Roasted Pepper and Artichoke Panini

Quik and easy for lunch or dinner. We threw these together tonight and were surprised with the wonderful results.

SERVES 4 , 4 paninis (change servings and units)

Ingredients

  • 2 tablespoons oil
  • 1/2 cup onion, sliced
  • 1 teaspoon garlic, minced
  • 1/2 cup marinated artichoke hearts, drained

  • 1 (8 ounce) jar roasted red peppers, drained (or roast 2 peppers and peel)
  • 1/2 teaspoon dried dill (or herb of your choice)
  • 1/2 cup frozen spinach, thawed and drained
  • 1/2 cup parmesana cheese, grated (not the powdered kind)
  • 1/4 cup feta cheese, crumbled
  • 4 flour tortillas (or wrap of your choice)
  • 1/2 cup cherry tomatoes, cut in half

Directions

  1. 1
    Heat oil in skillet on medium heat.
  2. 2
    Add onion, cook until translucent, 3-5 minutes.
  3. 3
    Add garlic to pan, cook for 2 additional minutes.
  4. 4
    Reduce heat to low, add red peppers, artichokes, spinach, and herbs. Cook until just warm. Remove from heat.

    Place 1/3 cup pepper mixture on one half of wrap.
  6. 6
    Top with 1 tablespoon feta and 2 tablespoons parmesana.

    Fold in half.
  8. 8
    Spray with oil and place on grill untill browned and warm.

    Remove from heat.

    Open and add cherry tomatoes and sprinkle with salt.
