This is a very popular dish in Germany. You can use any type of berries you like or try it with cherries. It's mostly eaten with vanilla sauce but milk, ice cream or custard are also popular accompaniements.

SERVES 6 -8 (change servings and units)

Ingredients

  • 300 ml fruit juice or water
  • 3 tablespoons sugar (or more, depending on the sweetness of your berries)
  • 5 teaspoons starch (I used potato)
  • 3 tablespoons cold water
  • 1 teaspoon vanilla
  • 400 g mixed berries, washed and drained (I like blueberries and red currants but feel free to use your favs)

Directions

  1. 1
In a small pot bring the juice/water, vanilla and sugar to a boil.
  2. 2
Meanwhile combine starch and cold water in a small bowl and stirr to mix.
  3. 3
When water is just starting to boil, add starch mixture and let come to a full boil. Make sure to stirr well as the starch will form lumps if you don't.
  4. 4
Mix in berries and turn off the heat. Let your pot stand on the hot stove top for one or two more minutes, stirring once or twice.
  5. 5
Pour everything into a bowl and chill until the jelly has thickened (This might take one or two hours depending on how thick you want your jelly to be).
  6. 6
Serve with topping of your choice (or plain) and enjoy!

What a wonderful way to dress up fresh fruit and oh so beautiful as well. Made with preaches and raspberries and served in martini glasses. Did not use the suggestion of adding ice cream or custard as we are watching our weight, how ever can tell both would be fantastic with this fruit. Thank You So Much for the post.

I appreciate attractive, easy make ahead recipes like this one. I made the full recipe but think it would feed a lot more than 8 people if served over ice cream I think more like 12 people so it would be a great way to extend amount of fresh fruit. I do wonder how long it keeps well in the refrigerator though? I used white grape juice (wish I had used something tarter like cranberry), the minimal amount of sugar, corn starch, and a combination of blueberries and raspberries. Thanks Lalaloula for sharing. Made for Everyday is a Holiday game.
