night in an 11x7" casserole and froze the other half. The second half I baked in a 9x13" dish. If you need to cook more than 6-8 servings, make it in two 9x13"s. And add extra cracker crumbs to the top - you won't be sorry! :) Holiday recipe from Once a Month Mom and her cousin, Vanderbilt Wife. -- posted by CraftScout

Sarasota's Warm Apple/Cranberry/Orange Spiced Cocktail

This is a absolute favorite cocktail of mine during the holidays. Right on the stove so the entire house smells like Christmas. Now the best part is, if you don't keep a lot of alcohol around the house but still want to make the recipe, buy the smaller bottles. They have the little travelers size and the small nips (I call them airplane bottles), I think everyone knows what I mean. Now it is already non-alcoholic, so it is a great drink for everyone since the alcohol is added at the end. The juice does reduce a little, so you don't end up with as much as you think. For a party of 8, and everyone is drinking, I usually double this batch. It is great chilled over ice as well for any leftovers. You can always keep this warm in a crock pot too which makes it good for parties. Try adding some sparkling wine or non alcohol wine to this after it is chilled for a nice light cocktail if you don't want it warm. Note: you can make a pretty presentation by making a small tray with the crock pot, mugs, a bowl of the cranberries, oranges slices and a small pitcher of the rum brandy mixture and people can help themselves. I do that quite often and always goes over good. I always serve one once, so people can see how I do it, and then they know how to put it together. -- posted by SarasotaCook

Anchovy Butter Sauce

I know that many people say that they don't like anchovies, but when anchovies are toasted and sauteed they are wonderful and get sweet and nutty tasting. This is an amazing sauce served over pan crusted sauteed fish (i.e., Tilapia, Grouper, Halibut, Cod; any white fish), scallops, or chicken. Now, there are hundreds of recipes on here for pan sauteed or breaded chicken and fish, so I won't list them. But I am sure many of you know the preparation method. This is also a great over steamed or grilled seafood or poultry, as well as asparagus, onions, broccoli and even steak. And, is awesome just tossed with a little angel hair pasta for a quick easy side dish or stirred in with pan sauteed cannellini beans. So you can see how versatile it is. It can be made right in the same pan after you pan sear, your seafood or chicken, or you can make it in a small sauce pan on the side. As I said, very flexible. -- posted by SarasotaCook

Melting Pot Casserole

This is the best casserole I've ever eaten. It takes a little extra effort, but it's worth it because the flavor is phenomenal. I've used simpler "flexible formulas" for making casseroles to use up cupboard odds and ends, but I've never done it with a white sauce. WOW! If you want to jazz up a basic casserole, this is for you.
Rummy Yummy Rum Balls

If you can't stand waiting for cookies to bake and cool, speed up your sugar rush by sticking with no-bake cookies. These easy Holiday classics are exceptionally versatile. They can be made from any variety of rum, including spiced, dark and even coconut. Also vanilla or chocolate wafers work equally well. This recipe produces a particularly rummy rum ball.
Jellied Cranberry Sauce With Fuji Apple

This is from the November 2009 issue of Food & Wine. It tastes like a combination of cranberry sauce and apple sauce. The pectin in the apple eliminates the need for gelatin. This cooks quickly but allow 3 hours to chill. -- posted by Barbara's cooking again

Spanish Baked Chicken

Also known as "Pollo Estofado" this stewed chicken recipe is Spanish in origin. The chicken is marinated overnight in a spicy vinaigrette with olives and raisins. The chicken is then cooked in its marinade with the addition of wine and brown sugar. Excellent with Spanish rice. The recipe comes from one my mother clipped from the Sacramento Bee in 1984. From Simplyrecipes.com. Prep time does not include marinating time. Very tasty! :) -- posted by Beth A.

Raspberry Cakes With Lavender

These are extremely tasteful and delicate cakes which are perfect for tea-parties or girls’ birthdays. I invented them for my birthday, so I would know. The lavender syrup is easy to make. Mix one tablespoon of, preferably fresh, lavender flowers with 5-6 tablespoons of sugar and a little water. Cook over a low heat until it transforms to syrup. Stray the syrup and leave it to cool down. You can store it in a cup in the fridge for couple of months. If you do not have time to prepare the raspberry sauce you can use jam instead. I hope you will enjoy these little cakes. -- posted by Meme*

Three Root Mash

From Hugh Fearnley-Whittingstall of River Cottage Fame.
We love this and usually have potatoes, carrots and swede as our root combo.

The website says;
"This goes well with roast joints and stews in winter, or can be a meal on its own with a couple of rashers of bacon and a fried egg on top"

Low Fat Latkes for Hanukkah

This recipe is on http://www.thekosherchannel.com where you can find out lots of interesting things about Hanukkah. Getting the consistency right is important. Shred, then lightly chop, the potato and onion. A food processor works best. Brushing a bit of oil in the muffin tin cups helps them brown nicely. And be sure the oven is preheated to 425 degrees before baking. Happy Hanukkah! -- posted by Renee in Yerushalayim

BBQ Beans and Leftover Turkey

After Thanksgiving a lot of us have leftover turkey and sometimes I get tired of the soup, meatpie, etc solutions to the leftovers. Here is a recipe I devised with a little help from Southern Foods on the internet. I used Sweet Baby Ray's BBQ sauce and turkey from the carcass, but any meat would go well.
Pork, beef, sausage or chicken would do very well, too. This goes well with coleslaw and rolls. -- posted by carole in orlando

Chicken Sukiyaki

Here I am using several authentic ingredients which may be hard to find outside of metro areas. Burdock root looks like a long parsnip but darker. The taste is distinctive and can be found in many Japanese cooking. When using burdock roots, it is best to soak in water after slicing with a bit of vinegar to keep from turning dark. For substitution, I would use parsnip or carrot. Konnyaku is made from konjac potato and is found in the refrigerated section of a Japanese or Asian market in a similar package as tofu. It is normally whitish or brownish color and almost zero calorie and full of fiber. It's jelly like but more firm and needs to be quickly blanched in hot water for about 2-3 minutes before using. If you cannot find it, just skip it since there is no substitution. Although konnyaku does have flavor it's own, it is most often used for texture more than flavor. Mitsuba is an herb often used in soup dishes in Japan. It is sometimes translataed as trefoil and looks similar to parlsey but the taste is totally different. If you cannot find this, skip it or use some baby spinach. Keep all ingredients separately without mixing them all up like stir fry. This recipe comes from Harris Salat with some of my own modification, but it is not in his Hotpot Cookbook. I normally make traditional sukiyaki using the very best thinly sliced beef, but I really enjoy this method as well and it is more economical. -- posted by Rinshinomori
