Rosemary-Crusted Rack of Lamb

SERVES 4 , 2 racks of lamb (change servings and units)

    Preheat broiler.
  2. 2
    Mix bread crumbs, rosemary, parsley and butter. Set aside.
  3. 3
    Season racks with salt and pepper. Place in skillet, meat side up. Interlock bones in center of pan. Cover bones with foil.

    Broil for 8-10 minutes.

    Remove pan from oven.
  6. 6
    Reduce heat to 325º.
  7. 7
    Brush each rack with mustard. Spread bread crumb mixture over both racks.

    Roast in oven for 20-25 minutes

    Remove from oven and let rest 3-5 minutes.
