Roasted Sweet Salsa

Great sweet and spicy salsa. I usually make this with fresh garden tomatoes and peppers.

SERVES 20 , 2 quarts (change servings and units)

Ingredients

    Start by putting the ½ tomatoes, peppers and bulb of garlic on the grill. Keep the tomatoes on until the skins fall off, but take them off before they get too mushy. I let the peppers and garlic on until they are blackened.

    Skin and chop the tomatoes up into a bowl.
  3. 3
    Skin and remove the seeds from the peppers (you can leave the seeds if you want it hotter).

    Mince the Garlic and add to the tomatoes.
  5. 5
    Finely chop and add green onions and cilantro.
  6. 6
    Cube the 3-4 fresh tomatoes and add.
  7. 7
    Squeeze in the juice of the lime.
  8. 8
    Add Honey to taste.

    Let chill for 3-4 hours.
