Risotto With Peas (France)

SERVES 4 (change servings and units)

Ingredients

Directions

    In a sauce pan, melt butter, then add onion & cook, stirring until onion is translucent.

    Add rice & stir for 2 minutes.
  3. 3
    In a separate pan warm the chicken broth & water, stirring to blend well.
  4. 4
    Slowly pour the chicken broth on top of the rice, using just enough to cover it without drowning it!

    Cook on medium-low heat, stirring occasionally until the water has been absorbed by it, about 6 minutes.

    Add additional broth&water, again just covering the rice, & add 1/3 cup of peas, then continue to cook, stirring occasionally for another 6 minutes, before serving.

Any dish that my kids enjoy it the way they did gets five stars from us!I used short grain rice and I ended up with a very creamy dish. I added some butter to it when I reheated it.Yum.I might have added more peas.Thanks Syd.

    This was an amazing rice dish Syd. Who knew you could make something so special with just a few ingredients and that it would be so quick and easy to make. This risotto was perfect, rich, creamy and oh so satisfying. Thanks very much for sharing your delicious recipe.

    Mmmm, what a creamy and tasty risotto dish! I would never have thought that a risotto with that little butter and no cheese added would turn out so creamy. Its amazing! I luv the combination of flavours in this dish. The rice is what really stands out, but the sauteed onion and the peas add a very nice taste to it. Very simple, yet elegant and pleasing! Thanks so much for posting another winner of a recipe, Syd! I cant wait to make this again! Made and reviewed for the Australian Edn#8 Tag Game July 09.

    This was a suprise! Making Risotto without Parmigiano. I was tempted but didn't do it. Very nice and it is a different way for me to cook rice.It is so creamy you almost think there is cheese in the recipe. I cut the recipe in 1/2 and it still makes quite a bit. Thanks for posting Syd. I make it for ZWT5. Rita
